Red salsa:
5 Roma tomatoes
1 jalapeño
1 medium onion
1 tablespoon vinegar
1 clove garlic, minced
1 teaspoon salt
1 teaspoon oil
Huevos Rancheros:
1 tablespoon oil
12 corn tortillas
1 1/2 - 2 cups refried beans
2 cups grated Cheddar or Jack cheese
4 eggs
diced onion
sliced avocado

Steps:

  • Turn on the broiler.
  • Make the salsa: Remove the stems from and halve the tomatoes and jalapeno and place on broiler tray, skin side up. Broil for 2-5 minutes until the skins are blackened and pulling away. Remove and let cool until you can handle them. Peel the tomatoes. Puree them with jalapeño, vinegar, salt and garlic.
  • Cut half of the onion into thin strips. Cut the other half of the onion into dice. Saute strips in the oil until soft and browned (reserve the diced onion for garnish).
  • Add tomato puree to skillet with onions, be careful it will splatter. Simmer 5 minutes.
  • Set oven to as low as it goes (200ºF) and get four oven-proof plates ready.
  • Heat some of the oil on a griddle over medium-high heat and fry the tortillas until slightly crispy but still flexible.
  • Layer on four plates: tortilla, beans, sauce, cheese, tortilla, beans, sauce, cheese, tortilla, sauce, cheese.
  • Place plates in the oven to stay warm while you fry eggs.
  • Top each stack with an egg and serve with avocado and diced onion.

Huevos rancheros are a New Mexican tradition. Many versions of this wonderful breakfast dish include cheese, beans, lettuce/tomatoes, grilled chiles, chile sauce, etc. to fancy them up. But the most authentic way to make a plate of basic huevos rancheros is very simple: an egg and some salsa, served on a toasty corn tortilla.

1 tablespoon(s) melted lard (or canola or vegetable oil)
4 - corn tortillas (6-8")
4 teaspoon(s) butter, divided
4 large eggs
2 pinch(es) kosher salt
1 cup(s) fresh salsa

Steps:

  • Set an oven rack in the middle position and preheat the oven to 500 degrees.
  • Brush a little of the melted lard (or oil) on each side of the tortillas and place them on a cookie sheet. When the oven is ready, cook the tortillas for 5-10 minutes, until crispy.
  • In a small frying pan over medium heat, melt 1 teaspoon at a time of the butter. Fry each egg slowly on one side just until the whites are nice and firm but the yolks are still runny. Place the egg on one of the tortillas. Repeat with the other 3 teaspoons of butter and 3 eggs.
  • Meanwhile, in a small pan, bring the salsa just to a boil. Pour about 1/4 cup over the top each egg to further cook it. Let them stand for a minute or two before serving.

The eggs in this beloved breakfast dish are sauced with a ranchero-style sauce of roasted tomatoes, spicy ancho chiles and smoky chipotles. To make breakfast easier, make the sauce ahead of time and reheat to serve, adding a bit of water to thin if necessary.

1 pound ripe plum tomatoes
3 large cloves garlic, unpeeled
1 small onion (about 6 ounces), quartered
2 ancho chiles, stems and seeds removed
1/2 to 3/4 teaspoon chopped chipotle in adobo, plus 1/2 to 3/4 teaspoon adobo sauce

1 tablespoon vegetable oil
One 15-ounce can pinto beans, drained with liquid reserved
1 tablespoon vegetable oil
Kosher salt
2 to 3 tablespoons vegetable oil
8 corn tortillas
8 large eggs
Kosher salt
1/2 cup crumbled Cotija cheese
1/4 cup fresh cilantro leaves, roughly chopped
2 tablespoons finely chopped white onion

Steps:

  • For the ranchero sauce: Preheat the oven to 500 degrees F and put the tomatoes, garlic cloves and onion on a rimmed baking sheet. Roast the vegetables, turning occasionally, until blistered and charred in spots, about 35 minutes. When cool enough to handle, remove the papery skins from the garlic.
  • Meanwhile, bring a small pot of water to a boil. Add the ancho chiles, cover, and remove from the heat. Let sit for 10 minutes, then drain and pat dry.
  • Put the vegetables and any juices from the baking sheet into a blender. Add the ancho chiles, 1/2 teaspoon each chopped chipotle and adobo sauce and 1/2 teaspoon salt and blend until fairly smooth. Taste; if you want the sauce spicier, stir in the remaining chopped chipotle and adobo sauce.
  • Heat the oil in a medium pot over medium heat. Add the sauce (it will sizzle) and 1/3 cup water and cook, stirring, until thickened but pourable, about 5 minutes. Taste and season with salt as necessary. Cover and keep warm over low heat. If the sauce thickens too much, add 1 tablespoon of water at a time to thin it out.
  • For the refried beans: Put the beans in a medium bowl with about half of their reserved liquid and mash with a potato masher until smooth. Heat the vegetable oil in a medium nonstick skillet over medium heat until shimmering, then add the mashed beans and a big pinch of salt and mash again until smooth. Cook, stirring and scraping with a rubber spatula, until heated through. If the beans seem dry, add some more of the reserved liquid until they are creamy. Taste, season with salt if necessary and cover and keep warm over low heat.
  • For serving: Preheat the oven to 200 degrees F and line a baking sheet with paper towels. Heat 2 teaspoons vegetable oil in a medium skillet over medium heat until shimmering. Add 1 tortilla and cook until the underside blisters, about 15 seconds. Flip the tortilla with tongs and continue to cook until the underside blisters, about 15 seconds. Remove from the pan to the lined baking sheet. Repeat with the remaining 7 tortillas, adding more oil if necessary. Spread about 2 tablespoons of the refried beans on each tortilla and keep warm in the oven.
  • Using the same skillet the tortillas were fried in, heat 1 tablespoon oil until shimmering, about 1 minute. Crack 4 eggs into the skillet and cook until the edges are crispy and whites are almost set. Cover the skillet with a big pot lid and cook until the whites are completely set, 1 more minute. Remove the tortillas from the oven, top four with an egg, then return to the oven and repeat with the 4 remaining eggs.
  • Top the remaining tortillas with the remaining eggs. Sprinkle each with a pinch of salt, some ranchero sauce, Cotija cheese, cilantro and onion. Serve immediately.

10 ripe plum tomatoes, roasted (see Note), peeled, cored, and chopped
4 serrano chiles, stemmed, seeded if desired, and coarsely chopped
1 small onion, coarsely chopped
2 large cloves garlic, coarsely chopped
1 tablespoons canola or vegetable oil
3/4 teaspoon salt
6 large, thick corn tortillas, preferably stale
1/4 cup canola or vegetable oil, or as needed
12 large eggs, preferably free-range
Salt and freshly ground black pepper
1 1/2 cups warm refried pinto beans
1 cup Crema, recipe follows, or sour cream
1 avocado, peeled, seeded, and cut into 1/2-inch cubes
1/2 cup crumbled Anejo or Panela cheese
1/2 small bunch flat-leaf parsley, leaves only, coarsely chopped
1/2 small bunch cilantro, leaves only, coarsely chopped

Steps:

  • To make the sauce: In a mortar and pestle or food processor, combine the tomatoes, chiles, onion, and garlic and pound or process until blended but still with a little texture. In a large skillet, heat the oil over medium-high heat until it is very hot. Add the sauce all at once and cook, stirring constantly, for 5 minutes until thickened and orange-colored. Stir in the salt and remove from the heat (Makes 2 cups).
  • For the Huevos : If the sauce has cooled, re-warm it gently. If the tortillas are fresh, spread them in a single layer and let them dry out for 5 minutes. In a large cast-iron skillet, heat the oil over medium-high heat. Fry the tortillas, one at a time, for 2 or 3 seconds per side, just to soften them. Drain them on paper towels. Reduce the heat under the skillet to medium-low and wait a few minutes for it to cool down. Break 6 of the eggs into the skillet and let them cook slowly until set (cover the skillet if you like the yolk firm). Season the eggs with salt and pepper to taste and transfer them to a roasting pan to keep warm in the oven. Add a little more oil to the pan, if necessary, and fry the remaining 6 eggs in the same way.
  • Dip each tortilla quickly in the warm sauce and place it on a warmed breakfast plate. Spread some of the refried beans evenly on the tortilla and top with 2 fried eggs. Spoon more of the sauce generously over the edges of each tortilla and the whites of the eggs. Garnish with the crema and the avocado, then sprinkle with the crumbled cheese, parsley, and cilantro and serve immediately.

Fourteen 6-inch flour tortillas, cut into 6 triangles
7 1/2 teaspoons canola or vegetable oil
3 tablespoons taco seasoning
One 15-ounce can crushed tomatoes
1/2 cup roughly chopped white onion (1/4 medium white onion)
1/4 cup packed cilantro leaves and stems plus 1/4 cup cilantro leaves
1 jalapeño, seeded if desired for a mild sauce
Kosher salt
One 16-ounce can refried beans
8 large eggs
1 cup shredded Mexican-style cheese blend
1 ripe avocado, diced
1 lime, cut into wedges

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Toss the tortilla triangles with the oil and 1 tablespoon taco seasoning in a large bowl. Evenly spread on the prepared baking sheet. Bake, tossing the chips halfway through, until golden brown and crisp, 12 to 14 minutes.
  • Meanwhile, put the tomatoes, onions, 1/4 cup packed cilantro leaves and stems, jalapeño, 1/2 teaspoon salt and the remaining 2 tablespoons of taco seasoning in a blender. Blend until very smooth. Transfer to a small saucepan, cover and cook over medium heat, stirring occasionally, until the sauce deepens in color and the flavors meld, 5 to 8 minutes.
  • Put the refried beans and 2 to 3 tablespoons water in another small saucepan over medium heat and cook, stirring frequently, until warmed through, about 5 minutes.
  • Remove the toasted chips from the oven and dollop with the refried beans. Evenly pour the sauce over the chips. Make 8 small wells in the sauce and chip mixture throughout the baking sheet and crack the eggs into the wells. Bake, rotating the baking sheet halfway through, until the eggs are just set (the egg whites will be opaque and the yolks will still be runny), 10 to 12 minutes.
  • Sprinkle with the cheese, avocado and remaining 1/4 cup cilantro leaves. Serve with lime wedges.
