Smoky Sweet Cedar Plank Salmon with Sesame Asparagus image

This cedar plank salmon is grilled with the most wonderful smoky sweet flavor! Pair with sesame asparagus on the side for the best meal ever.

Number Of Ingredients 14

2 cedar planks, (soaked for 30 to 60 minutes)
1.5 to 2 pounds fresh salmon
¼ cup dijon mustard
3 tablespoons brown sugar
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon pepper
fresh chives, (for topping)
2 pounds asparagus spears, (woody stems removed)
2 tablespoons toasted sesame oil
kosher salt and pepper
½ teaspoon garlic powder
1 to 2 tablespoons toasted sesame seeds

Steps:

  • Soak the cedar planks in water for at least 30 to 60 minutes. You can soak longer if you wish. Soak until you place the salmon on top.
  • Preheat your grill to the highest setting.
  • Pat the salmon filets completely dry with a paper towel. If needed, cut the pieces so they will all fit on the cedar planks. Brush the top of the filets with mustard. In a bowl, whisk together the sugar, smoked paprika, garlic powder, salt and pepper. Sprinkle the spices on top of the mustard, covering the salmon all over. Place the salmon on the cedar planks if you haven't already.
  • Toss the asparagus with the toasted sesame oil, a big sprinkle of salt and pepper and the garlic powder.
  • Turn the heat on the grill down to medium-high. Place the cedar planks on the grill. You want to grill the salmon with the top closed anywhere from 15 to 18 minutes, until it's opaque and flakes with a fork.
  • If you have room on the grill, throw the asparagus on too when the salmon has 6 to 8 minutes left. You can use a grill basket or grill pan if it's easier, but with asparagus I usually toss the spears right on! Grill with the top closed for 6 to 8 minutes, tossing once or twice during cook time, until charred. If you have SUPER skinny asparagus spears, you may want to cut the grill time down to 3 to 5 minutes. It just depends on the spear size!
  • Carefully remove the cedar planks with tongs and place them on a baking sheet to transfer inside. Place the asparagus on a plate and sprinkle with the sesame seeds. Sprinkle the salmon with chives.
  • Serve the salmon and asparagus immediately!

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

This grilled salmon and asparagus is incredibly delicious and ready in less than thirty minutes. It's the perfect summer meal!

1 pound skin-on fresh salmon fillets
1/2 pound fresh asparagus
3 teaspoons olive oil
salt and pepper to taste
3 tablespoons butter (melted)
zest of one medium lemon
juice of 1/2 medium lemon
1/2 teaspoon garlic powder
fresh parsley

Steps:

  • Preheat the grill to medium high heat.
  • Prepare the salmon and asparagus by drizzling with olive oil, and sprinkling with salt and pepper. Be sure to brush the olive oil evenly to cover the entire surface of the salmon.
  • Place the salmon on the grill, skin side up. Add the asparagus to the grill. Cook 6-8 minutes, then carefully flip the salmon using a thin spatula. Rotate the asparagus to ensure that it cooks evenly. Cook the salmon for an additional 5-6 minutes with the skin side down, then remove the salmon and asparagus from the grill.
  • To make the lemon garlic butter, whisk together the melted butter, lemon zest, lemon juice, and garlic powder. Pour the butter over the cooked salmon and asparagus, and sprinkle with fresh parsley. Serve immediately.

3 canned chipotle chiles in adobo
1 clove garlic, crushed
1/2 cup tamarind concentrate
1/2 cup packed dark brown sugar
Kosher salt, plus more as needed
2 tablespoons sherry vinegar
1 tablespoon extra-virgin olive oil, plus more for grilling
4 six-ounce center-cut boneless salmon filets

Steps:

  • 1. Chop chipotles and garlic in a food processor. Add tamarind, brown sugar, and salt and puree. Add vinegar, 2 tablespoons water, and oil, and puree until smooth. Pour about 1/4 cup of glaze into a small bowl. Reserve remaining glaze for serving.
  • 2. Preheat a grill to medium.
  • 3. Brush salmon filets with oil and season with 1 tablespoon salt, to taste. Place fillets, top-side (rounded side) down, on grill. Cook until distinct grill marks appear, about 4 minutes. I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.
