SHRIMP STIR-FRY

Tender shrimp and crisp vegetables are stir-fried with a garlic and ginger flavored sauce made from Swanson® Chicken Stock, soy sauce and sesame oil, for a savory seafood and vegetable stir-fry.

3 tablespoons cornstarch
1 ¾ cups Swanson® Chicken Stock
1 tablespoon soy sauce
½ teaspoon sesame oil
2 tablespoons vegetable oil
1 pound fresh or thawed frozen medium shrimp, peeled and deveined
4 cups cut-up fresh vegetables (see Note)
½ teaspoon ground ginger
⅛ teaspoon garlic powder
4 cups hot cooked regular long-grain white rice

Steps:

  • Stir the cornstarch, stock, soy sauce and sesame oil in a small bowl until the mixture is smooth.
  • Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the shrimp and stir-fry until they're cooked through. Remove the shrimp from the skillet.
  • Heat the remaining vegetable oil in the skillet. Add the vegetables, ginger and garlic powder and stir-fry until the vegetables are tender-crisp.
  • Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the shrimp to the skillet and cook until the mixture is hot and bubbling. Serve over the rice.

This is another of the Food Network mag recipies. I have mead this many times and honestly the sauce makes it fab.

Number Of Ingredients 19

1 lb medium to large shrimp, cleaned and shelled
marinade::
1 large egg white
1 Tbsp rice wine vinegar
1 Tbsp cornstarch
you will want to marinade the shrimp for one hour before cooking
sauce:
3/4 c chicken broth
1 Tbsp cornstarch
2 Tbsp rice wine vinegar
1/2 tsp sesame oil
1 tsp salt
1/2 tsp sugar
stir fry ingredients:
3 c or more your choice veggies, whole snow peas, sliced asparagus, edamame, sliced carrots, sliced celery, bell peppers, red sweet peppers, mushrooms, shallots, onions, bok choi
2 clove minced garlic
1 tsp minced ginger
2 Tbsp minced scallions, green part too
pinch each salt and sugar

Steps:

  • 1. Drain excess marinade from shrimp. Place all your ingredients by stove, this will cook fast.
  • 2. Heat 1/4 inch of peanut oil in a wok or skillet, add shrimp, cook until shrimp are pink and firm, do not over cook.
  • 3. Remove shrimp, cover and keep warm, wipe out pan.
  • 4. Add 2 tablespoons of oil to pan, heat med high and add garlic ginger, scallions, and a pinch of salt and sugar
  • 5. Add the veggies, the ones that cook the longest add first, stir fry until tender crisp.
  • 6. Add shrimp and sauce, stirring until sauce is thickened and shrimp is hot.
  • 7. Serve over hot cooked rice

1 lb large shrimp, cleaned and deveined
3 1/2 cups assorted fresh vegetables, chopped (your choice)
1/3 cup chicken broth
1 teaspoon rice wine vinegar
2 tablespoons light soy sauce
1/2 teaspoon sesame oil
1 teaspoon chili paste (sambal oelek) (optional)
1 tablespoon dry sherry or 1 tablespoon sake
1 1/2 tablespoons vegetable oil
9 cloves garlic, minced
1 1/2 teaspoons minced ginger
10 Thai chiles, stemmed and left whole (optional)
1 tablespoon cornstarch
3 tablespoons water
hot steamed rice

Steps:

  • In a small bowl, mix together chicken broth, vinegar, soy sauce, sesame oil, chile paste (if using) and sherry; set aside.
  • In another small bowl or cup, stir together the tbsp of cornstarch with the 3 tbsp of water and set aside.
  • Heat the oil over medium-high heat in a wok; add ginger and garlic and sizzle briefly, then add vegetables and Thai chilies (if using).
  • Stir-fry vegetables for approximately 3 minutes, then add the shrimp.
  • Cook the shrimp 2 minutes or until it curls and turns opaque or pink.
  • Add the sauce mixture and cook 1 minute more; then stir in the thickener (briefly stir first) and stir-fry until mixture thickens, about 1 minute.
  • Serve with hot cooked rice.

3/4 cup cold water
2 tablespoons reduced-sodium soy sauce
1 teaspoon garlic powder

2 cups fresh broccoli florets
2 tablespoons olive oil
1 medium sweet red pepper, julienned
3 green onions, chopped
1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen stir-fry vegetable blend, thawed
3 garlic cloves, minced
1/4 cup chopped peanuts

Steps:

  • In a small bowl, combine cornstarch and water until smooth. Stir in the soy sauce, garlic powder and ginger; set aside., In a large nonstick skillet or wok, stir-fry broccoli in oil for 2 minutes. A wonderful recipe for shrimp stir fry, I have made this many times --- chop veggies in advance to save time, once your veggies are chopped this stir fry takes little time to make ---I have made this without the snow peas it is still good but better with them added, white wine only for this

2 tablespoons sesame oil
2 -3 fresh minced garlic cloves (or to taste)
1 teaspoon fresh minced ginger (can use more if desired)
40 medium shrimp, washed, peeled and uncooked (can use less shrimp)
2 cups snow peas (can use any amount desired)
2 1/2 cups broccoli florets
2 celery ribs, sliced diagonally
1 onion, chopped (can slice also)
1 red bell pepper, sliced
2 1/2 cups bean sprouts
1/2 cup oyster sauce
1 1/2 tablespoons soy sauce
1 1/2 tablespoons liquid honey
1/4 cup white wine

Steps:

  • Heat the sesame oil in a wok or a large skillet over medium-high heat.
  • Saute the garlic and ginger for about half minutes (30 seconds).
  • Add in the shrimp and cook for 30 seconds.
  • Add in veggies and stir fry for about 2-3 minutes,.
  • Stir in oyster sauce, soy sauce, honey and wine; toss and cook for about 2 minutes.
  • Delicious!

  • Throughout entire recipe, do not overcrowd your wok. You're better off cooking in small batches, setting aside, and combining everything at the end. You want everything to have a nice sear on it but not be soggy and overly cooked. Ensure meat and all vegetables are cut prior to cooking.
  • Set wok to high heat and add shrimp. As shrimp cooks, it will release liquid. Toss shrimp to evenly cook, and once the shrimp is no longer opaque and is slightly firm to the touch, transfer shrimp to a plate and discard liquid. The point of this step is to partially cook the shrimp and to extract as much of the moisture as you can.
  • Heat vegetable oil in a large wok or skillet over high heat. When oil is near it's smoking point, cook and stir shrimp until browned, 1-2 minutes each. You just want a nice crispy sear on it but be careful not to over cook. Transfer shrimp to a plate.
  • In small batches, add broccoli, bell pepper, carrots, zucchini, and green onion to the center of the wok. Cook and stir each batch of vegetables for about 2 minutes in order to give it a nice sear while still keeping them tender. Once each batch is done, transfer to a plate and continue with remaining vegetables.
