SPINACH CRAB CHICKEN
I altered a friend's recipe for crab-stuffed chicken to include one of my favorite vegetables- spinach. Now my husband requests this elegant entree all the time. Served over rice, it's special enough for company. -Vicki Melies Glenwood, Iowa

- For sauce, in a large skillet, sauce the onion, mushrooms and celery in butter until tender. Stir in flour and 1/4 teaspoon salt until blended. Gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat., Flatten chicken to 1/4-in. thickness; sprinkle with pepper and remaining salt. In a large bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce. Spoon 1/4 cup down the center of each chicken breast half. Roll up; secure with toothpicks. Place seam side down in a greased 13x9-in. baking dish. Top with remaining sauce., Cover and bake at 375° for 35-45 minutes or until chicken is no longer pink. Sprinkle with cheese. Broil 4-6 in. from the heat for 5 minutes or until lightly browned. Discard toothpicks. Serve with rice.

- Preheat oven to 375 degrees.
- Combine first 7 ingredients in a small bowl. Gently fold in crab. Season to taste with salt and black pepper.
- Cut horizontally through the center of each chicken breast, creating a pocket, being careful not to cut all the way through at any point.
- Fill each pocket with equal amounts of the stuffing. Secure with toothpicks.
- Dredge each piece of chicken in the breadcrumbs and place on a baking sheet. (Can be prepared to this point up to 4 hours ahead. Cover and chill.)
- Spray the breadcrumbs with cooking spray to moisten.
- Bake for 22 to 25 minutes or until cooked through to 165 degrees in the center of the filling.
- Remove toothpicks and serve.

SMOKED SPINACH STUFFED CHICKEN BREASTS AND CRAB STUFFED CHICKEN BREASTS RECIPE

- Drain the spinach in a colander and squeeze the excess moisture out with your hands. In a mixing bowl, combine the spinach, cream cheese, mozzarella cheese, garlic, salt, pepper, and nutmeg. If you have a kitchen glove, do this with your hand. Set the filling aside.
- Remove a rack from your Masterbuilt Smoker. Prepare the smoker by filling the bowl with water and citrus slices, if desired. Fill the tray with wood chips. Preheat the smoker with the vent open to 250°F.
- Butterfly your chicken on a clean cutting board. Place one hand on top of the breast to hold it in place. With a sharp knife, slice through the center of the breast approximately 3/4 of the way, being sure to leave some chicken intact. You are looking for the breast to open and lay flat like it is a hinged book.
- Open the chicken and place a piece of plastic wrap on top. Lightly pound each breast with the flat side of a meat mallet just to achieve an even thickness. Don't pound it too thin or tear it.
- Place equal amounts of the spinach filling on one half of each butterflied breast. Fold the other half over the filling. Tie the chicken breasts with kitchen twine in 3 or 4 spots. Brush each breast all over with olive oil and season with paprika, salt, and pepper.
- Place the stuffed breasts on the smoker rack. Put the rack inside the smoker and place a sheet pan or disposable pan on the rack below the chicken to catch the drippings. Cook for approximately 1-1/2 hours until the internal temperature reads 165°F when checked with a digital meat thermometer. Continue to cook until the proper temperature is achieved. Remember to check your wood chips and water approximately every 45 minutes. Replenish as needed.
- Remove the smoked chicken to a clean cutting board. Cover it loosely with foil and allow the chicken to rest for at least 10 minutes before slicing and serving.
- Using kitchen shears, cut the twine off of the chicken. You can serve the whole breasts or slice them into 3/4 inch thick portions. Serve while still warm.
CRAB AND SPINACH QUICHE

- Line each unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. - Heat oven to 375°F.
- Cook pasta as directed on package, omitting salt.
- Meanwhile, melt 1 Tbsp. butter in large nonstick skillet on medium heat. Add onions; cook 5 to 6 min. or until crisp-tender, stirring frequently. Add spinach and garlic; cook and stir 1 to 2 min. or just until spinach is wilted. Spoon spinach mixture into medium bowl.
- Melt remaining butter in same skillet. Stir in flour; cook 2 min., stirring constantly. Gradually add milk, whisking constantly after each addition. Bring to boil, whisking constantly; cook and stir 5 min. or until thickened. Remove skillet from heat. Add nutmeg, pepper and 1/2 cup Parmesan to white sauce; mix well.
- Add ricotta to spinach mixture along with 1 cup of the cheese sauce and 1/2 cup of the remaining Parmesan; mix lightly. Stir in crabmeat. Spoon into resealable plastic bag.
- Drain pasta; rinse with cold water. Cut small piece off one bottom corner of filled plastic bag; use to squeeze enough crab mixture into both sides of pasta shells until shells are evenly filled with crab mixture. Place in 13x9-inch baking dish sprayed with cooking spray; top with remaining cheese sauce, then remaining Parmesan.
- Bake 30 to 35 min. or until heated through.

SPINACH AND CRAB IN A CHICKEN BLANKET
This is a take on chicken cordon blu that I created when I realized I didn't have the ingredients. This is a very simple and fast recipe which is what I need as I feed a family of 8 everynight. You can make as much as you need but this recipe is for 6. My kids and hubby really enjoyed it including my 2 year old! Thats a plus.

- Thaw chicken breast and pound flat between 2 sheets of plastic wrap. Do this to all 6 peices.
- In a medium size bowl soften cream cheese, add crab meat and shredded mozzarella cheese. Mix well.
- Put a layer of Spinach leaves down on the flattened chicken breast and fill the center of the chicken breast with crab meat mixture.
- Roll chicken breast up like a pinwheel tucking under the ends so all the crabmeat mixture is inside the chicken breast roll.
- Put in a glass baking dish and season with salt and pepper to taste.
- Bake at 350 degrees for 20-30 mins or until chicken is cooked all the way through.
- Let stand 3 mins before serving to let cheeses settle a bit.
- I serve this with a mixture of mayo/mustard sauce or you can serve with a preferred dipping sauce of your own if desired.

- Heat oven to 200C/180C fan/gas 6. Tip the beetroot, celeriac, onions and whole garlic cloves into a shallow roasting tin. Add the oil, 1 tbsp thyme, half the lemon zest, fennel seeds and a squeeze of lemon juice, then toss together. Roast for 20 mins while you prepare the chicken.
- Stir the mustard powder and paprika into 2 tbsp yogurt in a bowl. Add half the crushed garlic, the remaining lemon zest and thyme, and juice from half the lemon. Add the chicken and toss well until it's coated all over. Put the chicken in the tin with the veg and roast for 40 mins until the chicken is cooked through and the vegetables are tender.
- About 5 mins before the chicken is ready, wash and drain the spinach and put it in a pan with the remaining crushed garlic. Cook until wilted, then turn off the heat and stir in the remaining yogurt. Scatter some extra thyme over the chicken and vegetables, then serve.
