1 ½ pounds fresh asparagus, trimmed
2 tablespoons fresh lime juice
1 teaspoon grated lime zest
1 tablespoon chopped fresh cilantro
1 ½ teaspoons minced fresh ginger root
½ teaspoon white sugar
6 tablespoons vegetable oil
salt and ground black pepper to taste

Steps:

  • Pour about 1 inch of water into the bottom half of a steamer pan set, and place over medium heat. Place the asparagus in the top half of the steamer pan set; steam until tender, 4 to 5 minutes. Remove the asparagus and arrange on a serving platter.
  • Whisk the lime juice, lime zest, cilantro, ginger, and sugar together in a bowl; stream the vegetable oil into the mixture while whisking. Season with salt and pepper. Drizzle over the asparagus.

1 clove garlic, minced
1 medium shallot, minced
1 bunch fresh asparagus spears, trimmed
¼ lime, juiced
salt and pepper to taste

Steps:

  • Melt butter with olive oil in a large skillet over medium heat. Stir in garlic and shallots, and cook for 1 to 2 minutes. Stir in asparagus spears; cook until tender, about 5 minutes. Squeeze lime over hot asparagus, and season with salt and pepper. Transfer to serving plate, and garnish with lime wedges.

1/2 tablespoon sesame seed oil
1 teaspoon grated garlic, divided
1 teaspoon grated peeled fresh ginger, divided
2 tablespoons reduced sodium soy sauce
4 ounces lbs boneless skinless chicken breasts
1 large red bell pepper, seeded and cut into thin strips
1 large yellow bell pepper, seeded and cut into thin strips
1/2 cup sliced canned bamboo shoot (drained and rinsed)
salt
white pepper
2 cups hot brown rice

Steps:

  • In a small cup, combine oil, 1/2 teaspoon garlic, 1/2 teaspoon ginger and soy sauce.
  • Rub into chicken breasts and set aside while completing other preparations before steaming.
  • (Chicken can be marinated up to 2 hours in a refrigerator; bring to room temperature before steaming.) Place chicken on plate used for steaming.
  • Steam until chicken is almost tender.
  • Add bell peppers and bamboo shoots.
  • Sprinkle remaining garlic and ginger over vegetables.
  • Continue steaming until chicken and peppers are tender.
  • Cut chicken into thin bite-size slices, then re-combine with vegetables.
  • Season to taste with salt and pepper.
  • Serve with rice.

1 pound asparagus, 1 inch trimmed off the bottom and peeled
1/2 cup roasted red peppers from the jar
2 tablespoons olive oil
1/4 cup chopped flat leaf parsley
Salt and freshly ground black pepper

Steps:

  • Trim 1 inch off the bottoms of the asparagus. Peel the stalks and cut them into 1 1/2-inch lengths. Cut the roasted peppers into slivers, blend them with the olive oil and parsley and season to taste with salt and pepper. Set this mixture in the bottom of a mixing bowl.
  • Steam the asparagus for 3 to 4 minutes or until just cooked through; when done, remove and toss with the peppers, olive oil and parsley; serve with the veal chops.

2 tablespoons green curry paste (available at asian markets)
2 tablespoons fish sauce
1 cup coconut milk
4 tablespoons shredded coconut
2 kaffir lime leaves, shredded (1 tablespoon zest of lime can be substituted)
1 teaspoon pepper
1 egg, beaten
2 cups spinach (or any combination) or 2 cups leeks (or any combination)
1/2 cup thick coconut milk (skimmed from top of canned coconut milk before it's shaken)

Steps:

  • Combine minced chiken with curry paste, fish sauce, coconut milk, shredded coconut, lime leave/zest, pepper and beaten egg.
  • Line a baking dish that will fit inside a steamer with banana leaves or aluminum foil.
  • Place layers of green vegetables over the bottom.
  • Cover with chicken mixture.
  • Top with thick coconut cream.
  • Garnish with coriander springs.
  • Steam for 20 to 30 minutes.

1 dash lime juice
1 cup frozen peas
1 cup rice
1/4 cup finely minced shallot
