STEAK SUPPER FOR TWO OR MORE

- Heat oven to 180C/fan 160C/gas 4. Drizzle half the oil into a small casserole or pie dish and rub all over, then place one steak inside. Scatter over some of the garlic, followed by a layer of onion and tomatoes, then a layer of potatoes on top. Season, then repeat the layers, finishing with the potato.
- Drizzle with the remaining oil and then cover the casserole with a tightly fitting lid or cover the pie dish with a double layer of foil. Transfer to the oven for 2 hrs. Remove the lid or foil, turn the oven up to 220C/fan 200C/gas 7 and cook for 30 mins more until the top is golden brown. Serve with some green vegetables.

CHEAP AND EASY STEAK AND POTATOES FOR TWO
This is a satisfying meal for two that costs around $4 total or only $2 per person. I usally buy a package of two cube steaks weighing anywhere from 1/2 pound to 3/4 of a pound at Safeway for less than $3 for the package. I always make sure to but the tenderized cube steaks that have the needler holes all through them - otherwise your steak will be very tough! The potatoes are my recipe 444325 scaled down to serve two and using idaho baking potatoes instead of red potatoes. The spiciness of the potatoes goes so well with the slight sweetness of the pan sauce - this is hands down one of my favorite meals!! If you don't like things so spicy cut down on the black and cayenne peppers.

- For the Steaks:.
- In a small bowl, combine the paprika, garlic powder, salt and pepper. Liberally season the steak with the rub on both sides and let it rest on the counter for 15 minutes.
- In a large saute pan, heat the vegetable oil and 1 tablespoon of the butter over medium high heat. When hot, place the steaks in the pan and sear until nicely browned, about 3 minutes per side for medium-rare, 5 minutes per side for medium-well. Remove the steaks to a plate and let rest for 10 minutes.
- In the meantime, deglaze the saute pan with the wine and vinegar and simmer until reduced by half. Add the beef broth to the pan and reduce by half again. Remove from the heat and whisk in the remaining 2 tablespoons of butter.
- For the Potatoes:.
- While the steaks are rubbed and resting (before cooking!), preheat the oven to 525°F
- Peel the potatoes and cut them into 1-inch chunks (smaller pieces will burn!). Pat them dry and place them in a bowl. Drizzle the olive oil over them and toss to coat. Add the rest of the spices and toss to coat well.
- Line a baking sheet with foil and spread the seasoned potatoes out on it, making sure no pieces are touching. Bake for 15 minutes and then turn potato pieces.
- Place back in the oven and bake for an additional 10 minutes.
- To Serve:.
- Place 1 steak and half of the potato cubes on each plate. Scrape any accumulated juices from the plate the steaks were resting on back into the pan sauce. Pour half of the pan sauce over each plate and enjoy!

- Heat oven to 325°F. In ungreased 13x9-inch (3-quart) glass baking dish, arrange beef in single layer. Top with carrots and onion.
- In medium bowl, mix tomatoes and gravy; spoon over beef and vegetables. Cover with foil; bake 2 hours.
- In 3-quart saucepan, make potatoes as directed on pouch using water, milk and butter. Stir in egg until well blended.
- Remove baking dish from oven. Uncover; spoon potato mixture over hot meat mixture. Return to oven; bake uncovered 15 to 20 minutes longer or until potatoes are set.

- Preheat oven to 425ºF. Peel potatoes and cut a tiny slice cut off at each end, to flatten. Slice potatoes crosswise into ½-inch thick pieces (4-5 slices per potato) Count the number of potato slices you have figure out to slice the beef. Each stack has 3 slices of potato and 2 slices of beef.
- In a small bowl, combine garlic powder (1 teaspoon), onion powder (1 teaspoon), paprika (1 teaspoon), salt (½ teaspoon) and pepper (½ teaspoon). In a large bowl, toss potato slices with 3 tablespoons of oil. Sprinkle in the spice mix and toss, to coat. Arrange potatoes in a single layer on parchment-lined pan and bake for 20-30 minutes, until tender. Remove from the oven and tent with foil.
- Before slicing the beef, determine how many pieces you need. You want a 3:2 ratio of potatoes to beef. (For example: 8 stacks require 24 slices of potato and 16 pieces of steak) The steak should be about the same thickness as the potatoes so I suggest starting by using a very sharp knife to slice the tenderloin horizontally into ½ inch thick slices. Then cut it into however many smaller pieces you need.
- Sprinkle meat with 1 teaspoon of salt and 1 teaspoon of pepper. In a large cast iron skillet or non-stick pan, heat 1 tablespoon of oil over medium-high heat. When the oil is hot, add half the steak pieces. Cook for 1 ½ – 2 minutes per side for medium rare. Transfer to a plate and repeat with remaining steak.
