STRAWBERRY GLAZED PIE
This is a restaurant style strawberry glazed pie. Fresh berries are tossed with a glaze, and then chilled until serving time. This is also good made with peaches, using peach gelatin instead of strawberry.

Steps:
- Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
- Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
- Chill until well set. Serve topped with whipped cream.

"This pie was a family favorite while I was growing up, and it has become the same with my own family, which is nearly all grown. "Strawberries are one of my favorite fruits, and when they're in season, you can bet this is a treat we have often!"

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , Mash 1 cup strawberries; set aside. In a saucepan, combine sugar and cornstarch; stir in water and mashed berries. Bring to a boil, stirring constantly. If desired, stir in food coloring. Cook and stir 3 minutes more. Cool for 10 minutes. , Spread about 1/3 cup glaze over bottom and sides of crust. Halve remaining strawberries; arrange in crust. Spoon remaining glaze over berries. Chill for 1-2 hours. Just before serving, garnish with whipped cream.

- 1. Wash and hull strawberries. To make the Glaze..Mix 1 cup of strawberries,1 cup of water and sugar together.Bring to a boil,quickly ,and then reduce heat and cook gently 15 minutes.
- 2. Mix cornstarch and remaning water to form a paste.Then add to the cooked strawberries.Cook over low heat stirring constantly untill thick and clear..Strain and cool.
- 3. Beat whipping cream untill stiff.Gently stir in confectioners sugar .IF USING COOL WHIP OMIT THE WHIPPING CREAM...Spread half of the whipping cream or Cool Whip in bottom of the pie shell .Sprinkle with nutmeg.
- 4. Put 3 cups of the strawberries on top of the cream or cool whip.Pour the glaze,over the strawberries.Chill for at least 3 hours.Just before serving ,after sliced spoon on some whipped crean or cool whip on top of the slice of pie
- 5. I have use whole frozen strawberries ,when I could not get the fresh .BUT fresh is much better...

- In a large bowl, combine the flour, sugar and salt; cut in butter until crumbly. Gradually add oil, then buttermilk, tossing with a fork until dough forms a ball. , Between two sheets of lightly floured waxed paper, roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate; trim to 1/2 in. beyond edge of plate. Flute edges., Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. - Crust Preparation:
- Using 2 pastry blenders, blend the flours, sugar, shortening, butter and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry ingredients incorporating all the liquid without overworking the dough. Toss the additional flour over the ball of dough and chill if possible. Divide the dough into 2 disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish in refrigerator to chill.
- Preheat oven to 425 degrees F.
- Filling Preparation:
- Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal edges. Brush with egg white wash and garnish with large granule sugar. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. - Crush 1 cup of red ripe strawberries, add water and bring to a boil.
- Simmer for 3 minutes.
- Strain.
- Add water, if necessary, to make 1 cup liquid.
- Combine cornstarch, sugar, and salt and add to liquid.
- Stir until smooth.
- Bring to a boil and stir constantly until mixture thickens.
- Cool and add red food coloring.

KITTENCAL'S STRAWBERRY-GLAZED PIE
A long time family favorite, fresh strawberries in a delicious glaze piled onto a baked crust then topped with whipped cream, you can use a regular baked pie crust or a graham pie crust, a purchased graham cracker crust makes this easy but of coarse you may make your own crust --- I have even added in strawberry extract for even more flavor in the glaze, but that is only optional --- plan ahead the pie must chill for about 4 hours or until completely set before topping with the whipped cream, prep time includes chilling time.

- In a lage saucepan place the sugar, water, strawberry gelatin powder and cornstarch; bring to a boil and boil mixing constantly for about 1 minute.
- Remove from heat and add in red food colouring (use as much food colouring as you wish to acheive the colour desired).
- Fold in 7 cups sliced strawberries; toss well with a wooden spoon or spatula to combine.
- Transfer to prepared crust.

This is my favorite strawberry pie; it has a fresh, light flavor. I much prefer it to those with jello or cream cheese. This is adapted from an old Farm Journal cookbook & is a family favorite. There are many recipes on Zaar that are close to this one, but no exact matches.

Steps:
- Hull, wash, & drain berries.
- Crush enough berries to make 1 cup.
- Combine sugar & cornstarch; add crushed berries & water.
- Cook over medium heat, stirring almost constantly, until mixture comes to a boil.
- Continue cooking & stirring over low heat for two minutes or until mixture thickens & becomes translucent.
- Remove from heat; stir in butter & set aside to cool.
- Place whole berries in pie shell, reserving a few choice ones for garnishing.
- Pour cooked mixture over berries & chill at least 2 hours.
- Whip cream & sugar together & frost pie with whipped cream.
- Garnish with reserved berries.
- Note: you can use whole berries placed into the shell with the points up, or you can half them & layer the berries in the crust.
- "cooking" time = chlling time.
