The best tasting, moist turkey meatloaf stuffed with cheddar cheese, spinach and rolled, jelly roll style topped with a ketchup based glaze.

olive oil spray
1 large shallot (minced)
2 pounds 93% lean ground turkey
2/3 cup chopped fresh cremini mushrooms
3/4 cup Italian seasoned breadcrumbs
1/3 cup ketchup
2 large eggs
1 1/4 teaspoon kosher salt
1 teaspoon dried marjoram
1 cup 4 ounces reduced fat shredded Cheddar cheese
1 oz chopped fresh baby spinach
2 tablespoons ketchup
1 teaspoon brown sugar
1- 1/2 teaspoons dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • Spray a small nonstick skillet with cooking olive oil spray over medium heat and saute shallot until golden, about 2 to 3 minutes; remove from heat.
  • Combine the glaze ingredients in a small bowl.
  • In a large bowl combine ground turkey, mushrooms, shallot, breadcrumbs, ketchup, egg, salt and marjoram. Mix with your hands until well blended. Place on a 12- x 16-inch piece of parchment paper and pat firmly into a 10- x 12-inch rectangle.
  • Sprinkle cheese mixture evenly over ground turkey followed by the spinach. Roll up jelly roll-style, starting from the short end, by lifting wax paper and removing the paper as you roll. Seal ends well. Place seam-side down in prepared baking dish.
  • Bake 45 minutes. Remove from oven, brush the sauce over roll, and return to oven 10 to 15 minutes, or until no pink remains. Remove from oven and allow to stand 10 minutes. Slice into 16 slices and serve.

Cooking spray
2 tablespoons olive oil
1 small onion (finely chopped)
4 cloves garlic (minced, divided)
1 box (10-ounce) frozen chopped spinach (thawed and squeezed of excess moisture)
2 tablespoons chopped sun-dried tomatoes (or sun-dried tomato pesto)
½ cup crumbled feta cheese (regular, reduced-fat or fat-free)
1 teaspoon salt
Freshly ground black pepper (to taste)
1 egg white
1 large egg
¾ cup fresh breadcrumbs
¼ cup milk
1 can (8-ounce) tomato sauce (divided)
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup chopped fresh parsley
1 pound ground turkey (or chicken)

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 5-inch loaf pan with cooking spray.
  • Heat olive oil in a sauté pan over medium-high heat. Add onion and reduce heat to medium-low. Cook 4-5 minutes or until beginning to soften. Transfer 2/3 of the onion to a bowl to cool.
  • Mix in half the garlic.
  • Add spinach to sauté pan and cook briefly for any remaining moisture to evaporate.
  • Let cool slightly then stir in sun-dried tomatoes, feta cheese and salt and black pepper to taste. Add egg white and set aside.
  • To bowl with onions, add whole egg, breadcrumbs, milk, 2 tablespoons tomato sauce, basil, oregano, parsley, 1 teaspoon salt, black pepper and remaining 2 cloves minced garlic and mix well.
  • Mix in ground turkey or chicken.
  • Place 2/3 of the meat mixture in the loaf pan, creating a small well down the center.
  • Mound spinach mixture in the well. Top with remaining ground turkey.
  • Bake for 50-55 minutes or until a thermometer inserted in the center registers 165 degrees. Top with tomato sauce after 30 minutes, then bake to completion.
  • Let rest 5-8 minutes before slicing.

1 (10-ounce) box chopped spinach, thawed and drained
1/2 cup crumbled feta
1/2 cup seeded and finely chopped red jalapeno
2 tablespoons yogurt
3/4 cup cold milk
1/2 cup quick-cooking grits
1 onion, diced
2 1/2 pounds ground turkey
2 eggs
1 tablespoon Worcestershire sauce
2 tablespoons chopped parsley leaves
1/4 cup chicken stock
1 teaspoon kosher salt
1 teaspoon cracked black pepper
1 (8-ounce) can tomato sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Lightly grease a 9 by 13-inch casserole dish.
  • Filling: Using a kitchen towel, squeeze off the excess liquid from the spinach. In a medium-sized bowl, mix together the spinach, feta, jalapenos, and yogurt. Set aside.
  • In a small bowl, mix together the milk and grits. Set aside.
  • In a large bowl, combine the onion, turkey, eggs, Worcestershire, parsley, stock, salt, pepper, and the grits. Mix until well combined. Transfer half of the mixture to the casserole dish and shape it into a medium-sized log. Using your fingers, make an indentation in the meat for the filling. This should resemble a canoe. Add the filling to the indentation and top with the remaining meat. Form the meatloaf, being sure to cover the filling completely with meat. Pour the tomato sauce over the meatloaf. Bake in the oven until the internal temperature registers 165 degrees F on an instant-read thermometer, about 55 to 60 minutes. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

1 cooked large baking potato, peeled (about 10 ounces)
Freshly ground black pepper
1 pound ground lean turkey
4 plum tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon kosher salt

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Heat the olive oil in a small skillet over medium-high heat; add the garlic and onions and cook, stirring occasionally, until soft and brown, about 8 minutes. Transfer to a food processor along with the spinach, milk, lemon zest, mint, salt, Worcestershire, nutmeg, eggs, potato and some pepper. Pulse until everything is finely chopped and evenly mixed together.
  • Use a rubber spatula to transfer the spinach mixture to a bowl. Add the turkey and stir everything together. Transfer the meatloaf mixture to a 9-by-5-inch loaf pan (1 1/2 quarts) and bake until the mixture is cooked through, 1 hour 15 minutes. Let rest for 5 minutes.
  • For the tomato salad: Meanwhile, chop the tomatoes and toss with the olive oil, parsley and salt in a medium bowl.
  • Slice the meatloaf and serve it with the tomato salad.

6 cloves garlic
Extra virgin olive oil
1 pound fresh spinach, well rinsed
1 medium onion, chopped
1 teaspoon salt, or to taste
1 1/2 pounds ground turkey
1 tablespoon fresh thyme leaves
1 teaspoon freshly ground black pepper
Pinch cayenne

Steps:

  • Place garlic cloves in small saucepan, add enough olive oil to cover them, and place over very low heat. Cook about 40 minutes, until garlic is tender but not browned. Drain garlic, and reserve oil. While garlic cooks, remove and discard stems and heavy leaf ribs from spinach.
  • Place onion in nonstick sauté pan over low heat. Cook until translucent, about 2 minutes. Add spinach leaves and salt, and stir until spinach wilts. Line a small baking sheet with several thicknesses of paper towel, and spread spinach mixture on towel and refrigerate to cool.
  • Heat oven to 375 degrees. In a mixing bowl or bowl of an electric mixer combine turkey, thyme, pepper, cayenne and cooked garlic cloves; mix well.
  • Remove spinach from refrigerator, and chop. Add to mixing bowl, and mix well by hand or on low speed by machine. Form into loaf shape.
  • Heat a heavy skillet, preferably oven-proof. Add a little of the garlic oil and sear loaf top and bottom until lightly browned. Sides can be seared but only if you have a very large spatula to turn loaf easily. Place skillet in oven or transfer loaf to shallow baking dish, then place in oven. Bake about 50 minutes, until a thermometer registers 160 degrees. Remove from oven and serve, or refrigerate and serve cold. Reserve remaining garlic oil for another use.

3/4 cup Quaker Oats, uncooked
1/2 cup nonfat milk
1 egg white, lightly beaten
1 teaspoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 375°F
  • Lightly spray medium skillet with cooking spray.
  • Cook mushrooms and onion in skillet over medium-low heat 4 minutes or until onion is tender; remove from heat.
  • Add spinach, 1/4 cup mozzarella cheese and Parmesan cheese; mix well.
  • Set aside.
  • In large bowl, combine turkey, oats, milk, egg white, Italian seasoning, salt and pepper; mixing lightly but thoroughly.
  • Spoon 2/3 of turkey mixture lengthwise down center of 11 x 7-inch glass baking dish.
  • Form a deep indentation down middle of turkey; fill indentation with reserved spinach mixture.
  • Top with remaining turkey, forming a loaf.
  • Seal edges to completely enclose spinach filling.
  • Bake 30 to 35 minutes or until thermometer registers 170°F and juices show no pink color.
  • Remove from oven; sprinkle with remaining mozzarella cheese.
  • Return to oven 1 to 2 minutes or until cheese melts.
  • Let stand 5 minutes before slicing.
