- Remove stems from strawberries; cut a deep "X" in the tip of each berry. Gently spread berries open., In a small bowl, beat the cream cheese, confectioners' sugar and extract until light and fluffy. Pipe or spoon about 2 teaspoons into each berry; if desired, sprinkle with chocolate. Chill until serving.

A bumper crop of berries turned into a real treat when I dipped them in chocolate! I like to make these chocolate covered strawberries before dinner and put them in the fridge, so they're ready when we're finished eating. - Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt semisweet chocolate and 1 tablespoon shortening at 50% power; stir until smooth. Dip each strawberry and place on a waxed paper-lined baking sheet. Freeze strawberries for 5 minutes., Meanwhile, microwave white chocolate and remaining shortening at 30% power until melted; stir until smooth. Stir in food coloring if desired. Drizzle over strawberries. Refrigerate until serving.

Steps:
- Set aside 2 T chocolate.
- In microwave, melt remaining chocolate; stir until smooth and cool to room temperature.
- In small bowl, beat cream cheese and vanilla until smooth.
- Beat in melted chocolate.
- Fold in whipped topping and 1 T reserved chocolate.
- Cut a small hole in the corner of a pastry or plastic bag; insert #21 star pastry tip.
- Fill the bag with cream cheese mixture.
- Place strawberries cut side up on a serving platter.
- Pipe cream cheese mixture onto strawberries.
- Sprinkle with remaining chocolate.
- Refrigerate leftovers.

- Cut an 'X' in the tops of each strawberry (see video above), making sure only to cut about 3/4 of the way down. Use your fingers to open the pieces of the strawberry a little bit (this will make it easier to fill with cream).
- In a small bowl, mix cream cheese and marshmallow creme together. With a piping bag or ziplock bag with the tip cut off, squeeze filling into each strawberry, being careful not to overfill the strawberries. (i.e., the filling should not be leaking out the sides of out the top)
- Place strawberries on a parchment paper-lined baking sheet, and refrigerate for 20 minutes (this allows the filling to chill properly).
- Over a double broiler or in the microwave, melt baking chocolate or almond bark, until smooth. Allow the chocolate to cool 1-2 minutes before dipping the strawberries.

- Rinse, hull and slice fresh strawberries to equal 1 cup. Puree strawberries with 1/4 cup HERSHEY'S Strawberry Syrup until liquid in food processor or blender. Sprinkle 1 envelope unflavored gelatin over mixture. Let stand until gelatin is softened, about 5 minutes; puree again for several seconds.
- Pour into medium microwave-safe bowl; microwave at HIGH (100%) 30 seconds to 1 minute, until mixture is hot, not boiling, and gelatin is dissolved. Cool to room temperature. Beat 1 cup (1/2 pt) cold whipping cream until stiff; fold in strawberry mixture.
