STRAWBERRIES FILLED WITH "CLOTTED" CREAM

Number Of Ingredients 6

1 cup mascarpone cheese
1/2 cup heavy cream, very cold
3 tablespoons confectioners' sugar
1/4 teaspoon pure vanilla extract
1 vanilla bean, seeds scraped
16 large fresh strawberries

Steps:

  • Combine the mascarpone, heavy cream, sugar, vanilla extract and vanilla seeds in the bowl of a stand mixer and whip until soft peaks form. Using a rubber spatula, scrape the mixture into a pastry bag fitted with a star tip.
  • Stand the strawberries upright on a platter. If the bottoms are too wobbly to stand, slice off the green stems. With a small sharp knife, cut an "X" in each strawberry, cutting almost to the bottom. (The cut should be such that the strawberry will open up but not fall apart.) With your fingertips, gently spread each strawberry apart to make "petals."
  • With a spoon, carefully fill each strawberry with a dollop of cream. Serve immediately.

1 cup butter, softened
1-1/2 cups confectioners' sugar
1 large egg, room temperature
1-1/2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 ounces strawberry gelatin
1 teaspoon baking soda
1 teaspoon cream of tartar
FILLING:
1 package (8 ounces) cream cheese, softened
1-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 375°. In a large bowl, beat butter and confectioners' sugar until blended. Beat in egg and vanilla. In another bowl, whisk flour, gelatin, baking soda and cream of tartar; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap and refrigerate until firm enough to roll, about 30 minutes., On a lightly floured surface, roll 1 portion of dough to 1/8-in. thickness. Cut with a floured 2-3/4-in. flower-shaped cookie cutter. Press cutouts onto bottom and up the sides of ungreased mini-muffin cups., Bake until edges are brown, 6-8 minutes. With the end of a wooden spoon handle, reshape the puffed cookie cups. Cool 5 minutes. Remove from pans to wire racks to cool completely., In a small bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar. Pipe into cookie cups. Store in an airtight container in the refrigerator. Freeze option: Transfer wrapped disks to a freezer container; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare filling and cookies. Bake and decorate as directed.

We were given a lot of strawberries and I had to figure out what to do with them so they didn't go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

1 ½ cups white sugar
1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 ¾ cups all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon salt
½ cup white sugar
1 teaspoon red colored sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat 1 1/2 cups white sugar and butter together in a bowl with an electric mixer until creamy, about 3 minutes. Beat egg into butter mixture. Add strawberry puree.
  • Stir flour, vanilla extract, baking powder, and salt into strawberry mixture with a spoon until flour is completely incorporated into dough.
  • Stir 1/2 cup white sugar and red sugar together in a shallow bowl.
  • Roll dough into walnut-sized balls, roll each ball in red sugar mixture, and place each ball 1 1/2 inches apart onto prepared baking sheets. Lightly press each dough ball down to flatten.
  • Bake cookies in the preheated oven until lightly browned, 10 to 15 minutes. Cool.

Surprise your sweetheart with these easier-than-they-look cookie cups that are filled with fluffy strawberry cream.

1 package (16 oz) refrigerated Pillsbury™ Ready to Bake!™ Chocolate Chip Cookie Dough (24 Count)
1 box (4-serving size) strawberry-flavored gelatin
1 container (8 oz) frozen whipped topping, thawed
1/2 cup melted chocolate chips or chocolate topping
Red sugar and/or small red candies, if desired

Steps:

  • Heat oven to 350°F. Spray 24 mini muffin cups with cooking spray. In each muffin cup, place 1 piece of cookie dough from 1 package Pillsbury™ Ready to Bake!™ refrigerated chocolate chip cookies.
  • Bake 10 to 12 minutes or until golden brown. Remove cookies from oven. Gently press small 1/2 measuring teaspoon or tiny spoon into center of each baked cookie to make shape of cup. Cool in pan 10 minutes.
  • Remove cookie cups from muffin cups; place on cooling rack. Cool completely.
  • Meanwhile, add 1 box (4-serving size) strawberry-flavored gelatin to 1 container (8 oz) frozen whipped topping, thawed; stir until well combined. Cut hole in 1 bottom corner of food-storage plastic bag; add decorating tip. Fill bag with strawberry mixture; pipe into center of each cooled cookie cup.
  • Drizzle cooled 1/2 cup melted chocolate chips over top of each filled cookie cup. Garnish with red sugar and candies. Serve immediately. Store in refrigerator.

1/2 cup(s) sour cream
2 tablespoon(s) strawberry extract ( i get all my extracts thru,olive nation online)
1/2 teaspoon(s) vanilla extract
1/4 cup(s) heavy cream
3/4 cup(s) confectioners' sugar
GARNISH; FRESH STRAWBERRIES, FRESH MINT LEAVES AND PINK DECORATOR'S SUGAR

Steps:

  • Preheat oven to 350*. Roll cookie dough into about 1 inch balls. Press into bottom and half way up sides of a mini muffin pan. Bake for 12 minutes. remove from oven. In the pan, mold warm cookie to form a cup.
  • In medium bowl, combine cream cheese, sour cream, strawberry extract and vanill extract. With mixer on med. beat until well mixed.
  • In separate bowl,beat cream until soft peaks. Add sugar and beat until stiff peaks form. Fold whipped cream in with the cream cheese mixture. Cover and chill.
  • Spoon or pipe strawberry mixture into cookie cups. Garnish with sliced strawberry, pink sugar and a mint leaf. enjoy. xoxoxo. Beautiful and tasty.
