I wanted a soup that all my family would eat. After reviewing many recipes online I came up with this flavorful soup.

1 -2 lb stewing beef, bite size
3/4 cup flour
salt & pepper
2 tablespoons olive oil
1 (14 1/2 ounce) can petite tomatoes
1 (8 ounce) can tomato sauce
1 (10 1/2 ounce) can beef broth (I used Campbell's condensed, undiluted)
1/4 cup parsley, finely chopped
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon turmeric
1/4-1/2 teaspoon cayenne pepper (depends on how spicy you want it)
2 cups yolk-free egg noodles
2 -3 cups water
1/2 medium onion, cut into 1/2 inch pieces
1 small green pepper, bite size pieces (a must for the right flavor in this soup)
2 carrots, bite size pieces
1 parsnip, bite size pieces
1 turnip, bite size pieces

Steps:

  • Coat the beef in flour, salt, & pepper. Heat the oil in a large pot. Brown the beef in the oil.
  • Dump the petite tomatoes, tomato sauce, & beef broth into the pot with the beef. Add the parsley, Worcetershire sauce & all the spices into the sauce. Simmer on medium heat for 15 minutes.
  • Add the vegetables to the sauce & simmer the soup on low heat for 30-40 minutes.
  • Before the vegetables are completely done add the noodles into the pan & water (enough to cover the noodles). Cook for additional 10 minutes or until the noodles are fully cooked.
  • Serve with warm bread & butter. Yum!

My brother got this recipe off his boss. My husband and him love it and I make myself the vegetarian version (but it never comes out quite as nice). I call it stew/soup because it fits into neither category (not too liquidity or thick).

3 large onions, finely chopped
3 carrots, chopped
3 celery, chopped
3 garlic cloves, minced
1/2 green pepper, chopped (or red)
3 medium potatoes, cubed
1 -2 lb stewing beef (or to your liking)
2 -3 tablespoons tomato paste
2 -3 tablespoons paprika
1 (900 ml) box chicken broth or 1 (900 ml) box beef broth
salt and pepper
2 teaspoons olive oil (for cooking vegetables)
fresh thyme, and rosemary if you like their hearty flavour

Steps:

  • ***If possible season the meat with salt, pepper, olive oil, garlic powder, oregano, paprika and cover in the fridge overnight. Otherwise still season the meat to your liking and go ahead.
  • Start by heating the pot to medium-high heat.
  • Add olive oil and fry onions 3-4 minutes until they start to soften.
  • Add the carrots, celery, and peppers and let them cook for at least 8-10 minutes. (The celery should start to get soft but not mushy and the onions will look translucent).
  • Add the garlic and chopped herbs (if using fresh thyme and rosemary).
  • Cook for another minute or two.
  • Add the meat and potatoes and stir until the meat loses the raw look.
  • Add the paprika (hold back on adding any salt until after you ad the stock since they can be salty at times).
  • Add the beef or chicken stock (you need just enough to cover the meat and vegetables. If more is required you can always mix a stock cube in water and add to pot).
  • Add the tomato paste and let it all come to a boil, reducing the heat to allow it to simmer.
  • Let it cook for half an hour or until the potatoes become soft and allow for the soup/stew to thicken up.

SIMPLE CHICKEN STEW/SOUP

A wonderful meal for a cold night. (I hate cooked carrots. Cooking them this way makes them fall apart & become part of the broth. You still get the nutrients without actually biting into them.)

3 skinless chicken pieces (2 leg quarters & 1 breast)
3 cups water
1 tablespoon olive oil
2 tablespoons tomato paste
2 medium garlic cloves, cut in half
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon ginger
1/4 teaspoon turmeric
2 carrots, bite size
1/2 medium onion, chopped
3 -4 medium potatoes, peeled & cut into 1 inch pieces

Steps:

  • Sprinkle a small amount of salt, pepper, cumin, & paprika on the chicken. (About 1/2 teaspoon of each spice for all 3 pieces of chicken).
  • Pour 1 1/2 cups of water into the pressure cooker. Add the olive oil, tomato paste, garlic, & the rest of the spices into the pot. (Don't forget 1/2 teaspoon of salt, pepper, cumin, & paprika).
  • Note: If you are using a regular pot instead of a pressure cooker the cook times are tripled & you may need more water.
  • Place the chicken into the cooker & add the onions & carrot. Cook for 10 minutes, after it begins to hiss. (Regular pot, roughly 30 minutes).
  • Remove chicken & place on a plate. Put the potatoes & 1 1/2 cups of water into the pot & cook for 4 more minutes, after it begins to hiss. (Regular pot, 12-15 minutes).
  • While the potatoes are cooking break the chicken into small pieces (disregard the bones).
  • Once the potatoes are done add the chicken back into the pan & stir. Pour into a serving dish & serve with warm bread.
