SPICY SHANGHAI BEEF
An Asian inspired creation! :-) Its really good and the heat can be adjusted based on how much red pepper you use.

Steps:
- Heat wok to 375°F and then add oil (always heat wok first).
- Stir-fry garlic, ginger, red pepper, and onion until soft and translucent.
- Add beef and stir-fry until beef is light brown and lightly springy to touch (DO NOT drain fat from beef).
- In bowl combine 1/4 cup chicken broth, hoisin sauce, beef broth and soy sauce.
- Stir broth mixture into beef/onion mixture.
- Cover and reduce heat.
- Simmer for 10-15 minutes.
- Dissolve cornstarch in remaining 1/4 cup of chicken broth.
- Stir cornstarch mixture into wok.
- Cook until sauce thickens.
- Add bamboo shoots and water chestnuts.
- Toss freshly cooked pasta with sesame oil, serve meat mixture over top.
- Garnish with scallions, if desired.

- Whisk together soy sauce, hoisin sauce, sesame oil, sugar, garlic, and red pepper flakes in a bowl. Toss beef with marinade, cover, and refrigerate 1 hour to overnight.
- Heat peanut oil in a wok or large, nonstick skillet over high heat. Add the green onions, and cook for 5 to 10 seconds before stirring in the beef. Cook and stir until the beef is no longer pink and is beginning to brown, about 5 minutes.

SPICY CRISPY BEEF
I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
- Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
- In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
- Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

- Cut beef Flat Iron Steaks crosswise into 1/4-inch thick strips. Combine beef and 3 tablespoons stir-fry sauce in medium bowl; toss to coat. Cover and marinate in refrigerator 30 minutes to 2 hours.
- Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until hot. Add broccolini; stir-fry 4 to 6 minutes or until florets begin to brown. Add water; reduce heat. Cover and simmer 2 to 3 minutes or until crisp-tender. Remove from skillet.
- Increase heat to medium-high. Heat 1 teaspoon oil in same skillet until hot. Add 1/2 of beef; stir-fry 1 to 3 minutes or until outside surface of beef is no longer pink. Remove from skillet. Repeat with remaining teaspoon oil and beef. Return broccolini and beef to skillet. Stir in noodles and remaining stir-fry sauce; cook and stir 1 to 3 minutes or until heated through. Stir in cilantro.

- You’ll need two large pots to make this recipe. Fill one large stock pot with 16 cups of cold water. Add the ginger, scallions, Shaoxing wine and beef chunks. Cover and bring to a boil. Immediately turn down the heat and simmer for 10 minutes. After that, turn off the heat and set aside.
- Heat the oil in another stock pot or large wok over medium low heat, and add the Sichuan peppercorns, garlic cloves, onion, star anise and bay leaves. Cook until the garlic cloves and onion chunks start to soften (about 5 - 10 minutes). Stir in the spicy bean paste. Then add the tomatoes and cook for two minutes. Finally, stir in the light soy sauce and sugar. Turn off the heat.
- Now, let’s scoop out the beef, ginger, and scallions from the 1st pot and transfer them to the 2nd pot. Then, pour in the stock through a fine mesh strainer. Place the pot over high heat, and add in the tangerine peel. Cover and bring the soup to a boil. Immediately turn the heat down to a simmer, and cook for 60-90 minutes.
- After simmering, turn off the heat, but keep the lid on, and let the pot sit on the stove (with the heat off) for another full hour to let the flavors meld together. Your soup base is done. Remember to bring the soup base to a boil again before serving. As an optional step, pick out the beef and strain the soup if you’d like to remove the spices and aromatics from the broth.
