Spicy Tofu Scrambles With Greens image

I created this vegan recipe for a delicious egg-free breakfast option. It is packed with flavor and the combination of protein from the tofu and vitamins and minerals in the kale will certainly kick-start your day with nutrition.

1 tablespoon extra virgin olive oil
1/2 cup onion, diced
1 garlic clove, pressed
1/2 medium tomatoes, chopped
5 kalamata olives, chopped
3 kale leaves, chopped
1/4 teaspoon red pepper flakes
8 ounces firm tofu, drained* and crumbled
1 tablespoon naturally brewed soy sauce

Steps:

  • Coat a large frying pan with the olive oil and place over medium heat.
  • Add the onion and sauté until tender about 4 minutes, then add garlic, tomato, olives and sauté a minute more.
  • Add chopped kale and red pepper flakes, stir and cover frying pan and let steam for three minutes, stirring once or twice.
  • Add crumbled tofu to pan and pour over the soy sauce. Stir to combine well and keep on heat until tofu is heated all the way through, then serve.

Try our vegan spiced tofu with cherry tomatoes for an egg-free take on scramble on toast. Perfect for breakfast, served on rye bread

1 tbsp olive oil
1 small onion , finely sliced
1 large garlic clove , crushed
½ tsp turmeric
1 tsp ground cumin
½ tsp sweet smoked paprika
280g extra firm tofu
100g cherry tomatoes , halved
½ small bunch parsley , chopped
rye bread , to serve, (optional)

Steps:

  • Heat the oil in a frying pan over a medium heat and gently fry the onion for 8 -10 mins or until golden brown and sticky. Stir in the garlic, turmeric, cumin and paprika and cook for 1 min.
  • Roughly mash the tofu in a bowl using a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. Raise the heat, then tip in the tomatoes, cooking for 5 mins more or until they begin to soften. Fold the parsley through the mixture. Serve on its own or with toasted rye bread (not gluten-free), if you like.
