STIR FRIED SPINACH WITH BAKED BRIE CHEESE SALAD
This recipe is from one of our local restaurants. It was in the paper, I thought it sounded good, so I tried it. It's very very yummy!! You can make the garnish several hours ahead or even the day before.

Steps:
- To Make Garnish: In bowl, toss all ingredients together well; cover and refrigerate until serving.
- To Make Spinach and Brie: Wash and stem spinach and dry thoroughly; set aside.
- Cut brie in half crosswise so you have two thin discs, then cut each disc into 6 pie shaped sections; place on a baking sheet sprayed with cooking spray.
- Preheat oven to 350.
- Heat oils in lge skillet; add garlic, red pepper, s& p.
- Stir fry about 2 minutes.
- Place brie in oven.
- add spinach to skillet and toss rapidly so they get coated with the mixture; you want spinach warm, but not completely wilted.
- Arrange spinach mixture on serving platter; transfer brie wedges, cut side up, to tops of spinach; Top with Garnish.

WARM SPINACH SALAD WITH APPLE AND BRIE
A lovely warm spinach salad, with maple roasted apples, Brie cheese, toasted nuts and optional crumbled bacon.

- Cut the Brie cheese into small pieces and set aside. Toast the walnuts or pecans. (See Note 2 below for how to toast nuts). Set aside.
- Roast the apples: Prepare the apples. You can peel or not, as you like. Cut the apples into quarters, core, then cut into 1/2-inch slices. Arrange the apple slices in a single layer on a baking sheet. Brush with maple syrup. Place the baking pan onto the top rack of the oven and broil until lightly golden. Remove from oven, flip the apples, brush with more maple syrup and return to the oven to broil until the other side of the apples are golden. Remove from oven and set aside. *Watch closely as the apples can easily scorch.
- Prepare the dressing: In either a microwave-proof bowl or measuring cup OR a small saucepan on the stovetop, whisk together the dressing ingredients. Heat in the microwave or on the stove-top over low heat until simmering. Remove from heat or set aside.
- Prepare the salad: Add the spinach to a large bowl. Re-warm the dressing, as needed, then whisk together well right before drizzling over the spinach, using as much as needed to moisten the spinach. Toss the spinach well. Season with a little salt and pepper and re-toss. Add the roasted apples, Brie cheese, toasted nuts and crumbled bacon (if using). Toss well and serve immediately.

STIR-FRIED SPINACH WITH GARLIC
"Spinach has often been regarded with disdain in the west, probably because it is usually overcooked. This is a delicious, time-honored, southern Chinese recipe. The spinach is quickly stir-fried and then seasoned. It is very simple to prepare." Ken Hom from CHINESE COOKING. - Wash the spinach thoroughly.
- Remove all stems leaving just the leaves.
- Heat the wok (or large frying pan) until it is VERY hot.
- Add the oil.
- When the oil it is very hot and slightly smoking, add the garlic and salt.
- Stir-fry both for 10 seconds.
- Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
- When the spinach has wilted to about one-third of its original size, add the sugar.
- Continue to stir-fry for another 4 minutes.
- Transfer to a plate and pour off any excess liquid.
- Serve hot or cold.
SPINACH & BRIE PUFF PASTRIES RECIPE - (4.3/5)

- Preheat the oven 350ºF (180ºC). Line a baking sheet with parchment paper. Put the spinach in a bowl; stir in half the beaten egg and the nutmeg. Season to taste with salt and pepper. Roll out the pastry on a floured surface into a rectangle (16 x 8-inch / 40 x 20-cm) and trim the edges. Lightly flour the top of the pastry and cut the rectangle into 4 pieces, each about 4 inches (10-cm) wide and 8 inches (20-cm) tall. Cut 1 inch (2.5-cm) thick wide strips diagonally on both sides of the pastry, leaving the center intact. Try to cut an equal number of strips on both sides. Lay pastries out on a baking sheet lined with parchment paper. Divide the spinach equally between the squares, in the center, top it with brie slices then braid by crossing the strips over the filling alternating from side to side. Brush the tops of the pastries with the remaining beaten egg (add a tablespoon of water), then sprinkle some sesame and poppy seeds over each pastry. Bake 20 to 25 minutes, or until puffed and golden.

- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. - Place apples on an ungreased baking sheet; brush with 2 tablespoons syrup. Broil 3-4 in. from the heat for 3 minutes. Turn; brush with remaining syrup. STIR-FRIED SPINACH WITH GARLIC AND LEMON ZEST
This recipe comes from Williams-Sonoma Essentials of Healthful Cooking. According to the intro they gave to the recipe "Spinach is one of the most nutritious vegetables." It went on to say that when it was cooked its nutrients become even more concentrated. It is high in iron, potassium and vitamins A and C; the leaves are rich in leutine and zeaxathin, phytochemicals that protect vision. Besides being healthy it is delicious!

- Carefully rinse the spinach in several changes of water.
- Discard the tough stems and any damaged leaves, drain briefly in a colander, shaking off excess water.
- Over medium-high heat, in a deep sauté pan or wok, combine the olive oil, lemon zest and garlic.
- After about 30 seconds, the garlic should begin to sizzle; immediately stir in the damp spinach and using tongs or 2 wooden spoons, toss and stir quickly until wilted, 2 to 3 minutes.
- Transfer the spinach to a warmed serving dish and sprinkle with a pinch of salt and a few grinds of fresh pepper.
- Serve at once.
