TURKEY-PESTO MEATBALL SOUP



Turkey-Pesto Meatball Soup image

Enjoy an Italian-style soup with pesto-infused meatballs, basil, garlic and escarole, topped with Parmigiano-Reggiano and freshly cracked pepper. To make prep work even easier, the meatball mixture can be made ahead and refrigerated for up to one day.

12 ounces ground turkey (preferably dark meat)
3 tablespoons Pesto, plus more for serving
6 tablespoons panko breadcrumbs
1 lightly whisked egg
3 tablespoons grated Parmigiano-Reggiano, plus more for serving
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground pepper, plus more for serving
1 smashed and peeled garlic clove
4 cups low-sodium chicken broth
2 sprigs fresh basil
1 cup chopped escarole

Steps:

  • In a large bowl, mix together ground turkey (preferably dark meat), pesto, panko breadcrumbs, lightly whisked egg, grated Parmigiano-Reggiano, kosher salt, and freshly ground pepper with a fork until just combined. Cover with plastic wrap; refrigerate.
  • Heat smashed and peeled garlic clove in a saucepan over medium-high until fragrant, about 30 seconds; add low-sodium chicken broth and fresh basil. Bring to a boil, then reduce heat to medium and simmer, partially covered, 10 minutes. Form turkey mixture into tablespoon-size balls. Remove basil and garlic from liquid; gently drop in meatballs. Remove from heat; let stand, covered, until meatballs are cooked through, about 8 minutes. Stir in chopped escarole. Serve immediately with more Parmigiano-Reggiano and pepper, and drizzled with more pesto.

1/3 cup fresh ricotta cheese
1 large egg
Coarse salt and freshly ground pepper
1 cup plus 2 tablespoons all-purpose flour
2 tablespoons chopped mint
Olive oil

Steps:

  • In a large bowl, mix together ricotta and eggs; season with salt and pepper. Gradually sift in 3/4 cup flour. Add mint and knead mixture until a dough forms. Turn dough out onto work surface and knead a few more times until smooth; form dough into a ball, cover with plastic wrap, and let stand 30 minutes.
  • Sprinkle work surface with remaining 2 tablespoons flour. Turn dough out onto floured work surface and knead flour into dough. Roll out dough until it is 1/4 inch thick. Using a sharp knife, cut dough into 1-inch-wide strips. Run dough through a cavatelli maker or cut each strip into 1-by-1/2-inch pieces.
  • Bring a large pot of water to a boil. Generously salt boiling water and return to a boil. Add cavatelli to boiling water and cook until tender and floats to the surface, about 1 1/2 minutes. Drain and transfer cavatelli to a baking sheet. Drizzle with olive oil and let cool.

Old-school Swedish meatballs get a Korean twist, courtesy of gochujang, a spicy, subtly sweet fermented chili paste.

2 tablespoons minced garlic (from about 6 cloves)
2 tablespoons minced ginger (from a 2-inch piece)
5 tablespoons gochujang paste (available at Asian markets and walmart.com)
1 pound ground chuck (80 percent lean)
1 pound ground pork
1 large egg
Kosher salt
1/4 cup safflower oil
3/4 cup ketchup
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
1 tablespoon packed light-brown sugar
Thinly sliced scallions and toasted sesame seeds, for serving

Steps:

  • In a large bowl, use your hands to gently combine garlic, ginger, 3 tablespoons gochujang, beef, pork, egg, and 1 tablespoon salt just until evenly combined (do not overwork, or meatballs will be dense and tough). Scoop 1 tablespoon of mixture into your palm; gently roll into a ball and transfer to a baking sheet. Repeat with remaining mixture. Meatballs can be formed, loosely covered, and refrigerated on sheet up to 1 day.
  • Heat a large skillet over medium-high. Swirl in 2 tablespoons safflower oil. Add halfof meatballs in a single layer and cook, turning a few times, until browned in places and a crust forms, 5 to 7 minutes. Transfer to a plate. Wipe out skillet with a paper towel and brown remaining meatballs in remaining safflower oil.
  • Wipe skillet clean. Combine ketchup, remaining 2 tablespoons gochujang, vinegar, sesame oil, 1/2 cup water, and brown sugar in skillet; bring to a simmer over medium. Carefully add meatballs. Simmer, stirring occasionally, until sauce thickens slightly and meatballs are just cooked through and evenly coated, 6 to 8 minutes. Transfer to a shallow bowl, sprinkle with scallions and sesame seeds, and serve warm, with toothpicks.

  • Preheat the oven to 425 degrees. Heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the onion and 1 clove of the garlic. Cook, stirring, until translucent, about 5 minutes; remove from the heat and let cool in the refrigerator. Place the ground duck in a bowl, add the cooled onion and garlic mixture, plus the basil, chile sauce, egg yolk, and panko and mix well. Form the meat into 1 ½- to 2- inch balls. Place the meatballs on a baking sheet and precook in the oven for 10 minutes. The meatballs will not be fully cooked through at this point.
  • Heat 1 teaspoon of olive oil in a large saucepan over medium heat. Add the remaining garlic, 1 shallot, and plum tomatoes. Cook, stirring occasionally, for 2 minutes. Add the wine and cook until the liquid is reduced by 1/2, about 4 minutes. Add the duck stock and thyme and let it simmer for 20 minutes. Strain the liquid through a fine mesh strainer and set over another large saucepan, discarding the solids. Place the meatballs in the liquid and simmer over medium heat, until cooked through, about 30 minutes.
  • Heat the remaining teaspoon of olive oil in a large skillet over medium heat. Add the remaining 2 shallots and cook, stirring occasionally, until translucent, about 2 minutes. Add the meatballs, cavatelli, mint, cooking liquid, and butter; let cook for 2 minutes.
