STRAWBERRY JAM ESSENCE DE PROVENCE
Strawberries with vanilla and hints of lavender. I came up with this recipe using fresh spring strawberries and Recipe #101039. This bring me back to Provence! Lovely on La Baguette, Fougasse, chocolate croissant, inside a crepe, French Toast. Bon appétit!

Steps:
- Place one cup of sugar in the blender with lavender and vanilla. Blend till all fine and powdery.
- Add to sugar.
- Place strawberries in a heavy bottom pot stir in all the sugar. Let sit for 4 hour. Stirring a couple times till all the sugar is a syrup.
- Add lemon juice and butter if using.
- Bring to a full rolling boil over high heat. When stirring it still is boiling.
- Stir in the liquid pectin bring back to a rolling boil. Then continue a rolling boil for 1 minute. Stirring constantly. Remove from heat.
- Ladle into prepared jars. Wipe rims and secure with lids and screw bands.
- Place in a hot water bath covered by 1 inch of water. Cover and bring to a gentle boil for 10 minutes. Shut flame off and leave for 5 more minutes.
- Remove jars keeping upright. Place in a draft free place on a towel to cool completely.
- Let jars sit for 24 hours be sure jars are sealed. Remove bands wipe jars and label.
- Good for 1 year if stored in a cool dry dark pantry.
HERBES DE PROVENCE CHICKEN
Easy to prepare, this recipe came with a packet of herbs de Provence and lavender from Purple Haze Lavender. Very flavorful. Our girls, who don't like anything too "out there," really liked this dish. The chicken is marinated, so be sure to leave time for the meat to soak in all the flavors! Herbs de Provence can be found as a spice blend or you can make your own (I like the ones that include lavender).

Steps:
- Combine first six ingredients to create marinade.
- Add chicken breasts and allow to marinade for at least two hours.
- Bake uncovered at 400 degrees for 40 minutes (20-30 minutes for boneless breasts).
- Alternately, grill until cooked thoroughly using marinade to baste frequently.

PROVENCE LAVENDER CORDIAL-SYRUP
An exquisite blend of lavender flowers and herbes de Provence makes for a pleasant, refreshing cordial--perfect for a summer's day! Steps:
- Heat sugar and water in a saucepan over medium heat, stirring to dissolve the sugar completely.
- Bring to a boil, then remove from the heat.
- Add the lavender flowers (and the herbes de Provence, if using).
- Cover, and let flowers steep for 30-45 minutes.
- Strain through a fine mesh sieve or paper coffee filter into a measuring glass (with a lip for easy pouring).
- Add lemon juice.
- Pour into a clean container (preferably sterilized), cap, and refrigerate for up to 2 weeks, or freeze.
- Note: the syrup will not freeze solid-- you will be able to scoop out a spoonful easily!
- Stir a spoonful of Lavender Syrup into your favorite beverage! It's delicious in lemonade, tea or ice-water. Try it in my Provence Cocktail, recipe # 250030. OR, drizzle over pancakes, waffles, French toast, scones, fruit, puddings, cakes or ice cream. Thicken with confectioner's sugar to make an exquisite glaze for cookies or cakes.

Steps:
- Combine flour, baking powder, baking soda, salt and cinnamon; set aside.
- In small bowl, beat butter until creamy. Gradually add sugar, beat 1 minute or until light and airy. Add brown sugar. Beat in eggs, one at a time. Beat in sour cream and vanilla.
- Stir into flour mixture only until dry ingredients are moistened.
- Fold in strawberries and nuts.
- Pour into a greased 8 x 4 inch loaf pan.
- Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean.
- Let stand 10 minutes in pan.
- Turn out on rack to cool.
