Steps:
- Drain out the oil completely from the tuna can.
- Wash the tuna well and keep aside.
- Heat oil in a pan.
- Add onions.
- Saute until golden brown.
- Add capsicum and tomatoes.
- Saute for 5 minutes.
- Add turmeric powder, chilli powder and ginger-garlic paste.
- Stir well.
- Stir-fry until the raw smell of ginger and garlic in the paste is gone.
- Add tuna, spring onions, soya sauce and salt to taste.
- Fry for 5 minutes or until the mixture is totally dry.
- Garnish with coriander leaves and serve hot with rotis.

- Preheat oven to 350°F Spray a 9 x 13 baking dish with nonstick spray.
- Bring a large pot of water to a boil. Add the pasta and cook 5 minutes. Add the broccoli and cook, stirring occasionally, until the pasta and broccoli are tender, 3-4 minutes. Drain; return the broccoli and pasta to the pot.
- While the pasta and broccoli are cooking, heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until tender, about 5 minutes. Add the flour and mustard; cook, stirring constantly, about 1 minute. Gradually whisk in the milk and salt. Increase the heat and cook, whisking constantly, until the sauce boils and thickens, 3-4 minutes.
- Add the sauce to the pasta and broccoli. Stir to combine. Transfer to the prepared baking dish and sprinkle evenly with the cheese. Bake until bubbling,about 25 minutes.

SPICY TUNA PASTA
This is a recipe I tried at a friends house once. The combination is actually really tasty, I have made it unsuccessfully and successfully. The difference being the chilli peppers. The heat works so well with the tuna. It's LOW FAT too!!!! Dairy free if served without sour cream. Just to clarify spring onions/scallions I consider to be the same thing.

Steps:
- Heat olive oil in pan, add garlic and chillis and saute lightly, do not burn.
- Add bell pepper and mushrooms and saute over medium heat, until soft.
- Add tin of tomatoes and oregano and simmer about 5 minutes.
- Add drained tuna chunks and stir in.
- When tuna is heated, take sauce off heat and add spring onions.
- Stir in pasta, season to taste.
- Serve with dollops of sour cream.

Steps:
- 1. Lightly season chops with salt and pepper and arrange on rack of broiler pan coated with non-stick spray.
- 2. Peel and segment oranges over bowl to catch juice. Set orange segments aside.
- 3. Squeeze into bowl as much juice as possible from membrane left after segmenting orange.
- 4. Mix cornstarch with orange juice. In small saucepan, combine cornstarch mixture, orange rind and sugar and stir over low heat until thick and bubbly.
- 5. Remove from heat.
- 6. Meanwhile, preheat broiler and broil chops on one side until lightly browned.
- 7. Turn and spread each chop with 1 teaspoon peanut butter. Broil.
- 8. Fold orange segments carefully into heated cornstarch mixture to coat and arrange decoratively over chops.
- 9. Replace briefly under broiler just to heat oranges.
- 10. Arrange chops on heated serving platter and garnish with ribbons of orange rind.

- Cook pasta according to package directins, omitting salt and fat.
- Drain; rinse under cold water and drain again.
- Combine pasta and tuna and next 3 ingredients.
- Combine salsa, mayo and red pepper.
- Add to pasta mixture; toss.
- Cover and chill.
- If desired, serve in lettuce lined bowl.
- Sprinkle with sliced onions.
