This roly-poly omelet is a new way to do eggs for brunch. Want different veggies? You can substitute 2 cups of any type you like. When I'm cooking for gluten-free friends, I leave out the flour and the spiral rolls up a-OK. -Debbie Morris, Hamilton, Ohio

4 ounces cream cheese, softened
3/4 cup 2% milk
1/4 cup plus 2 tablespoons grated Parmesan cheese, divided
2 tablespoons all-purpose flour
12 large eggs
2 teaspoons canola oil
1 large green pepper, chopped
1 cup sliced fresh mushrooms
1 small onion, chopped
1-1/4 teaspoons Italian seasoning, divided
1-1/2 cups shredded part-skim mozzarella cheese
1 plum tomato, seeded and chopped

Steps:

  • Preheat oven to 375°. Line bottom and sides of a greased 15x10x1-in. pan with parchment; grease paper. , Beat cream cheese until soft; gradually beat in milk. Beat in 1/4 cup Parmesan cheese and flour. In a large bowl, beat eggs until blended. Add cream cheese mixture; mix well. Pour into prepared pan. Bake until set, 20-25 minutes. , Meanwhile, in a large skillet, heat oil over medium-high heat; saute pepper, mushrooms and onion until crisp-tender, 3-4 minutes. Stir in 1 teaspoon Italian seasoning. Keep warm., Remove omelet from oven; top immediately with mozzarella, tomato and pepper mixture. Starting with a short side, roll up omelet jelly-roll style, lifting with the parchment and removing it as you roll. Transfer to a platter. Sprinkle with the remaining Parmesan cheese and Italian seasoning.

1 pound bulk Italian sausage
1 medium green pepper, chopped
5 cups spiral pasta, cooked and drained
1 jar (24 ounces) spaghetti sauce
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook sausage and green pepper over medium heat until meat is no longer pink; drain. Stir in pasta and spaghetti sauce. , Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until cheese is melted.

A creamy pasta dish filled with colourful vegetables, found it years ago on the label of a can of Carnation Evaporated Milk, been making it ever since, I adapt the vegetables, and add, or omit, the ham, depending on what I have, and who is eating! I've guessed at cooking and preparation times, the only real work is in preparing the vegetables....you can have the meal on the table in under twenty minutes from start to finish. Use vegetable stock cubes, and omit the ham, to make this a tasty vegetarian dish... that's how I generally prepare it!

Number Of Ingredients 15

500 g spiral shaped pasta (Fusilli)
40 ml oil
6 mushrooms, sliced
6 spring onions, chopped
1 garlic clove, crushed
1 red pepper, seeded and sliced
250 g smoked ham, cut into strips (optional)
1 bunch spinach, stalks removed, washed, drained and finely sliced
1 chicken stock cube, dissolved in
100 ml water
1 (410 g) can evaporated milk
15 ml cornflour
5 ml soy sauce
30 ml parmesan cheese
ground black pepper

Steps:

  • Cook pasta as directed on packet - drain and toss in a little oil. Set aside and keep warm.
  • Heat remainder of oil in a large saucepan.
  • Fry mushrooms, spring onion, garlic, red pepper, chilli and smoked ham, until golden.
  • Add spinach and stirfry for a minute.
  • Add chicken stock.
  • Mix cornflour with a little evaporated milk, until smooth, add to stirfry with remaining Evaporated Milk, and soy sauce.
  • Cook for two more minutes, stirring occasionally, until sauce thickens.
  • Add parmesan cheese and pepper to taste.
  • Serve immediately over hot pasta.

Steps:

  • Cook fettuccine according to pkg directions.
  • Cut chicken into 2 inch pieces.

2 cups uncooked spiral pasta
2 pounds ground beef
2 small onions, chopped
1 garlic clove, minced
1 jar (26 ounces) spaghetti sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 cup sour cream
1/2 pound process cheese (Velveeta), cubed
2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and mushrooms; bring to a boil. Reduce heat; cover and simmer for 20 minutes., Place 1/2 cup of meat sauce in a greased shallow 2-1/2-qt. baking dish. Drain pasta; place half over sauce. Top with half of the remaining meat sauce; spread with sour cream. Top with process cheese and remaining pasta and meat sauce. Sprinkle with mozzarella cheese. , Cover and bake at 350° for 25-30 minutes. Uncover; bake 5-10 minutes longer or until bubbly. Freeze option: Freeze individual portions of cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little spaghetti sauce if necessary.
