¾ cup white sugar
¼ cup milk
¼ cup lime juice
2 quarts fresh strawberries, mashed
1 egg white

Steps:

  • Mix sugar, milk, and lime juice together in a bowl. Mix in mashed strawberries.
  • Beat egg white in a glass, metal, or ceramic bowl until stiff peaks form. Fold into the strawberry-lime mixture. Pour mixture into a freezer-safe container. Cover with plastic wrap.
  • Freeze until almost firm, about 2 hours. Remove from freezer and stir thoroughly to break up chunks. Return to the freezer for 3 hours, stirring once every hour. Freeze until firm, 8 hours to overnight.

2 lemons, roughly chopped (the lot, skin, pith etc.)
2 lbs superfine sugar
4 lbs strawberries, hulled
4 tablespoons lemon juice

Steps:

  • Put the lemon pieces into a food processor or blender with the sugar and pulse-chop until the lemon and sugar have combined to a purée. Tip the mixture into a bowl.
  • Purée the strawberries and add to the lemon mixture. Add about half the lemon juice, taste and add more if necessary - the flavour of the lemon should be intense but not overpower the strawberries.
  • Pour into an ice-cream machine and churn until frozen or freeze in a suitable container. You may need to churn the mixture in batches according to the size of your ice-cream machine.

  • In a blender, combine milk and strawberries; cover and process until smooth. Transfer to a large bowl; stir in soda. , Pour into cylinder of ice cream freezer; freeze according to manufacturer's directions. Transfer to a freezer container; freeze for 2-4 hours before serving. May be frozen for up to 1 month.

½ cup milk

1 lemon, zested and juiced
1 cup all-purpose flour
¾ cup whole wheat flour

1 cup chopped fresh strawberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a muffin pan with paper liners.
  • In a bowl, lightly beat together the oil, milk, egg, and lemon juice.
