SPINACH DIP-STUFFED MUSHROOMS

- Preheat oven to 400°. Remove stems from mushrooms and set caps aside; discard stems or save for another use. In a small skillet, heat olive oil over medium heat. Add spinach; saute until wilted. Add garlic; cook 1 minute longer., Combine spinach mixture with remaining ingredients. Stuff into mushroom caps. Place in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, until mushrooms are tender, 12-15 minutes. Serve warm.

- Preheat oven to 400°. Mix first 4 ingredients. Stir in artichoke hearts, spinach, mozzarella cheese and 3 tablespoons Parmesan cheese., Place mushrooms on foil-lined baking sheets, stem side up. Spoon about 1 tablespoon filling into each. If desired, top with additional Parmesan cheese. Bake until mushrooms are tender, 16-20 minutes.

CREAMY SPINACH-STUFFED MUSHROOMS RECIPE BY TASTY
Here's what you need: medium sized mushrooms, butter, garlic, fresh spinach, cream cheese, salt, pepper, breadcrumb, parmesan cheese

Steps:
- Preheat oven to 375˚F (190˚C).
- Remove the stems from the mushrooms. Place the top half on a baking sheet.
- Mince the stems.
- Melt the butter in a pan and add the minced stems and minced garlic. Stir and cook for 2 minutes.
- Add the spinach, cook until it wilts.
- Add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and everything is well-combined.
- Take a spoonful of the spinach mixture and fill each mushroom top.
- Mix bread crumbs and Parmesan cheese in a bowl and sprinkle the mixture on top of the dip stuffed mushrooms.
- Bake for 12-15 minutes or until golden brown.

- Place prepared spinach artichoke dip in a bowl. Set aside. Prepare a baking dish with either butter or cooking spray.
- Prepare mushrooms by wiping with a damp cloth to remove dirt/grit. Remove stems. Reserve half of the stems. Discard the rest or save for later use.
- Finely chop the reserved mushroom stems and add them, along with 2 T breadcrumbs to the spinach dip. Stir well until combined.

- Heat olive oil in a skillet over medium heat. Add spinach and saute until wilted. Stir in minced garlic and saute only until garlic is fragrant, less than a minute. Remove from heat and cool slightly.
- Blend sour cream and cream cheese together. Stir in mozzarella, Parmesan, salt and pepper until well combined. Gently stir in cooked spinach, being sure to scrape all the cooked garlic from the bottom of the skillet into the mixture as well.
- Place mushroom caps face up on a lined cookie sheet. Stuff each mushroom with spinach mixture. Bake at 400 degrees for 12 - 14 minutes. Allow mushrooms to cool slightly before serving.
