Garlic Lime Skillet Chicken Recipe: An easy dinner for any night of the week. Fresh simple ingredients and creamy sauce! Spice it up as much as you like!

4 boneless skinless chicken breasts (average-sized )
1 tablespoon olive oil
1/4 cup diced onions
3 cloves garlic (minced)
1/2 jalapeno pepper (grated (optional))
1 cup chicken broth
1 lime (zested and juiced)
1/4 cup chopped cilantro
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper
1/3 cup heavy cream
Salt and pepper

Steps:

  • Heat a large skillet with 1 tablespoon olive oil to medium heat. Season the chicken breasts with salt and pepper on both sides. Once the skillet is hot, add the chicken breasts. Sear the chicken for approximately 5 minutes per side. Then remove from the skillet.
  • Add the onions, garlic, and grated jalapeno to the skillet. Saute for 2-3 minutes to soften. Then add the chicken broth, 1 tablespoon of lime juice, 1 teaspoon lime zest, chopped cilantro, paprika, and crushed red pepper.
  • Stir the mixture, then add the chicken breasts back to the skillet. Simmer the chicken in the sauce for 7-8 minutes, turning the chicken once or twice in this process. Then stir in the cream and salt and pepper to taste. Simmer another 1-2 minutes, then serve warm.

1/3 cup soy sauce
1/4 cup fresh lime juice
1 tablespoon Worcestershire sauce
1/2 teaspoon ground mustard
2 garlic cloves, minced
6 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon pepper

Steps:

  • In a shallow dish, combine the first 5 ingredients; add chicken and turn to coat. Cover and refrigerate at least 30 minutes. , Drain; discard marinade. Sprinkle chicken with pepper. Grill, covered, over medium heat until a thermometer reads 165°, 7-8 minutes on each side.

4 chicken breasts
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
2 tablespoons margarine
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice

Steps:

  • Mix salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley.
  • Sprinkle spice mixture generously on both sides of chicken breasts.
  • Heat butter and olive oil in a large heavy skillet over medium heat.
  • Saute chicken until golden brown, about 6 minutes on each side.
  • Sprinkle with 2 teaspoons garlic powder and lime juice.
  • Cook 5-10 minutes, stirring frequently to coat evenly with sauce.

This was an 'on-the-fly' recipe I came up with while trying to avoid the same-old chicken dinner. If you prefer more heat, leave the seeds and ribs of the jalapeno in before pureeing.

1 jalapeno pepper
4 cloves garlic
1 shallot
3 tablespoons olive oil, divided
salt and ground black pepper to taste
½ teaspoon dried parsley
½ teaspoon dried thyme
6 skinless, boneless chicken thighs
½ cup white wine
1 lime, juiced
1 tablespoon honey, or more to taste
½ cup chicken broth

Steps:

  • Puree jalapeno pepper, garlic, shallot, and 1 tablespoon olive oil, salt, and black pepper in a food processor. Add parsley and thyme; process again to integrate.
  • Rub the jalapeno pepper mixture evenly onto the chicken thighs, place onto a platter and cover with plastic wrap; marinate in refrigerator at least 1 hour, up to 24 hours.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons olive oil in an oven-safe skillet over medium-low heat. Cook chicken thighs in hot oil until golden brown, about 5 minutes per side. Transfer chicken to a platter, retaining drippings in the skillet.
  • Reduce heat under the skillet to low. Pour wine into the pan; bring to a boil while scraping the browned bits of food from the bottom of the pan with a flat-edged wooden spoon. Stir lime juice and honey into the wine; bring to a simmer and cook until the volume of the liquid reduces slightly, about 5 minutes. Return chicken to the skillet. Pour broth over the chicken.
  • Transfer skillet to preheated oven and bake until the sauce has thickened and the chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

A low fat chicken dish with plenty of spice

150ml pot natural yogurt
1 tbsp vegetable oil
1 tsp medium curry powder or paste
pinch chilli powder
juice 1 lime
1 garlic clove , crushed
4 skinless boneless chicken breasts
1 red or green pepper , deseeded and cut into large chunks
1 onion , halved and cut into large chunks
steamed rice and ready-made raita, to serve

Steps:

  • In a large bowl, mix together the first 6 ingredients and season to taste. Slash the chicken breasts 5-6 times, without cutting all the way through. Add the chicken breasts and vegetables to the yogurt mix and stir to coat everything completely. Cover and leave the flavours to mingle for 10 mins.
  • Place a griddle over a high heat and cook the chicken and vegetables for 4 mins each side until the chicken is cooked through and the grill lines are golden. Leave to rest for 2 mins before serving with steamed rice and raita.
