BAT WINGS WITH BOG DIP AND SINKING HANDS



Bat Wings with Bog Dip and Sinking Hands image

Cooking spray
1/2 cup reduced-sodium soy sauce
2 teaspoons brown sugar
2 teaspoons finely grated fresh ginger
3 cloves garlic, minced
1 1/2 teaspoons five-spice powder
1 teaspoon hot sauce, or more, to taste
Salt and freshly ground black pepper
20 chicken wings
4 boneless skinless chicken breast halves (about 5 ounces each)
1 (11-ounce) package refrigerated breadstick dough
1 egg white
Sliced almonds
1 tablespoon grated Parmesan
1 cup sour cream
3 tablespoons freshly chopped parsley leaves
2 tablespoons coarse ground mustard

Steps:

  • Preheat oven to 450 degrees F. Coat 2 large baking sheets with cooking spray.
  • In a shallow dish or plastic bag, combine soy sauce, sugar, ginger, garlic, five-spice powder, hot sauce, salt and black pepper, to taste. Mix well. Add chicken wings and chicken breasts and turn to coat (at this point, you may refrigerate up to 24 hours).
  • Transfer chicken wings and breasts to baking sheets and brush with marinade. Bake 25 to 30 minutes, until chicken is cooked through.
  • To make the "hands", reduce oven temperature to 375 degrees F. Coat a large baking sheet with cooking spray.
  • Unroll dough and separate into 12 breadsticks. Roll into 4-inch long "fingers" and place on baking sheet. Brush egg white all over breadsticks and place almond slice on 1 end, making a fingernail. Sprinkle Parmesan over rest of breadstick. Bake 10 to 12 minutes, until golden brown.
  • To make the dip, in a medium bowl, combine sour cream, parsley and mustard. Mix well. Place dip in a serving bowl and insert fingers. Serve the wings with the dip and "hands" and reserve the chicken breasts for the salad.

This savory Halloween appetizer will drive your guests absolutely batty. Coat roasted chicken wings in a combination of honey mustard and hot sauce for a fiery bite.

3 pounds chicken wings (about 16 pieces), rinsed and patted dry
Honey Mustard Sauce
Hot Sauce for Bat Wings

Steps:

  • Preheat broiler. Lay wings on a rimmed baking sheet, wingtips down. Place under broiler, 5 1/2 to 6 inches from heat source. Broil until golden brown and cooked through, rotating pan as necessary, 35 to 40 minutes.
  • Using tongs, remove wings to a large bowl. Drain fat from baking sheet into heat resistant bowl, and discard.
  • Toss wings with sauce. Return to baking sheet, wingtips down. Reserve bowl with remaining sauce. Place wings under broiler, and cook until sauce has glazed, 2 to 3 minutes, rotating pan once.
  • Return wings to bowl, and toss to coat. Serve immediately.

Here's one more way to love pasta: as a crispy snack. Serve it up golden fried with a smooth and creamy sauce for dipping.

Vegetable oil, for frying
Kosher salt and freshly ground black pepper
One 12-ounce box tri-color bow-tie pasta
1/2 cup heavy cream
4 ounces cream cheese, at room temperature
1/4 cup grated Parmesan, plus more for sprinkling
Pinch grated nutmeg

Steps:

  • Line a baking sheet with a clean dish towel. Fill a large saucepan fitted with a deep-frying thermometer with 2 inches of oil and bring to 375 degrees F over medium-high heat. Meanwhile, bring a large pot of generously salted water to a boil. Cook the pasta according to package directions for al dente. Drain the pasta and spread it out onto the prepared baking sheet. Pat completely dry with another clean dish towel.
  • Meanwhile, mix the heavy cream, cream cheese, Parmesan, nutmeg, 1/2 teaspoon salt and a generous amount of black pepper in a medium microwave-safe bowl until smooth. Microwave until the Parmesan has melted, about 45 seconds. Stir until smooth and refrigerate until cold, about 30 minutes.
  • Line another baking sheet with paper towels. Fry the pasta in the oil, 1 cup at a time, stirring, until golden brown and crispy, 2 to 3 minutes. Remove to the prepared baking sheet and sprinkle with salt, pepper and Parmesan. Carefully break apart any pieces that have stuck together. Repeat with the remaining pasta, bringing the oil back to 375 degrees F between each batch. Serve with the Alfredo dip.

4 cups canola oil
2 1/2 cups baking mix (recommended: Bisquick)
1 1/2 cups cornmeal
1/3 cup sugar
3 eggs
1 cup milk
1 cup frozen corn, defrosted
2 teaspoons chopped fresh thyme leaves
1 teaspoon paprika
6 strips cooked bacon, chopped
6 tablespoons melted butter
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup buttermilk
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon grated onion
1 small jalapeno, veins and seeds removed, minced
Salt and freshly ground black pepper

Steps:

  • For the Fritters: Heat a large pot or deep-fryer with the canola oil to 350 degrees F.
  • In a large bowl, combine the baking mix, cornmeal, and sugar. Beat in the eggs and milk until well incorporated. Mix in the corn, thyme, paprika, bacon, melted butter, and salt and pepper.
  • Carefully drop the fritter batter in hot oil, 1 heaping tablespoon at a time. Fry in batches of 8 to 10 making sure not to overcrowd the pot. Fry until brown and crispy, about 3 to 4 minutes. Remove the fritters to a paper towel lined plate to drain. Transfer to a serving platter and serve with a side of Spicy Buttermilk Dip.
  • For the Dip: Add all of the dip ingredients to a serving bowl and mix together until well blended.

HOT AND STICKY WINGS

3 pounds chicken wings
1/4 cup ketchup
1 (18-ounce) jar apricot-pineapple preserves (recommended: Smuckers)
2 tablespoons citrus herb seasoning
2 tablespoon dried oregano
1 tablespoon chili seasoning
1 jalapeno, finely diced

Steps:

  • Light broiler. Line a baking sheet with aluminum foil; set aside. Rinse wings with cold water and pat dry with paper towels. Place wings on baking sheet skin-side up. Broil wings for 8 to 10 minutes while preparing sauce. NOTE: this step can be omitted, but produces a better tasting wing.
  • Place wings in the crock of 4 quart slow cooker. In a bowl, stir to combine remaining ingredients. Pour over wings and stir to coat. Place lid on slow cooker and cook on high setting for 2 1/2 to 3 1/2 hours.
