SARATOGA POTATOES

In "America Cooks," by the 1940s food writers Cora, Rose and Bob Brown, the trio declared: "A century ago, when Saratoga Springs was in its heyday as a fashionable resort, specialties from there swept the country, and one of them, Saratoga Chips, will endure as long as there are spuds left to slice." They were partly right. The recipe has endured, all right, but Saratoga vanished from the name. We now call them potato chips.

3 large white potatoes, peeled
Olive oil, for frying
Salt

Steps:

  • Slice the potatoes 1/8-inch thick (or thinner); use a mandoline if you have one. Soak the potato slices in cold water until ready to fry, then drain and dry them thoroughly on a towel.
  • Fill a large sauté pan with ½ inch olive oil. Place over medium-high heat; the oil is ready when it browns a breadcrumb in 30 seconds (or try this this cold oil method). Drop a few potato slices at a time into the oil and fry until the edges begin to brown, 3 to 4 minutes, then turn the slices and brown the other side, 1 to 2 minutes. Drain on a baking sheet lined with paper towels. Keep warm in a 175-degree oven while you fry the rest of the potatoes.
  • Just before serving, pile the potatoes into a bowl and season with salt, tossing to disperse the seasoning.

Potato, Sausage and Broccoli Frittata image

Nonstick cooking spray, for the pan
Olive oil, as needed
1 pound loose breakfast sausage
1 Spanish onion, finely diced
1 large russet potato, diced
1 head broccoli, stem removed, cut into small florets
Kosher salt and freshly ground black pepper
3/4 cup whole milk
1/2 cup heavy cream
10 large eggs
1/2 bunch fresh dill, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-inch casserole pan with cooking spray.
  • Set a medium pan over medium heat and add 1 tablespoon olive oil. Add the sausage and cook, breaking it up with the back of a wooden spoon or spatula, until cooked through and beginning to brown, about 5 minutes. Remove to a bowl and set aside. Add the onion to the pan and saute until translucent and the browned bits of sausage in the pan have been picked up by the onion, about 5 minutes -- this will add lots of flavor! Once the onions are cooked, add the potatoes. Cook until they are tender and just beginning to brown, about 7 minutes. If necessary, add more olive oil so the potatoes don't burn or stick to the bottom of the pan. Remove the potatoes and onions to the bowl of sausage. Coat the pan with a bit of olive oil and add the broccoli. Saute until just tender, about 5 minutes. Season with salt and pepper. Transfer to the sausage bowl.
  • Add the milk, cream, eggs and some salt and pepper to a separate medium bowl and whisk to combine.
  • Transfer the sausage and vegetable mixture to the prepared casserole pan. Toss and distribute evenly on the bottom of the pan. Gently pour the egg mixture over the top. Bake until the frittata is puffed and beginning to brown and the egg is set in the middle, about 30 minutes. Allow to set for 5 minutes before slicing. Garnish with the dill and serve. The frittata is delicious hot out of the oven, room temperature or even cold!

Baked Farmer Sausage, Potatoes, and Carrots With Gravy image

This used to be the traditional Mennonite Sunday lunch at our house -- it has since become more likely at supper, but it's just as traditional and just as delicious! I'm not sure where farmer sausage is all available or whether it's one of those local specialties just available in Manitoba, so I've posted a recipe for that as well for those of you who make your own sausages. (#184513) If you can't buy it nearby or make it yourself, I'm terribly sorry -- you're definitely missing out! This recipe is for those of you who can.

2 lbs frozen farmer sausage
4 medium potatoes, peeled and quartered
8 medium carrots, peeled and cut into 3-4 pieces each
sausage drippings
2 tablespoons flour
1 cup milk
salt and pepper

Steps:

  • If desired, peel frozen farmer sausage. (The best way is to hold it under a trickle of warm water.) Break sausage into 4-6 chunks.
  • Place potatoes and carrots into a roaster or large casserole dish. Add water to cover the bottom of the dish.
  • Place frozen sausage chunks over top (so drippings will flavour the vegetables), cover, and bake at 375F for 1-1/2 hours.
  • Remove from oven and drain juices from casserole dish into a saucepan. (You may want to put the sausage and vegetables in a serving dish now and keep warm in the oven.).
  • For gravy: Mix flour and milk together, adding milk gradually so a paste forms and slowly gets thicker -- you don't want lumps! (Actually, a Tupperware gravy shaker works best for this. You can just throw it all together and shake it up without worrying about lumps at all.).
  • Add milk mixture to drippings and bring to a boil, stirring constantly, until gravy is thickened. (Depending on how much water content your sausage had, you may need to add a little more flour or milk to achieve the desired thickness.).
  • Add salt and pepper to taste and serve.

SAUSAGE STRATA

A Christmas morning favorite, or anytime you're serving breakfast to overnight guests. Making this dish the day before and refrigerating overnight is recommended to develop flavor.

2 lbs pork sausage
1/4 cup finely chopped green bell peppers (optional) or 1/4 cup red bell pepper (optional)
2 teaspoons prepared yellow mustard
12 slices white bread, crust removed
1 lb shredded cheddar cheese or 1 lb swiss cheese
6 large eggs
4 cups milk
1 teaspoon Worcestershire sauce
1/8 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon ground nutmeg (optional)

Steps:

  • The day before:.
  • Grease a 9"x13" baking pan.
  • In a large skillet, saute sausage and peppers. Break up the sausage, stirring and frying until it is well-browned. Drain off the fat. Stir mustard into the sausage.
  • Arrange 6 slices of bread on bottom of baking pan. Top with 1/2 of the sausage and 1/2 of the cheese. Repeat with remaining bread, sausage, and cheese to make a second layer.
  • Beat eggs in large bowl. Beat in milk, Worcestershire sauce, salt, pepper, and nutmeg. Pour beaten mixture over layers in the baking pan.
  • Cover tightly and refrigerate overnight.
  • On serving day:.
  • Remove baking pan from refrigerator one hour before cooking to reach room temperature.
  • Bake uncovered at 350F for 40-50 minutes or until center seems set. Serve immediately.

4 large oval idaho potatoes
salt
black pepper
peanut oil (for frying) or vegetable oil (for frying)
ice water
1/2 cup smoky barbecue sauce (optional)
brown paper (bags)
paper, toweling

Steps:

  • Pare potatoes and slice thinly and evenly (a mandolin works well for this).
  • Submerge potatoes in ice water and allow to sit for about 30 minutes, separating slices so the starch on each is rinsed.
  • Heat oil in a large kettle or fryer to 375°F.
  • Drain potatoes from the water and pat dry using paper toweling, making sure they are completely dry.
  • Fry potatoes in small batches, until golden.
  • Drain potatoes and place on clean brown paper, and season to your liking.
  • Keep potatoes in oven on low temperature to keep warm while finishing other potatoes, if necessary.
  • Serve chips with smoky barbecue sauce.

  • Using a sharp paring knife, de-bone the Saratoga (1/2 a neck can be substituted), then pound with a tenderizing mallet to even out the shape and flatten it a bit—don’t beat it too hard, you just want to help it form an even rectangle that will show off the stuffing in the finished product. Another way to do this is to make a cut in the fat part of the roast to help it open up like a book (see image gallery above).
  • Season well with salt and pepper, then mix the ingredients for the stuffing, apply and press down firmly, then tie up into a jelly roll.
  • Brown the roast in oil on all sides, then transfer to a covered baking dish with 2 cups of water and bake for 1.5 hours at 300, or until tender.
