These are a delicious cookie bar that I make that you can use any flavor of preserves that you want. I have used raspberry , apricot and even orange and the are just as great but my favorite is the strawberry.

FOR THE CRUST
2 c flour
1/2 c powdered sugar
1 c butter or margarine
FOR THE CENTER
1/2 c strawberry jam (i use my home made jam)
4 large eggs ; beaten
2 c sugar
1/2 c lemon juice
2 tsp lemon peel
1/4 c flour
1/2 tsp baking powder
1 1/2 c coconut
FOR THE TOP
1 pkg premade whipped cream cheese frosting
toasted coconut for garnish

Steps:

  • 1. For the crust: In your food processor mix together the flour , powdered sugar and butter until crumbly.
  • 2. Press crumbly mixture into a 13x9" glass baking dish (cake pan) and Bake @ 350° until lightly browned about 20 minutes.
  • 3. Once you take it out of the oven spread it with the strawberry jam or your favorite flavor of jam.
  • 4. Beat together the eggs , sugar , lemon juice and rind until smooth.
  • 5. Sift together the flour and baking powder and combine with the egg and sugar mixture and add the coconut.
  • 6. Pour over top of the jam layer and spread out evenly.
  • 7. Bake @ 350° for about 22-25 minutes ; cool , frost with a thin layer of the pre-made frosting and lightly sprinkle with the toasted coconut and cut into squares....Enjoy

⅓ cup shortening
1 cup dried bread crumbs
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
  • Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
  • Bake 25 to 30 minutes. Let cool before cutting into bars.

  • Preheat the oven to 400 degrees. Line a 10" square baking pan with parchment paper. (an 8x10 dish will work as well.) Place the strawberries in a large bowl and sprinkle with the sugar, cinnamon, salt and cornstarch. Stir to thoroughly coat and then let them sit on the counter for a few minutes while assembling the crust and topping.
  • Stir together the oats, coconut, flour, sugar and butter. Spread half of the oat mixture over the parchment in the bottom of the pan. Pour the berries over the crust and then use your hands to sprinkle/spread the rest of the oat mixture on top of the berries.
  • Bake on the middle oven rack for 30 minutes, until the crust has browned and the fruit mixture is bubbling. Let cool completely before slicing into bars, or use a spoon to scoop the warm crisp into bowls. Serve with vanilla ice cream or vanilla bean whipped cream. Enjoy!

  • Line a 24cm x 13cm x 8cm (9in x 5in x 3in) rectangular baking dish (any dish suitable for brownies or cookie bars will be fine) with parchment paper and pre-heat the oven to 180ºC/350ºF.
  • Combine all the ingredients for the filling in a saucepan and bring to a simmer over medium-low heat. Allow to simmer, stirring occasionally. Squish the strawberries with the back of a wooden spoon, breaking them up. Simmer until the filling has thickened and is jammy.
  • To make the base and crumble, combine the flour, coconut, sugar, butter and egg in the bowl of a food processor and mix until the dough comes together.
  • Press three quarters of the dough into the bottom of the prepared baking dish then top with the strawberry filling.
