2 cups cubed cooked chicken breast
1 large cucumber, quartered, seeded and sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1 medium tomato, seeded and chopped
1 small sweet red pepper, chopped
1/2 cup cubed cheddar cheese
1/4 cup chopped red onion
DRESSING:
1/2 cup ranch salad dressing
1/4 cup mayonnaise
1 tablespoon Italian salad dressing
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 pita pocket halves

Steps:

  • In a large bowl, combine the first 7 ingredients. In a small bowl, combine the ranch dressing, mayonnaise, Italian dressing, garlic powder and pepper; pour over chicken mixture and toss to coat. Fill each pita half with a scant 1/2 cup chicken mixture.

Why heat up the kitchen on warm Indian summer evenings when you can take dinner in hand with these hearty chicken pitas from Lynne Ziegler in Odenton, Maryland? LYNNE'S TIP: I also roll up the chicken strips in flour tortillas and serve as grab-and-go wrap sandwiches. Serve any leftover chicken with mixed greens and the last of the garden tomatoes in lunch salads the next day.

3 tablespoons mayonnaise
3 tablespoons honey
3 tablespoons spicy brown mustard
1/4 teaspoon salt-free garlic seasoning blend
2 boneless skinless chicken breast halves (5 ounces each)
2 whole pita breads
1/2 cup shredded lettuce
2 bacon strips, cooked and crumbled
2 slices Swiss cheese

Steps:

  • In a small bowl, combine the mayonnaise, honey, mustard and seasoning blend; set aside 3 tablespoons. Pour remaining mixture in a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Refrigerate reserved mayonnaise mixture until serving., Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°. Cut chicken into 1-in. strips., Spread reserved mayonnaise mixture over pita breads; top with the lettuce, chicken, bacon and cheese.

1 tablespoon whole Sichuan peppercorns
1 teaspoon fennel seeds
6 whole cloves
2 to 3 whole dried red chiles, about 2 inches long, such as Sichuan or Arbol
2 whole star anise
4 boneless, skinless chicken thighs, thinly sliced
2 tablespoons light soy sauce
1 teaspoon dark soy sauce
1 tablespoon cornstarch
2 tablespoons peanut oil
2 teaspoons mirin (Japanese sweet rice cooking wine)
4 whole-wheat pitas, split
Spicy Hoisin Mayo, for serving, recipe follows
8 slices beefsteak tomatoes, for serving
Quick-Pickled Cucumber slices, for serving, recipe follows, or jarred sweet pickle slices
4 green-leaf lettuce leaves, for serving
1 tablespoon chili sauce, such as Sriracha
1 tablespoon jarred hoisin sauce
1 tablespoon Kewpie Japanese sweet mayonnaise or plain mayonnaise
Pinch sugar
1/2 English cucumber or 2 small Kirby cucumbers, sliced
2 tablespoons mirin (Japanese sweet rice cooking wine)
2 tablespoons clear rice vinegar
1/2 teaspoon sea salt

Steps:

  • Stir together the chili sauce, hoisin and mayonnaise in a bowl.
  • For the spice mixture: Heat a wok over medium-high heat. Add the peppercorns, fennel seeds, cloves, chiles and star anise and toast, tossing constantly until fragrant, about 30 seconds. Transfer to a mortar and pestle and grind until fine or pulse in an electric spice grinder. Transfer to a bowl to cool. Reserve 1 heaping teaspoon and transfer the remaining spice mixture to a jar for another use.
  • Put the chicken in a medium bowl, sprinkle with the light and dark soy sauces and toss well to coat. Sprinkle the cornstarch and reserved spice mixture over the chicken, toss well and set aside for 5 minutes while you prepare the garnishes and sauce.
  • Heat the wok over high heat until smoking, and then add the oil. Pour the chicken into the wok in a single layer and let it settle and begin to brown before stirring. Stir-fry using a spatula until just cooked through, about 4 minutes. Pour in the mirin and toss until the liquid evaporates. Remove from the heat.
  • To assemble, spread the Spicy Hoisin Mayo evenly over the top and bottom pita halves. Divide the warm chicken among the pitas and top each with a slice of tomato, some pickled cucumbers and a lettuce leaf. Position the top pita in place and serve immediately. Alternatively, you can create pita pockets by slicing off the top third of each pita, pulling them apart, and stuffing them with the chicken, Spicy Hoisin Mayo and vegetables.
  • Put the cucumber slices in a nonreactive bowl. Sprinkle the mirin, rice vinegar, salt, and sugar over them and toss to combine. Let stand for at least 10 minutes at room temperature before serving, or refrigerate for up to 3 days.

Steps:

  • In a small mixing bowl, add the tomatoes, onions and parsley and dress with lemon juice, olive oil, ground coriander, ground cumin and crushed pepper flakes. Toss to coat all over. Chill in the refrigerator until serving.
  • In a small mixing bowl, combine the cumin, paprika, oregano, coriander, pepper flakes and salt.
  • Rub seasoning over both sides of the chicken.
  • On a grill pan over medium heat, heat some oil and cook the chicken for 4-7 minutes on each side until a thermometer reads 165°.
  • Once cooked, transfer the chicken breasts to a plate and let stand for 5 minutes, then slice.
  • Serve sliced chicken with relish inside pita halves.

1 1/2 pounds boneless, skinless chicken thighs, trimmed
4 pitas
1 cup full-fat or low-fat plain yogurt
1 tablespoon plus 1 teaspoon tahini
1/4 teaspoon grated garlic
1/4 teaspoon finely grated lemon zest
4 tablespoons fresh lemon juice, divided
2 tablespoons coarsely chopped dill, plus more for serving
2 tablespoons coarsely chopped mint, plus more for serving
1/2 large English hothouse cucumber, halved lengthwise, cut into 1/4"-thick half-moons (about 1 cup)
2 cups shredded romaine lettuce
3/4 cup small cherry or grape tomatoes, halved (about 5 ounces)
1/3 cup thinly sliced red onion

Steps:

  • Preheat oven to 425°F. Combine cumin, coriander, paprika, cayenne, cinnamon, 2 Tbsp. oil, 3/4 tsp. salt, and 1/4 tsp. pepper in a large bowl. Add chicken and toss to coat. Spread on a rimmed baking sheet and roast until an instant-read thermometer inserted into the thickest part of thigh registers 165°F, 12-15 minutes; wrap pitas in foil and warm in oven during the last 5 minutes of cooking.
  • Meanwhile, mix yogurt, tahini, garlic, lemon zest, 2 Tbsp. lemon juice, 1/2 tsp. salt, and 1/4 tsp. pepper in a medium bowl until incorporated. Fold in 2 Tbsp. dill and 2 Tbsp. mint.
  • Toss cucumber, lettuce, tomatoes, onion, remaining 2 Tbsp. lemon juice, 2 Tbsp. oil, 1/4 tsp. salt, and 1/4 tsp. pepper in another medium bowl.
  • Thinly slice chicken. Place 1 warmed pita on each plate and top evenly with chicken and tomato-cucumber salad. Drizzle each pita with 2 Tbsp. tahini-yogurt sauce; top with dill and mint. Serve remaining tahini-yogurt sauce alongside.
