A creamy low-calorie strawberry pop with an ingredient you would never guess is used.

1 cup fresh strawberries, sliced
⅔ cup cottage cheese
2 tablespoons Neufchatel cheese, softened
2 (1 gram) packets stevia powder, or to taste
½ teaspoon vanilla extract

Steps:

  • Combine strawberries, cottage cheese, Neufchatel cheese, stevia, and vanilla in the bowl of a food processor; process until smooth.
  • Pour into 4 ice pop molds and freeze until solid, at least 4 hours or overnight.

  • Prepare the compote by placing rhubarb, strawberries, raw sugar, and orange juice in a small saucepan over medium heat. Cover and cook for 10 minutes, stirring occasionally and smashing down with a spoon to muddle the fruit together. If it bubbles too much, turn down to low heat. Transfer to a bowl to cool.
  • In a large bowl, mix flour and salt, then cut in butter with a fork or pastry cutter until well combined.
  • Drizzle ice cold water over the mixture in 1 Tablespoon amounts and mix with a wooden spoon until it starts to form a dough. It usually takes about 2-3 Tbsp, but you may need to add up to 5 Tbsp (amounts as original recipe is written // adjust if altering batch size). It should be moist enough to form into a ball, but not too sticky to handle. Add more flour if it gets too wet.

  • Bring the 1 1/2 cups rhubarb, 2 cups of the strawberries, and the 1 cup water to a boil in a small saucepan. Add the 2 Tbsp honey, reduce heat, and simmer for 10-15 minutes, until rhubarb is dissolved. Let cool slightly, about 10 minutes.
  • Blend in a blender until smooth. Add the 1/2cup of coconut milk fat and the 1/4 cup of heavy cream, and blend again until evenly blended.
  • Gently fill popsicle molds with remaining sliced strawberries, very loosely filling them with the strawberries. Pour popsicle mixture over strawberries into molds.
