In a separate small bowl, whisk together 3/4 cup light mayonnaise, 1/4 cup skim milk, 2 tablespoons plus 1 teaspoon Truvia® natural sweetener spoonable,* 1 teaspoon vinegar and 1 teaspoon poppy seeds. 1 cucumber
1/2 cup green onion
1/2 cup strawberry
4 tablespoons liquid honey
4 tablespoons salad oil
3 tablespoons balsamic vinegar
1 teaspoon poppy seed

Steps:

  • Tear romaine lettuce into bite size pieces. Peel and slice cucumber. Slice onions and strawberries into small pieces. Gently toss all ingredients together.
  • Pour dressing ingredients into a sealable container and shake to mix. Put dressing over salad just before serving. Enjoy!

For my wedding shower everyone brought a few recipes and this is one of my favorites. It is refreshing and pretty. This salad also travels well, just save the dressing and use it just before serving.

1 head romaine lettuce - rinsed, dried, and chopped
2 bunches fresh spinach - chopped, washed and dried
1 pint fresh strawberries, sliced
1 Bermuda onion, sliced
½ cup mayonnaise
2 tablespoons white wine vinegar
⅓ cup white sugar
¼ cup milk
2 tablespoons poppy seeds

Steps:

  • In a large salad bowl, combine the romaine, spinach, strawberries and sliced onion.
  • In a jar with a tight fitting lid, combine the mayonnaise, vinegar, sugar, milk and poppy seeds. Shake well and pour the dressing over salad. Toss until evenly coated.

1 package (3 ounces) ramen noodles
1 cup chopped walnuts
1/4 cup butter
1/4 cup sugar
1/4 cup canola oil
2 tablespoons red wine vinegar
1/2 teaspoon soy sauce
8 cups torn romaine
1/2 cup chopped green onions
2 cups fresh strawberries, sliced

Steps:

  • Discard seasoning packet from ramen noodles or save for another use. Break noodles into small pieces. In a large skillet, cook noodles and walnuts in butter over medium heat for 8-10 minutes or until golden; cool., For dressing, in a small bowl, whisk the sugar, oil, vinegar and soy sauce. Just before serving combine the romaine, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently.

1 cup mayonnaise
2 tablespoons maraschino cherry juice

1 tablespoon poppy seeds
⅛ teaspoon lemon juice

Steps:

  • In a large bowl, mix the romaine lettuce, red onion, strawberries, and mandarin oranges.

Our good friend, Sandy Miller, made this salad when we were staying with them. I was surprised to see that peanut brittle was in the salad, but my husband and I were claiming that it was the best salad that we had ever eaten with the very first bite! We said that it might have been because we had not had any sweets since we had given them up for Lent, but we have had this salad many times since then and it is always a pleaser. The dressing is outstanding and I have made many variations using the dressing. I will say that peanut brittle is sometimes hard to get and I have substituted a peanut butter crunch that I found at one of our Kroger's. The recipe calls for 1 can of french fried onion rings, but that won't go through so I am putting the 3 oz bag and you can put on for the amount of salad. Also the original recipe called for a box of peanut brittle, but I just put some in a baggie and crushed it with a rolling pin. It makes a lot of dressing and when I make it for just my husband and I we can usually have 2 -3 salads from the 1 recipe.

3 ounces French fried onion rings
1/2 cup of crushed peanut brittle

Steps:

  • Toss lettuce and strawberries.
  • Just before serving add crumbled onion rings and crumbled peanut brittle and toss with dressing.
  • I have used Mesclun from my garden (Spring mix) - mix of young tender lettuce varieties and a sprinkling of arugula and we love those flavors.
  • Another variation is that I substitute an apple for the strawberries and toasted pecans for the peanut brittle.
  • I have also used the dressing over fruit (strawberries, mandarin oranges, apples, etc.) and topped with toasted pecans.

1 small head of romaine lettuce
2 oz monterey jack cheese, shredded
1/4 c sliced almonds
1 c sliced strawberries
DRESSING:
2 Tbsp red wine vinegar
3 Tbsp granulated sugar
1/2 small clove of garlic, minced finely
1 dash(es) white pepper
2 Tbsp vegetable oil
1/8 tsp paprika

Steps:

  • 1. Clean romaine lettuce, chop and pat dry, place in large bowl. Add cheese, almonds and strawberries. Toss gently.
  • 2. Combine all dressing ingredients using a little jar or small bowl and refrigerate. Right before you eat shake or blend completely. Pour over prepared lettuce, etc. using just enough to your liking. Enjoy!
  • 3. Options: Use mozzarella cheese instead of Monterey jack. Sunflower seeds in place of almonds. NOTE: use dressing the same day as it does not keep well.
  • 4. All kinds of leafy lettuces can be used in this recipe. Red Leaf Lettuce, Bibb Lettuce, and for gardeners the wonderful Black Seeded Simpson in summer are great. Try others and decide which you enjoy the best!
