SPICY CHOPPED BROCCOLI

Anchovies and red-pepper flakes add a spicy twist to this broccoli side dish.

1 head broccoli (1 1/4 pounds), stem trimmed and peeled
2 tablespoons olive oil
2 well-rinsed anchovies (or 2 teaspoons anchovy paste)
1/8 to 1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper

Steps:

  • Starting with flower end of broccoli, cut crosswise into 1/2-inch pieces.
  • Heat oil in a large skillet over medium-low heat. Add anchovies and red-pepper flakes. Cook, mashing anchovies with a wooden spoon, about 1 minute.
  • Raise heat to medium. Add broccoli; season with salt and ground pepper. Cook, stirring often, until broccoli is crisp-tender, about 2 minutes. Add 1/2 cup water. Simmer, covered, until broccoli is tender, 4 to 5 minutes more.

  • Cook 1 bunch chopped broccoli rabe in boiling salted water until tender, 2 to 3 minutes; drain. Toast 1/4 cup chopped salted peanuts, 2 tablespoons unsweetened coconut flakes and 1/4 teaspoon red pepper flakes in 3 tablespoons vegetable oil in a large skillet, 1 to 2 minutes. Add the broccoli rabe and 2 sliced garlic cloves; toss. Season with salt.

SPICY SAUTEED BROCCOLI

1 large bunch broccoli, about 1 1/2 pounds
2 tablespoons extra-virgin olive oil
2 cloves garlic, chopped
Kosher salt
Freshly ground black pepper
1/2 cup chicken stock
1 teaspoon hot chili sauce, (recommended: sriracha) or to taste

Steps:

  • Put a pot of water on to boil. Prepare a large bowl of ice water.
  • Cut the broccoli into florets. When the water is boiling, add the broccoli. Cook for 30 seconds. Immediately drain and add them to the bowl of ice water. When cool, drain well.
  • In a large skillet over medium heat, add the olive oil. When it is warm, add the garlic and cook for 1 minute until toasted, do not let it burn. Add the broccoli, toss to coat with the oil and garlic, and season with salt and pepper, to taste. Add the chicken stock and hot chili sauce, raise the heat to high, and cook until the broccoli is just tender, about 2 minutes. Serve immediately with grilled shrimp, if using.

  • Cut 1 bunch broccoli into florets; peel and slice the stems. Put in a steamer basket over boiling water; cover and cook 5 minutes. Transfer to a bowl and toss with 1 teaspoon sesame oil and 1 tablespoon sesame seeds. Whisk 1/2 cup mayonnaise, 1 tablespoon each Sriracha and lemon juice, and salt. Drizzle on top.

  • Simmer broccoli covered in 1 inch of water for 5 to 7 minutes, until tender. Drain broccoli and return skillet to heat. Heat skillet over high heat. Add oil, crushed pepper and garlic. Turn broccoli in hot spicy oil and season with salt. Transfer to a serving dish.
