Strawberry Kiwi Tartlets image

Glazed strawberries in puff pastry shells, topped with kiwi sauce and home made whipped cream. I always see strawberry and kiwi paired together in drink mixes and candies. I wanted to make something that used the actual fruits together. This worked perfectly. Rave reviews!

1 egg
2 teaspoons water
12 frozen puff pastry shells, thawed
⅓ cup strawberry preserves
2 pints fresh strawberries, sliced
4 kiwis, peeled and seeded
2 tablespoons honey
½ cup heavy cream
2 teaspoons confectioners' sugar

Steps:

  • Beat together the egg and water in a bowl. Brush the puff pastry shells with the egg mixture, and bake shells according to package directions.
  • Melt the preserves in a saucepan over low heat. Remove from heat, and stir in the strawberry slices.
  • In a food processor, blend the kiwis and honey until smooth. In a large bowl, beat together the cream and sugar until stiff peaks form.
  • Fill each puff pastry shell with strawberries, drizzle with kiwi sauce, and top with whipped cream to serve.

1 quart strawberry, hulled and quartered
3 tablespoons sugar
1/2 teaspoon balsamic vinegar
1 tablespoon finely minced of fresh mint, plus more
of fresh mint, for garnish
1 (10 ounce) package frozen puff pastry shells (such as Pepperidge Farm)
1 tablespoon milk
2 tablespoons strawberry jam

Steps:

  • In a bowl, stir strawberries, 2 tablespoons of the sugar, the vinegar and minced mint; refrigerate 1 hour.
  • Heat oven to 400 degrees F. Brush tops of pastry shells with milk; sprinkle with remaining 1 tablespoon sugar. Bake for 22 minutes. Remove from oven. Carefully remove tops with a fork; set aside.
  • Return shells to oven for an additional 2 minutes. Remove from oven and brush inside of shells with strawberry jam.
  • Spoon 1/2 cup strawberry salad into each shell. Rest top on the side, garnish with fresh mint sprigs and serve.

1 (17 1/3 ounce) package frozen puff pastry
5 cups sliced fresh strawberries, divided
6 (1 ounce) white chocolate baking squares
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
1 cup confectioners' sugar
1/3 cup instant malted milk powder
2 cups heavy whipping cream, whipped
strawberry syrup (optional)

Steps:

  • Thaw one puff pastry sheet (save remaining sheet for another use). Unfold pastry; cut lengthwise into three 3-in.-wide strips. Cut each strip into thirds, making nine squares. Place 1 inches apart on ungreased baking sheets. Bake at 400° for 11-13 minutes or until golden brown. Remove to wire racks to cool.
  • Place 2-1/2 cups strawberries in a blender; cover and puree. Set aside. In a large microwave-safe mixing bowl, melt the white chocolate; cool slightly. Add cream cheese and vanilla; beat until smooth. Beat in the confectioners' sugar and malted milk powder until smooth. Stir in the puree. Fold in whipped cream.
  • Split pastry squares in half horizontally. Line an ungreased 13-in. x 9-in. x 2-in. dish with bottom pastry halves, cut side up; spread with 3-1/2 cups strawberry cream. Top with 1 cup of sliced berries. Cover with pastry tops, cut side down.
  • Spread with remaining strawberry cream. Sprinkle with remaining berries. Drizzle with strawberry syrup if desired. Refrigerate leftovers.
