This recipe was a successful attempt at trying to feed my family more spinach. They loved it and now prefer this version to conventional mac and cheese.

1 teaspoon butter
1 (16 ounce) package elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 pound frozen chopped spinach, not thawed
3 cups grated Cheddar cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Melt 3 tablespoons butter in a saucepan over medium heat while macaroni is cooking. Add flour and whisk until fragrant, 2 to 3 minutes. Pour in a little milk and continue whisking. Pour in remaining milk and add frozen spinach. Cook, whisking constantly, until spinach softens and sauce thickens, about 5 minutes.
  • Remove sauce from heat and stir in 2 cups Cheddar cheese; whisk until melted. Season sauce with salt, pepper, and nutmeg.
  • Drain macaroni and spread evenly in the prepared baking dish. Cover with cheese sauce. Mix well. Sprinkle remaining 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, about 30 minutes. Turn on the oven's broiler and broil until a golden crust forms on top, about 3 minutes.

1 slice whole wheat bread
1 tablespoon butter
1/4 cup thinly sliced green onion
2 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups nonfat milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded smoked gouda cheese
1 1/2 ounces grated fresh parmesan cheese
5 cups coarsely chopped fresh spinach
4 cups hot cooked elbow macaroni (about 2 cups uncooked)

Steps:

  • Preheat oven to 350°.
  • Place bread in a food processor, and pulse 10 times or until coarse crumbs measure 1/2 cup.
  • Melt butter in a large saucepan over medium heat. Add onions and garlic; cook 1 minute. Add flour; cook 1 minute, stirring constantly. Gradually add milk, salt, and pepper, stirring constantly with a whisk until blended. Bring to a boil; cook until thick (about 2 minutes). Add cheeses; stir until melted.
  • Add spinach and macaroni to cheese sauce, stirring until well blended. Spoon mixture into a 2-quart baking dish coated with cooking spray. Sprinkle with breadcrumbs. Bake at 350° for 15 minutes or until bubbly.

85g wholewheat penne
½ tbsp rapeseed oil
2 leeks , washed and sliced
50g spelt flour
2 tsp English mustard powder
200ml semi-skimmed milk
80g baby spinach
50g extra mature cheddar , finely grated
2 tomatoes , quartered if large

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a medium non-stick pan. Add the leeks, stir well, then cover and cook for about 6 mins or until softened.
  • Put the flour and mustard powder in a small bowl and gradually whisk in the milk. Pour into the pan with the leeks and stir with a wooden spoon until thickened. Continue stirring over a low heat while the pasta cooks. It will seem thick but will be diluted later.
  • Drain the pasta, reserving the cooking water, then stir the paste into the sauce. Add the spinach and 1-11/2 ladlefuls of the water to make a spoonable sauce, then stir over the heat until the spinach has wilted. Stir in most of the cheese and taste for seasoning.
  • Heat the grill. Tip the pasta mixture into a casserole dish, arrange the tomatoes over the top and scatter over the remaining cheese. Grill for 5-10 mins or until bubbling and golden.

3 cups medium pasta shells, uncooked
1 pkg. (6 oz. ) baby spinach leaves
4 slices OSCAR MAYER Bacon, chopped
2 Tbsp. flour
2 cups milk
2 cups KRAFT Shredded Sharp Cheddar Cheese, divided
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 350°F.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
  • Meanwhile, cook and stir bacon in large saucepan until crisp. Use slotted spoon to remove bacon from pan, reserving drippings in pan. Add flour to drippings; cook and stir 1 min. or until bubbly. Gradually stir in milk. Bring to boil, stirring constantly; cook and stir 3 to 5 min. or until thickened.
  • Add 1 cup cheddar and Parmesan to saucepan; cook and stir 2 to 3 min. or until melted. Add pasta mixture and bacon; mix well.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with remaining cheddar. Bake 20 min. or until heated through.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 dash salt
150 g frozen spinach, well drained and squeezed with paper towel
1/2 cup smoked gouda cheese, shredded
2 eggs, lightly beaten
1 1/4 cups 2% low-fat milk
2 sun-dried tomatoes packed in oil, chopped fine (undrained)
2 tablespoons butter (or olive oil)
2 tablespoons flour
1/2 teaspoon dry mustard
1/2 teaspoon cayenne pepper (more if you wish)
1 1/2 cups 2% low-fat milk
3/4 cup smoked gouda cheese, shredded

Steps:

  • THE CAKES.
  • Mix in a large bowl, the flour, baking powder and the salt; separate the spinach as much as possible and add to the flour mix with the shredded cheese, mix well and make a well in the centre, set aside.
  • In another bowl mix together the eggs, milk, sun dried tomatoes with their oil, mix well and pour into the well in the flour mix; Mix only until well moistened. Dough will be lumpy.
  • On a grill or a large fry pan drop 1/4 cup of dough, spread lightly, do not crowd. Grill 'til bubbles appear on the edges and the cake raises; about 3 to 4 minutes flip and brown the other side; remove to oven proof platter, keep warm in a 200°F degree oven. Repeat until all batter is used.
  • SMOKED GOUDA CHEESE SAUCE.
  • Heat butter in saucepan; mix together flour, cayenne and dry mustard; add to butter, stirring constantly until thickened, about 1 minutes.
  • Slowly add milk while constantly stirring with a whisk. Bring to boil while whisking, when thickened remove from heat. Immediately add shredded smoked Gouda cheese, stirring until melted; keep warm.
  • PUT TOGETHER.
  • Arrange cakes in a pile on platter; pour cheese sauce over and let drip down sides.
  • Or serve cheese sauce separately and pour over cakes on separate plates.

1/2 pound sliced fresh mushrooms
1 small red onion, chopped

1 cup Alfredo sauce
1/2 teaspoon dried thyme
1 package (6 ounces) fresh baby spinach
1/2 pound fully cooked Italian chicken sausage links, sliced
2 cups shredded smoked Gouda cheese

Steps:

  • Unroll dough into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 425° for 10-12 minutes or until lightly browned., Meanwhile, saute mushrooms and onion in butter in a large skillet until tender. Add garlic; cook 1 minute longer. Stir in Alfredo sauce and thyme. Spread over crust. Top with spinach, sausage and cheese., Bake for 10-15 minutes or until crust and cheese are lightly browned.

A different twist on macaroni & cheese. This is reminiscent of spinach dip with pasta added. This recipe can be made Gluten Free by using a Gluten Free pasta.

8 ounces penne (I used Gluten Free Pasta, slightly undercooked)
1 (10 ounce) package frozen spinach, thawed and well drained
2 tablespoons butter
2 tablespoons sun-dried tomatoes, finely chopped
2 shallots, finely diced
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups milk
7 ounces gouda cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions. Drain and keep warm.
  • Melt butter in a large saucepan, over low heat being careful not to burn the butter.
  • Saute sun dried tomatoes and shallots in melted butter until shallots begin to soften, about 3 minutes.
  • Stir in corn starch and salt.
  • Cook and stir for 1 minute.
  • Gradually add milk, blending well.
  • Cook over medium heat, stirring constantly until sauce is slightly thick, about 3-4 minutes.

Steps:

  • PREPARE SMOKED GOUDA BECHAMEL:.
  • In a medium saucepan, melt the butter or margarine; add the flour and whisk over moderately high heat for 30 seconds.
  • Add the milk and bring to a boil, whisking constantly.
  • Cook over moderate heat, whisking constantly, until thickened, 4 to 5 minutes.
  • Add the cream, smoked Gouda, paprika (if using)and nutmeg and whisk just until the cheese is melted, about 2 minutes.
  • Season with salt & pepper.
  • Use right away or cover directly with plastic wrap and refrigerate.
  • PREPARE THE SPINACH:.
  • Preheat the broiler and position a rack 10 inches from the heat.
  • In a large soup pot, bring 1/4 inch of water to a boil.
  • Add the spinach and cook over high heat, tossing with long tongs, until completely wilted, about 3 minutes.
  • Transfer the spinach to a colander and drain, pressing out as much liquid as possible add a squeeze of lemon; put into kitchen towels and press the water out.
  • In a medium, ovenproof skillet, heat the olive oil and pinch of crushed red pepper flakes(if using); add the onion and cook over high heat, stirring, until softened, about 3 minutes.
  • Add the wilted spinach and cook, stirring, for 1 minute.
  • Add the Smoked Gouda Béchamel and cook over moderate heat, stirring, until bubbling, about 1 minute.
  • Season with salt and pepper.
  • Sprinkle the spinach with the bread crumbs and shredded Gouda and broil for 2 minutes, until golden and bubbling.
  • Serve hot.
