I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

1 pound ground lamb
3 green onions, minced
4 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin

Steps:

  • Preheat the grill for high heat.
  • In a bowl, mix the lamb, green onions, garlic, curry powder, cumin, red pepper, salt and pepper. Form into 4 patties.
  • Lightly oil grill grate. Grill patties 5 minutes on each side, or until done.

1 pound ground lamb
5 green chile peppers, diced
3 onions, peeled and chopped
1 tablespoon dark soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons ginger paste
2 tablespoons garlic paste
½ teaspoon ground white pepper
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon ground cloves
2 tablespoons chopped fresh cilantro
1 (17.5 ounce) package frozen puff pastry sheets, thawed
1 egg, beaten

Steps:

  • In a large pot, combine the ground lamb, onion, chilies, soy sauce and Worcestershire sauce. Season with ginger and garlic pastes, white pepper, cinnamon, cardamom and cloves. Cook, stirring occasionally, over medium heat until the meat is evenly browned and the onions are tender, about 15 minutes. Mix in cilantro, cover and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C). Lay sheets of puff pastry out on a lightly floured surface. Cut each one into 9 squares and roll out to 1/4 inch thickness. Spoon about 1 1/2 tablespoons of the meat mixture into the center of each square. Brush the edge with water, fold corner over to form a triangle, and press to seal. Do not overstuff the triangles, or they will burst in the oven. Place the patties onto a foil lined baking sheet leaving at least an inch between each one. Brush the tops lightly with beaten egg.
  • Bake for 12 to 15 minutes in the preheated oven, or until golden brown all over. Serve hot for best flavor.

Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

1 small head cauliflower (500g), broken into medium florets
150g baby spinach
1 tbsp rapeseed oil
1 red onion, sliced
120g halloumi, cut into cubes
1 garlic clove, crushed
1 thumb-sized piece ginger, finely grated
1 tsp ground turmeric
1 tbsp medium curry powder
2 x 250g pouches brown basmati rice
1 red chilli, finely sliced

Steps:

  • Bring a large pan of salted water to the boil and cook the cauliflower for 5 mins over a high heat, adding the spinach for the final 2 mins. Drain and set aside.
  • Heat the oil in a large frying pan or shallow casserole dish and fry the onion over a medium heat for 5 mins. Turn up the heat, add the halloumi, cook for a further 5 mins, then add the garlic, ginger, turmeric and curry powder, and cook for 1 min more. Stir through the rice, cauliflower and spinach to warm everything through, adding 1 tbsp water if it looks a little dry. Season and scatter over the chilli.

1/4 cup golden raisins
1 large head cauliflower, separated into 1-inch florets
1/4 cup olive oil
1 medium onion, finely diced
1/3 cup sliced skin-on almonds or shelled pistachios
2 tablespoons drained capers
2 small cloves garlic, thinly sliced
Zest of 1/2 lemon
Pinch red pepper flakes
Kosher salt
1/4 cup fresh parsley leaves, finely chopped

Steps:

  • Soak the raisins in warm water until plump, about 15 minutes. Drain and set aside.
  • Meanwhile, trim the cauliflower florets, cutting away as much stem as possible. In three batches, break up the florets into a food processor and pulse until the texture resembles that of couscous.
  • Heat the oil in a large skillet over medium-high heat. At the first wisp of smoke from the oil, add the onions, and stir to coat. Continue cooking the onions, stirring frequently, until the edges are golden brown and the onions have softened, about 6 minutes. Add the almonds, raisins, capers, garlic, lemon zest and red pepper flakes, and cook, stirring, until the almonds are golden, about 3 minutes.
  • Add the cauliflower to the skillet, and stir to combine. Add 1 teaspoon salt, and continue to cook, stirring frequently, until the cauliflower has softened, 3 to 5 minutes.
  • Spoon the cauliflower into a large serving bowl, garnish with parsley and season to taste with salt. Serve warm.

Nice with garlic rice, Kohlrabi & carrots. I made this again but BBQ'd the patties and added some hot sauc to the already tasty pattie after I flipped them - loved it and hope you will too

Algerians like their sausage spicy and with an exceptional array of seasonings. The version that follows can be considered medium hot, with pepper and chili providing the heat, while the garlic adds the aromatic richness.

2 lbs boneless lamb, cut into 2 inch pieces
4 ounces lamb, fat attached to the lamb kidney
2 heads garlic, about 12 cloves, peeled
1 teaspoon salt (to taste)
1 teaspoon black pepper
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon sumac
1 tablespoon red hot chili powder
2 tablespoons sweet paprika
1 cup cold water
1 small lamb intestine casing

Steps:

  • Grind the lamb, fat from the lamb kidney (do not add the kidney) and garlic with the medium size holes of the grinder, ¼ inch in diameter. Add all the remaining ingredients, including the water, but not the casing. Test the mixture at this stage by preparing a miniature patty and frying it in a teaspoon of oil in a skillet. Should it need salt, it can be added at this time.
  • Tie one end of the casing tightly to hold the filling. Fill the casing with the lamb mixture, twisting it around every 4 inches to make individual sausages.
  • The merguez can be eaten in various ways the next day. The simple method of cooking is to fry them in hot vegetable oil until brown and crisp. Very little oil is needed since the sausage contains lamb fat. Serve warm. Makes about 10 to 12 sausages.
  • NOTE: Algerians often prepare merguez with the cheaper cuts of lamb, especially the scraps left over from trimming the more expensive parts. You don't have to do this since the meaty leg of the lamb is an ideal cut that can be used.
  • Sumac is that rare Mediterranean and Middle East seasoning that was used at one time as a salt substitute. The dried reddish crushed powder has a lemon/salt flavor and is used in meat and chicken dishes. It adds an important flavor to Algerian merguez.

2 slices white bread, crumbs of
1 large egg white
1 teaspoon ground cumin (freshly roasted is best)
1 teaspoon ground coriander
1 tablespoon vegetable oil
1 lb lean ground lamb
1/4 cup channa dal (soaked for at least 3hrs)
6 cloves
1/2 teaspoon black peppercorns
1 cinnamon stick
4 bay leaves
4 cardamom pods, crushed
2 mace blades
1 medium onion, diced
6 medium garlic cloves, chopped
1 inch piece ginger, chopped
3 green chilies, halved
salt, to taste
1/2 cup cold water

Steps:

  • Heat a large pan and add all the ingredients listed for the patties.
  • At first, stir on high heat for 4-5 minutes, reduce to medium heat, and continue to cook about 30-40 minutes until the ground lamb is cooked.
  • Then, increase heat and let the meat dehydrate till totally dry and crumbly - you want to remove as much moisture as possible, while at the same time taking care to stir so that the lamb does not burn.
  • Let cool a bit, remove the whole spices if you like, and then add the breadcrumbs, ground coriander and cumin and egg white.
  • Blend in a food processor till fine.
  • Put into a bowl and chill for 2 hrs or overnight (if left in fridge overnight, allow to come to room temperature first).
  • Knead mixture for at least 5-7 minutes, as if you were working a dough - the more you do this the softer the patty will be.
  • Shape the patties into balls and flatten.
  • Heat oil on moderate setting, add cook patties on one side undisturbed for at least 3-4 minutes before flipping over, and continue to cook until it crisps up on the outside.
  • Sink your teeth inches.

Growing up, this is what my mom was famous for at church. No matter the occasion, she was always asked to bring a dish of almond rice. It has a bit more salt and fat to it than newer recipes. It would easily adapt to crock pot cooking or vegetarian requirements.

1/2 cup margarine
2 cups long grain white rice
3 1/2 cups hot water
4 bouillon cubes (beef or chicken)
1 cup slivered almonds
5 green onions, chopped
5 tablespoons soy sauce

Steps:

  • In a large skillet (mom used the electric skillet so it would stay warm at parties), melt 1 stick of margarine.
  • Add the rice and stir thoroughly.
  • Dissolve the bouillon into the hot water and add it to the rice.
  • Cover and cook for 20 to 30 minutes, until the water has been absorbed.
  • Turn the heat off and add almonds, green onions, and soy sauce.
  • Crock pot modification: Premelt the butter. Add butter and rice to crock pot, then stir to combine. Add bouillon and water. Cook -- 1.5 to 2 hours on hi and (I'm guessing) 4-6 hours on lo. I've checked on hi but please let me know what your times are. Finish recipe as above.
  • Brown rice modification: Same as normal, but add 1/2 cup more liquid. Times would be 50 minutes in a skillet. Add 30-60 minutes to crock pot times.
  • Modern version: Substitute 1 tablespoon olive oil and 1 tablespoon butter (or heart smart spread) for the margarine. Use brown rice. Use low sodium chicken or vegetable stock in place of the bouillon and water (organic optional). Use low sodium soy sauce. And -- it will still taste good. Cooking methods sure have changed!

Simple, easy, tasty way to improve the flavour and colour of a rice dish. This adds a little sweetness to a curry, and when you bite into the pomegranate seeds they just burst with flavour.

2 cups basmati rice
5 cups water
1 chicken stock cube
1 teaspoon salt
1/4 cup sliced almonds
1 pomegranate

Steps:

  • In a large pot melt the butter, add the rice, and stir to coat the rice with the butter. Do not fry the rice.
  • Add the water, stock cube and salt. Bring to the boil, reduce the heat to minimum, cover the pot and cook for 10 minutes, or until all of the water has been absorbed by the rice. Let the rice stand covered for 10 minutes.
  • In the mean time remove the seeds from the pomegranate.
  • Stir the almonds and pomegranate seeds into the rice and serve.

1 onion , chopped
1 tbsp ginger paste or grated fresh ginger

500g lamb mince
handful frozen peas
1 egg , beaten

Steps:

  • Heat 1 tbsp oil in a large frying pan, fry the onions with the ginger, garlic and spices for 5 mins until soft, then tip into a large bowl to cool.
  • Mix together the lamb, peas and egg with the onion and season with a little salt. Shape the mixture into 12 patties. You can freeze for up to one month at this stage, then defrost in the fridge. Alternatively, refrigerate up to 1 day in advance. Heat the remaining oil in the pan and fry the patties, 4 mins each side, or until cooked through.

Try these lamb steaks with a Moroccan flavour

100g basmati rice
½ stock cube or 1 tsp stock powder
4-6 lamb chops, depending on size, or 2 lamb leg steaks
1 tbsp olive oil
1 onion , chopped
1 garlic clove , chopped
1 tbsp pine nuts
1 tsp each ground cumin and coriander
4 dried apricots , chopped
chopped parsley or coriander
1 lemon , cut into wedges

Steps:

  • Put the rice in a pan with water to generously cover, and add the stock cube or powder. Bring to the boil, then simmer for 10-12 mins, until the rice is tender. Drain well.
  • Heat the grill and season the steaks or chops. Grill for 3-4 mins on each side until cooked to your liking.
  • Meanwhile, heat the oil in a pan, add the onion and fry gently for 5 mins until lightly coloured. Add the garlic and pine nuts, then fry until the nuts are lightly toasted. Stir in the spices, then add the apricots and rice and mix well, heating everything through. Stir through the parsley or coriander and serve with the steaks or chops, adding the lemon wedges for squeezing over.
