SLOW COOKER SCOTTISH STOVIES



Slow Cooker Scottish Stovies image

Slow Cooker Scottish Stovies is a traditional 'stoved' potato recipe adapted or the Slow Cooker. Chunks of potato cook slowly with sliced onions, seasoned with a savoury beef flavour.

Number Of Ingredients 6

900 grams Potatoes
2 onions
20 grams solid vegetable fat or beef dripping
1 Beef stock cube (if using vegetable fat)
1 teaspoon salt
30 millilitres water

Steps:

  • Slice the onions and cut the potatoes into 4 cm pieces
  • Place the dripping or fat in a pan and very gently sauté the onions. They should soften but not colour.
  • Add the potatoes and stir them to coat and mix thoroughly with the onions.
  • Transfer to your slow cooker pot.
  • Grind up stock cube (if using) with salt, sprinkle over the potatoes and onions in the slow cooker.
  • Pour over the water, don't be tempted to add more, 30 ml is all you need) put on the lid and cook for 1 hour 15 minutes on HIGH, then 1 hour 15 minutes on LOW.
  • When the potatoes are cooked, take a wooden spoon and roughly break up the potatoes. You want to retain chunks of potato but roughen up the edges.

3 tablespoons water

Steps:

  • Place the potatoes and half the water in a heavy saucepan. Sprinkle with salt and pepper and add the rest of the water. Cover and cook over low heat for 30 minutes or until the potatoes are soft.

When we went over to Edinburgh for Hogmanay, our friends made this for us, along with a slice of haggis! This is a traditional Scottish side dish, and goes well with a beef roast or chicken. It is also a great way to use an often overlooked vegetable: the swede (aka the yellow turnip, the rutabaga, or the Swedish turnip).

2 pounds russet potatoes, peeled and cubed
2 pounds swede (rutabaga), peeled and cubed
¼ cup butter, softened
1 teaspoon mustard powder
1 bunch scallions, finely chopped
salt and ground black pepper to taste

Steps:

  • Place potatoes and swede in a large pot; cover with water. Bring to a boil. Cook until tender, about 15 minutes. Drain. Add butter and mustard powder; mash until well incorporated.
  • Stir scallions, salt, and pepper into the mash.

  • Brown beef in a large skillet over medium-high heat, breaking meat up with a wooden spoon if necessary. Once beef starts to brown add onions to the skillet. Cook for a few minutes until vegetables start to soften, but not brown. Add garlic and cook stirring for 1-2 minutes. Add wine and deglaze pan by scraping the bottom with spoon. Allow wine to reduce and evaporate by more than half.
  • Meanwhile, place potatoes and bay leaves (if using) into a large sauce pan and cover with 2-3" of cold water. Add 1 tsp of salt and bring to a boil over high heat. Reduce heat to a strong simmer and cook for around 20-25 minutes until tender.
