- In a bowl, beat sugar, oil, eggs and vanilla until smooth. Combine flour, baking soda and salt; add to the sugar mixture alternately with yogurt. Stir in raisins. Pour half of the batter into a greased 9-in. square baking pan. , Combine topping ingredients; sprinkle half over batter. Top with remaining batter and topping. Cut through batter with a knife to swirl the topping. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

OLD-FASHIONED BOILED RAISIN CAKE WITH BROWN SUGAR FROSTING

- Preheat oven to 350 degrees F.
- In a medium saucepan, mix together water, brown sugar, raisins, butter, and cocoa. Bring to a boil, and let simmer for 5 minutes. Remove from heat, and let cool.
- In a separate bowl, mix together, flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and ground cloves.
- Add wet ingredients to the dry ingredients, and stir until completely incorporated.
- Pour into a 13x9 inch glass dish or cake pan that has been generously sprayed with non-stick cooking spray.
- Bake for 35 minutes of until a toothpick comes out clean from the center of the cake.
- While cooling, prepare the Brown Sugar Frosting.
- In a medium sized saucepan, mix brown sugar, butter and milk. Heat until the sugar is dissolved, whisking constantly. Remove from heat and let cool completely.
- Once the sugar mixture is cooled, pour sugar mixture into a mixer bowl. Add powdered sugar and mix until a frosting is formed. If a runnier texture is desired, add milk 1 T. at a time until desired consistency.
- Frost the cake, and enjoy!

- Grease angel food cake pan or 9x13 pan. I use the angel food pan.
- Cream together butter and 1 cup sugar till fluffy.
- Add eggs and vanilla and beat well.
- Add sour cream and blend inches.
- Combine flour, baking powder and soda and salt. Whisk to combine.
- Add to creamed mixture and mix well.
- Mix sugar, nuts and cinammon in small bowl.
- Pour half of your mixture in the prepared pan.
- Top with raisins and half the nut mixture.
- Spoon on the rest of the batter and top with remaining nut mixture.
- Bake at 350 degrees for 40 minutes or until toothpick come out clean.

RAISIN SPICE COFFEECAKE MUFFINS
The original recipe was from a 1942 Good Housekeeping Cookbook. I changed a few things, added a few things and made this Coffeecake into muffins. It's a delicious treat to go with your morning coffee, or great for just a snack.

- 1. STREUSEL TOPPING: mix brown sugar, panko crumbs and walnuts together in a bowl. Cut in butter to make a crumbly topping. Sit aside.
- 2. MIX TOGETHER: flour, baking powder, salt, cinnamon, nutmeg, then add and mix in brown sugar.
- 3. CUT IN: shortening and apple butter
- 4. ADD: Raisins and 1/2 c chopped walnuts
- 5. COMBINE: eggs and milk. Stir together JUST until mixed. Using an ice cream scoop, put heaping scoops into muffin tins sprayed with Baker's Joy.
- 6. Sprinkle a small amount of crumb topping on top of muffins. Bake 350° for about 18-22 min. Time will var from oven to oven. A toothpick inserted in the middle should come out clean when muffins are done.

This recipe is an old-time favorite that was given to me by my mother-in-law. She told me the cake shouldn't be eaten the day it's baked...aging makes it so much better. She once entered this cake in a contest and won first prize!
