BEEF, MUSHROOM & OYSTER SAUCE STIR-FRY



Beef, Mushroom & Oyster Sauce Stir-Fry image

1.25ml (¼ tsp) salt
5ml (1 tsp) thick/dark soy sauce
freshly ground pepper
5ml (1 tsp) shaoxing wine or medium-dry sherry
5ml (1 tsp) corn flour
10ml (2 tsp) sesame oil
225g (8 oz) rump steak, cut into thin slivers about 5mm(¼ inch) thick
60ml (4 tbsp) peanut or corn oil
125g (4 oz) shiitake mushrooms, trimmed and cut into strips
salt
2 large garlic cloves, finely chopped
4-6 thin slices of fresh ginger
3 large spring onions, chopped
15ml (1 tbsp) shaoxing wine or medium-dry sherry
22.5ml (1½ tbsp) oyster sauce

Steps:

  • To marinate, place the beef in a bowl, add the salt, soy sauce, pepper, wine and flour and stir in one direction until well coated. Gradually add 15ml (1 tbsp) water, stirring vigorously until absorbed. Stir in the sesame oil.
  • Heat 22.5ml (1½ tbsp) of the oil in a frying pan over medium heat and fry the mushrooms for 2-3 minutes, adding a good pinch of salt. Set aside.
  • Heat the wok over a high heat until smoke rises. Add the remaining oil and swirl it around. Add the garlic, ginger and white spring onions and stir to the mix. Add the beef and, using a wok spatula, turn and toss for about 20 seconds or until the beef is partially cooked. Splash in the wine or sherry, stirring as it sizzles. Add 30ml (2 tbsp) water and reduce the heat, stirring as the water is incorporated. Add the mushrooms, green spring onions and oyster sauce, stir to mix, the transfer to a serving dish and serve at once.

Marinate slices of lean beef steak then pan-fry with chunks of red pepper and a savoury sauce in this classic Chinese dish

450g lean beef steak
1 tbsp light soy sauce
2 tsp sesame oil
1 tbsp Shaoxing rice wine or dry Sherry
2 tsp cornflour
3 tbsp groundnut oil
1 red pepper, cut into chunky dice
1 green pepper, cut into chunky dice
3 tbsp oyster sauce
2 spring onions, finely shredded, to garnish

Steps:

  • Cut the beef into slices 5cm long and 5mm thick, cutting against the grain of the meat. Put them in a bowl. Mix in the soy sauce, sesame oil, rice wine or Sherry and cornflour. Leave to marinate for 20 mins.
  • Heat a wok until it is very hot, then add the groundnut oil. When it is slightly smoking, add the beef slices and stir-fry for 5 mins or until lightly browned. Remove the meat from the wok and drain well in a colander set inside a bowl. Discard the drained oil.
  • Wipe the wok clean and reheat it over a high heat. Add the peppers, and cook for 3-4 mins or until softened. Add the oyster sauce and bring it to a simmer. Return the drained beef slices to the wok and toss them thoroughly with the oyster sauce. Turn the mixture on to a serving platter, top with the spring onions and serve immediately.

1 lb lean beef sirloin, pounded
15 pieces green onions, cut to 1-inch long
15 slices ginger, julienned
1/2 lb snow peas or 1/2 lb broccoli
1/2 teaspoon baking soda
1 teaspoon sugar
1 tablespoon cornstarch
1 tablespoon soy sauce
3 tablespoons water
2 tablespoons peanut oil
2 tablespoons oyster sauce, Lee Kum Kee brand
1 tablespoon water
1 teaspoon sugar
1/2 teaspoon cornstarch
1/2 teaspoon sesame oil
1/2 tablespoon rice wine
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons oil

Steps:

  • Slice beef thinly into 1 inch square. Put in a bowl and marinate for 1 hour.
  • Heat wok and add 1 T oil, stir fry vegetable until crisp tender.
  • Pour in seasoning sauce for veg, blend well and arrange vegetable on plate.
  • Heat wok again and stir fry beef in 4 T oil till light brown, set aside.
  • In the same wok, stir fry ginger and green onions.
  • Add beef stir quickly then add the seasoning sauce.
  • Stir until thickened and heated through.
  • Pour over vegetable and serve with rice.

2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon sesame oil
1 tablespoon cornflour
2 tablespoons peanut oil
2 garlic cloves, chopped
2 teaspoons ginger, chopped
1 red chile, deseeded and chopped
200 g filet of beef, sliced
1 small onion, sliced
1 red capsicum, sliced
rice, to serve

Steps:

  • Combine oyster and soy sauces along with sesame oil, sugar and cornflour in a small bowl.
  • Set aside.
  • Heat 1 tablespoon of the peanut oil in a wok.
  • Swirl to coat.
  • Add half the beef and stir fry until browned.
  • Remove and set aside.
  • Repeat with the remaining peanut oil and beef and remove and set aside.
  • Add garlic, ginger and chilli to the wok.
  • Cook for 30 seconds.
  • Add onion and capsicum and stir fry for 1 minute.
  • Return the beef to the pan along with the combined sauces.
  • Stir to warm through.
  • Serve immediately with rice.

3/4 lb flank steak
1 tablespoon soy sauce
1 tablespoon rice wine
2 tablespoons water
1 tablespoon cornstarch
1/8 cup vegetable oil
3 cloves garlic, minced
1 teaspoon fresh gingerroot, Chopped
6 green onions, chopped
1/3 cup water
1 lb broccoli, cut into florets
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 tablespoon rice wine
1 tablespoon cornstarch

Steps:

  • Cut meat across the grain into very thin slices.
  • Place in a bowl and combine with soy sauce, rice wine, water and cornstarch.
  • Allow to marinate at least 10 minutes (I sometimes do this in the morning, then cook when I get home).
  • Meanwhile prepare remaining ingredients and stir together sauce mixture.
  • Heat oil in a wok or large skillet.
  • Add meat and cook, stirring constantly, until meat is about 75 per cent cooked.
  • Remove and reserve.
  • Scrape out pan if necessary and return to heat.
  • Add another 2 tablespoons oil if needed and heat.
  • Add garlic, ginger and green onions and cook 30 to 60 seconds until fragrant.
  • Stir in cut-up broccoli and add water.
  • Cover and cook 3 minutes.
  • Re-add beef to pan and combine well.
  • Add sauce to mixture and bring to boil.
  • Cook until thickened and beef and broccoli are cooked through.
  • Serve with steamed rice.
