Even people who don't care for spinach can't pass up these satisfying appetizer squares. They're a hit as a deliciously different vegetable side dish as well. -Patricia Kile, Elizabethtown, Pennsylvania

2 tablespoons butter, melted, divided
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup chopped onion
Sliced pimientos, optional

Steps:

  • Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

1 cup plus 2 TBL flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp pepper
1/4 tsp cayenne
1 c low-sodium chicken broth
3 large eggs
1 1/4 lbs. frozen chopped spinach, thawed and squeezed dry
12 oz. Gruyere cheese, shreddded (3 cups)
1 onion, chopped fine
2 garlic cloves, minced
1 oz. Parmesan cheese, grated (1/2 cup)

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 375°. Spray 13 x 9 baking dish with oil spray. Whisk flour, baking powder, salt, pepper, and cayenne together in bowl. Add broth and eggs and whisk until smooth. Stir in spinach, Gruyere, onion, and garlic until combined. Transfer mixture to prepared baking dish and sprinkle with Parmesan. Bake until browned on top and bubbling around edges, 40-45 minutes. Let cool in pan for 20 minutes. Cut into 32 squares. Serve warm.

I got this reciepe from a friend over 20 years ago and have made it for my kids and now grandkids,it's a great way to get them to eat their vegetables.You can use either Spinach or Broccoli in this...Hope it's as big a hit in your family as it has been in mine..Enjoy !!

4 pkgs frozen chopped spinach or chopped broccoli
1 1/2 lbs monterey jack cheese shredded
1 large onion,chopped
1-cup milk
3 large eggs
1/4 cup butter
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon oregano
1/4 teaspoon garlic powder or fresh chopped garlic
1 cup all purpose flour

Steps:

  • 1. Open the boxes of Spinach OR Broccoli and place in colander overnight so that they are completely thawed and squeeze out the juices with your hands or by pressing down with wooden spoon.DO NOT COOK.
  • 2. Place Thawed Spinach OR Broccoli into a large mixing bowl,set aside.
  • 3. In a medium sized bowl,beat the 3 Eggs,add the milk,then all the dry ingredients as well as the onions
  • 4. Pour over the Spinach OR Broccoli,then begin to mix with hands or wooden spoon,slowly adding the cheese to incorporate it into the mixture
  • 5. Heat oven to 350 degrees.Place 1/4 Cup of butter into a 13x9 inch baking dish and place into the oven and melt,watching carefully so it doesn't burn.Remove pan from oven.
  • 6. Now pour mixture into pan over the top of the melted butter.Do not mix ,just spread evenly with a wooden spoon
  • 7. Bake at 350 degrees for 1 hour or until edges begin to brown and there's a nice golden brown top,remove from oven and cool for 30 minutes and then cut into squares.Cut into Brownie size squares if using as a side dish or smaller squares if using for appetizers
  • 8. You can freeze any leftovers,as these freeze well for future use.Or store in fridge for up to 3 days

2 tablespoons butter, melted
3 eggs
1 cup milk
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
4 cups shredded Cheddar cheese (16 oz)
2 packages (10 oz each) frozen chopped spinach, thawed, squeezed to drain
1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.
  • In large bowl, beat eggs, stir in milk. Stir in flour and baking powder until well blended. Stir in cheese, spinach and onion. Spoon egg mixture into baking dish.
  • Bake 35 minutes or until center is set. Cool 30 minutes; cut into 6 rows by 4 rows. Serve immediately.
