Every time I go to a seafood restaurant, I order it in this style. I began to experiment at home with various spices in order to replicate restaurant-style Blackened Tuna in my kitchen. It took me just several attempts, but I eventually got it! Let's get started on making delicious Blackened Tuna Steaks! What is blackened tuna steak? A Cajun dry rub is rubbed onto all sides of a raw tuna steak to make blackened tuna. The tuna is then cooked and sliced. How to Thaw Tuna Fish? Begin by thawing your frozen tuna. The best approach to defrost your seafood is to place it in the refrigerator the night before you prepare your tuna fillet dish. Are you in a rush? Place the sealed tuna steaks in a dish of cold water to thaw to expedite the defrosting phase. Blackened Tuna Steaks Recipe The Blackened Tuna Steak is covered with a spicy dry rub, seared, then quickly cooked in a pan, yielding a stunning blackened tuna steak that is medium-rare on the interior, or if you like it well done, keep it in your skillet a few minutes more. Paul Prudhomme, a famed chef, invented pan-blackening. He came up with the notion of coating redfish in melted butter, dredging it in Cajun seasonings, and cooking it in an extremely hot cast iron skillet. He suggested pan-blackening outdoors on a BBQ grill because the technique creates so many stinging eyes from the smoke. Tuna steaks, like beef steaks, are served blood-red and rare. This Cajun-type dish includes blackening spices and a remoulade sauce. In the middle, is a stunning rare tuna with an explosive, spicy crust. Place a cast-iron skillet on the grill grates and heat both at the same time. Brush the frying surface with oil. Add the wood chips to the coals or place in the smoker box of your grill sometime before cooking. Next, melted butter should be brushed on one side of each tuna steak. Place the tuna steaks, and butter side down, on the grill. Sear the tuna stakes for 2 minutes, then flip; brush the opposite side of each steak with melted butter. Grill for 2 minutes more, or until the surface is deeply charred but the center is still rare, rotating with tongs. To make Cajun Remoulade In a mixing bowl, combine all of the ingredients and swirl or whisk to combine. Adjust the seasoning using salt and hot sauce to your preference. 2 tablespoons lemon juice
2 teaspoons Asian (toasted) sesame oil
2 teaspoons molasses
1 teaspoon cayenne pepper, or more to taste
6 thin slices fresh ginger, minced
2 cloves garlic, minced
2 1-inch-thick tuna steaks, thawed

Steps:

  • Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
  • Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.

6 tablespoons/90 milliliters aged balsamic vinegar
1 medium lemon (juiced)
1 garlic clove (peeled and halved)
For the Tuna:
1 (1 1/2 pounds) center-cut ahi tuna fillet
1 1/2 teaspoons/7.5 milliliters kosher salt
1 teaspoon/5 milliliters coriander (ground)
1 teaspoon/5 milliliters paprika
1/4 teaspoon/1.25 milliliters cayenne pepper
1 1/2 teaspoons/7.5 milliliters black pepper (coarsely ground)
2 tablespoons/30 milliliters vegetable oil (for cooking)
Garnish: 4 lemon wedges

Steps:

  • Gather the ingredients.
  • Make the balsamic reduction : Place the balsamic vinegar, lemon juice, and garlic in a small saucepan over medium-low heat.
  • Simmer until the mixture reduces by half. Turn off the heat and reserve until needed. This sauce does not have to be hot for serving. The reduction will thicken slightly as it cools.
  • If your tuna fillet is not already sliced into servings, slice into 4 rectangular steaks of equal size. In a small bowl, combine the salt, coriander, paprika, and cayenne pepper. Lay the tuna steaks out on a plate and sprinkle the spice mixture evenly on all sides.
  • Evenly coat the tuna steaks with the freshly ground black pepper and gently press it in so that it adheres to the surface, being careful not to smash the flesh.
  • Place a thick-bottomed frying pan or cast-iron skillet over medium-high heat. Add the oil and swirl to coat the pan. When you see small wisps of smoke, add the tuna to the pan and sear the steaks for about 1 minute per side or until the desired doneness is reached.
  • Remove the tuna steaks and place them on a cutting board. For presentation, cut each steak diagonally into 4 to 5 slices and fan on a plate. Serve with a small amount of sauce drizzled alongside. Garnish with a lemon wedge and enjoy.

20g pack coriander (leaves and stalks)
3 garlic cloves
½ tsp each paprika , ground cumin and chilli powder
1 tbsp lemon juice
150ml extra-virgin olive oil
4 x 8oz/200g fresh tuna steaks, each about 2.5cm/1in thick

Steps:

  • Put the coriander, garlic, spices and lemon juice into a blender and blitz to a purée. With the motor running, slowly add the olive oil until you get a smooth, thick sauce. Set aside.
  • Sit the tuna steaks in a non-metallic dish and cover with two-thirds of the sauce. Cover with cling film, then leave to marinate in the fridge for about 20 mins (or for up to 4hrs).
  • Heat a griddle pan or grill. Shake off any excess marinade, season the tuna steaks, then cook for 2-4 mins, depending on thickness for medium rare, turning once (cook 2 mins more for well done). Drizzle over the remaining sauce paste to finish. Try serving with new potatoes; for a Moroccan twist, toss melted butter, harissa spice mix and chopped coriander leaves through the potatoes.
