Caribbean Black Beans with Rice image

4 1/2 cups water
1 1/2 cups dried black beans*
2 teaspoons vegetable oil
1 medium papaya, peeled, seeded and diced (about 1 1/2 cups)
1 medium red bell pepper, finely chopped (1 cup)
1/2 cup finely chopped red onion (about 1/2 medium)
1/2 cup orange juice
1/4 cup lime juice
2 tablespoons chopped fresh cilantro
1/2 teaspoon ground red pepper (cayenne)
2 cloves garlic, finely chopped
5 cups hot cooked rice

Steps:

  • In 2-quart saucepan, heat water and beans to boiling. Boil uncovered 2 minutes; reduce heat. Cover and simmer about 45 minutes, stirring occasionally, until beans are tender; drain.
  • In 10-inch skillet, heat oil over medium heat. Cook remaining ingredients except rice in oil about 5 minutes, stirring occasionally, until bell pepper is crisp-tender. Stir in beans. Cook about 5 minutes or until hot. Serve with rice.

2 cups uncooked regular long-grain white rice
4 cups water
2 tablespoons vegetable oil
1 tablespoon finely chopped garlic (3 to 4 medium cloves)
3 teaspoons dried oregano leaves
1 teaspoon crushed red pepper flakes
2 cans (15 oz each) Progresso™ black beans, undrained
1/4 cup diced red bell pepper

Steps:

  • Cook rice in water as directed on package.
  • Meanwhile, in large saucepan, heat oil over medium heat. Add garlic, oregano and red pepper flakes; cook 1 to 2 minutes, stirring frequently.
  • Stir in beans; heat to boiling. Reduce heat; simmer uncovered 10 minutes, stirring occasionally, to blend flavors. Serve over rice; sprinkle with bell pepper.

I love beans and rice --the carb lover coming out in me. Good as a main dish or side dish. This is a good one adapted from Cooking Light. Serving size: 1 3/4 c., 325 calories, 2.3 g fat, 62.2 g carb, 0 mg cholesterol.

1 teaspoon olive oil
1 1/4 cups diced onions
3/4 cup finely chopped carrot
1 tablespoon bottled minced garlic (this is not a mistake)
2 cups cooked rice
2 tablespoons dry sherry
1 tablespoon balsamic vinegar
1 teaspoon dried thyme
1/2 teaspoon black pepper (to taste)
salt (to taste)
2 (15 ounce) cans black beans, rinsed and drained
2 bay leaves

Steps:

  • Heat the oil in a big saucepan over medium heat.
  • Add the onion, carrot, and garlic; saute/stir for 10 minutes.
  • Add in the rice and the rest of the ingredients; cover, reduce heat and simmer 5 minutes or until thoroughly heated.
  • Discard the bay leaves.

Instead of Mexican-style stewed tomatoes, I used garden fresh tomatoes and hot peppers. I also threw in some hominy just for fun and used red beans because I didn't have black beans. 1/2 cup onion, chopped (1 medium)
4 garlic cloves, minced
2 tablespoons olive oil or 2 tablespoons cooking oil
15 ounces black beans, rinsed and drained
14 1/2 ounces Mexican-style stewed tomatoes, undrained
1/2 cup salsa
1/4 teaspoon salt
1/8-1/4 teaspoon cayenne pepper
2 cups brown rice (hot, cooked) or 2 cups long grain rice (hot, cooked)
1/2 cup cheddar cheese, monterey jack cheese (shredded) or 1/2 cup mexican cheese, blend (shredded)
1/4 cup onion, chopped

Steps:

  • In a medium saucepan cook the 1/2 cup onion and garlic in hot oil until tender but not brown.
  • Carefully stir in beans, undrained tomatoes, salsa, salt, and cayenne pepper.
  • Bring to boiling and reduce heat.
  • Simmer, uncovered, for 15 minutes.
  • To serve, mound rice on serving plates. Make a well in each mound.
  • Spoon the black bean mixture into wells.
  • If desired, sprinkle with shredded cheese and the 1/4 c chopped onion.

1 1/2 medium sweet onions, chopped
3 garlic cloves, chopped fine
2 tablespoons olive oil
1 tablespoon fresh grated gingerroot
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
4 1/2 cups drained cooked black beans or 3 (16 ounce) cans black beans
3/4 cup orange juice
salt & freshly ground black pepper

Steps:

  • Sauté the onions and garlic in olive oil until barely soft.
  • Add the spices and sauté until very soft.
  • Stir in the beans and orange juice and sauté for about 15 minutes, stirring occasionally to prevent burning.
  • Mash a few of the beans with a fork or the back of a spoon. Add salt and pepper to taste.
  • Adjust the consistency to your liking by adding orange juice or mashing more beans. You can also blend the beans with additional orange juice to make an excellent bean dip!

Spicy Black Beans and Rice image

I like to use 3 differently colored bell peppers if I can, then I tell my youngest that we are having rainbow beans. I start the rice in my rice cooker before I start chopping veggies. They are a good way to use up those veggies in your fridge that need using! I like to chop enough veggies for several batches, then freeze them for future use.

1 onion, diced
3 bell peppers, diced
2 carrots, peeled and diced
2 celery ribs, diced
3 -4 garlic cloves, minced
2 (15 ounce) cans black beans, undrained (or about 3 cups of cooked beans from dry)
salt
pepper
cumin
dried chipotle powder
hot cooked rice

Steps:

  • Saute onions, peppers, carrots and celery in a little oil until soft.
  • Add garlic and cook until the garlic is soft, then stir in the spices and cook for a couple more minutes.
  • Stir in the beans and simmer for about 15 minutes.
  • Serve over rice.
  • My kids like shredded cheddar on top. My husband and I like to add tabasco and cheese.
