Raisin-accented couscous is the perfect accompaniment for this saucy squash, spiced with cinnamon, ginger, and cumin.

2 tablespoons olive oil
1 medium onion, (about 1 cup), cut into 1/2-inch cubes
1 clove garlic, minced
1/4 teaspoon each ground ginger and ground cinnamon
3/4 teaspoon ground cumin
Salt and freshly ground pepper
1 pound (about 2 cups) butternut squash, peeled and seeded, flesh quartered lengthwise and cut into 1/4-inch-thick slices
1 tablespoon tomato paste
1 1/2 cups low-sodium canned chicken broth
2 teaspoons freshly grated lemon zest
3/4 cup couscous
1/3 cup golden raisins

Steps:

  • Heat oil in a medium saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until softened, 3 to 5 minutes. Stir in ginger, cinnamon, cumin, and 1/2 teaspoon each salt and pepper; cook 1 minute. Add squash and tomato paste; cook 3 minutes more.
  • Stir in broth and zest; simmer until squash is tender and sauce is thickened, 12 to 15 minutes. Season with salt and pepper.
  • Meanwhile, bring 1 1/2 cups water to a boil with 1/4 teaspoon salt. Put couscous and raisins in a glass bowl; pour in boiling water. Cover tightly with plastic wrap; let stand 5 minutes. Uncover; fluff with a fork. Serve couscous with squash and sauce.

2 medium acorn squash, halved and seeded
1 ⅔ cups water
1 tablespoon vegetable soup base
1 ¾ cups Israeli couscous (such as Osem®)
2 cloves garlic, minced
2 tablespoons olive oil
salt and ground black pepper to taste
5 baby portobello mushrooms, or more to taste, thinly sliced
1 leek, thinly sliced
½ red bell pepper, finely chopped
2 tablespoons olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Place squash, cut-sides down, on the prepared baking sheet.
  • Bake in the preheated oven until squash is soft to the touch, about 30 minutes.
  • While the squash is baking, bring water and bouillon to a boil over medium-high heat. Add couscous and garlic, cover, and lower to a simmer. Cook until water has been absorbed, 8 to 10 minutes.
  • Meanwhile, heat oil in a skillet over medium-high heat. Add mushrooms, leek, and bell pepper; saute until tender, about 5 minutes. Add couscous and mix to combine.
  • Remove squash from the oven and stuff with the couscous-veggie mixture.

1 cup precooked couscous
1/4 cup coarsely chopped fresh coriander

Steps:

6 canned plum tomatoes, crushed
1 cinnamon stick

1 small butternut squash (about 2 pounds), peeled and cut into 1-inch pieces
1 (16-ounce) can chickpeas, drained and rinsed
3 cups chicken broth, low-sodium canned
1-inch strip lemon zest
1/2 cup golden raisins
4 cups chopped spinach (about 5 ounces)
Juice of 1/2 lemon
1/4 cup toasted sliced almonds
1 1/2 cups chicken broth, low-sodium canned
1/2 teaspoon kosher salt
Freshly ground black pepper
1 cup couscous

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and golden, about 10 minutes. Add the garlic, tomatoes, and spices and cook until the cinnamon stick unfurls and the tomatoes are cooked down, about 3 minutes. Add the squash, chickpeas, broth, lemon zest, and raisins and bring to a simmer. Cook, partially covered, until the squash is fork tender, about 25 minutes. Stir in the spinach and cook until wilted, about 3 minutes. Add the lemon juice and season, to taste.

1/8 teaspoon salt

2 medium (blank)s acorn squash, halved and seeded
3 tablespoons olive oil, divided
1 (15 ounce) can garbanzo beans, drained
1 cup orange juice
1 tablespoon ground cinnamon
2 teaspoons ground cumin
3 ounces whole wheat couscous
½ cup cranberries
¼ cup chopped pistachio nuts
¼ cup grated carrots
2 tablespoons butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush each squash half with 1/2 tablespoon olive oil. Place on a rimmed baking sheet, cut-sides down. Use a sharp knife to cut off a small section of the rounded squash, so it will sit flat when turned upside-down.
  • Bake in the preheated oven until squash is soft when pierced with a fork, 30 to 40 minutes.
