SPICY CHILI FRENCH FRIES

These spicy baked fries are very easy to make, and a great way to kick up your burger platter.

4 large russet potatoes, peeled and cut into 1/4 inch thick fries
¼ cup vegetable oil
¼ cup tomato-vegetable juice cocktail
1 tablespoon chili powder
1 teaspoon ground cumin
2 teaspoons dried onion granules
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon white sugar
1 tablespoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
  • Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
  • Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.
  • Bake fries in preheated oven for 20 minutes. Turn and continue to bake until browned and crispy, about 20 additional minutes.

Cheez-It Grooves Hot and Spicy cheddar crackers are crushed and combined with Panko bread crumbs and Parmesan cheese to make delicious, crispy and spicy baked French fries.

4 medium Idaho potatoes, peeled and cut into 1/2 inch thick matchsticks
2 cups Cheese-It Grooves Hot & Spicy crackers
1/2 cup panko bread crumbs
2 Tablespoons Parmesan cheese
1 Tablespoon dried parsley
1/3 cup egg whites , I use container egg whites
olive oil spray

Steps:

  • Preheat oven to 425 degrees. Prepare a large baking sheet with a wired rack and spray with olive oil cooking spray.
  • In a large bowl, add the cut matchstick potatoes and cover with cold water. Soak the potatoes for at least 10 minutes and up to 30 minutes to absorb the starch from the matchstick potatoes.
  • While the potatoes soak, in a large plastic zipper seal bag, place the Cheez-It Grooves Hot & Spicy crackers. Lay the plastic bag on the counter. Use a rolling pin to crush the crackers into a fine crumble.
  • Transfer the crumbled Cheez-It Groove crackers to a shallow bowl, add the Panko bread crumbs, Parmesan Cheese, and dried parsley. Combine the flavors.
  • In a separate bowl, add the egg whites.
  • Drain and dry the potatoes on a paper towel.
  • Coat the matchstick potatoes in the egg whites and then into the Cheez-It Grooves crumble. Place crumble coated potatoes onto the prepared baking rack. Continue until all the matchstick potatoes are coated with the Cheez-It crumble. Spray the matchstick potatoes with the olive oil cooking spray.
  • Place the baking sheet into heated oven. Check the French fries after 20 minutes. They should be crispy and should not need more than 30 minutes in oven, depending how thick you cut your matchsticks.
  • Serve immediately. Delicious with low-fat ranch dressing

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

6 Yukon Gold potatoes, cut into thick fries
1 tablespoon white sugar
¼ cup extra-virgin olive oil
1 teaspoon garlic powder, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
  • Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
  • Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

Add 1 minced garlic clove and cook 2 more minutes. Remove from the heat and add 3 chopped scallions and 2 tablespoons chopped parsley. Add the fries and toss to coat.

1 teaspoon onion powder

1 large baking potato
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder

Steps:

  • 1. Preheat oven to 400*F. and turn at least once during the baking.
  • 2. Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil/spice mixture and place on a baking sheet and they need to be turned 1/2 way through baking.
  • 3. Bake for 30-45 minutes in preheated oven. Cooking time and temperature will vary greatly on how thick you cut the wedges.
  • My Note: Update: bake at 450*F., for 40-45 minutes, and turn at least once during the baking. If you use the 450*F. in the recipe, the fries will burn. I mixed everything in a gallon size ziploc bag. For the spices, I used freshly minced garlic (no onion powder), paprika, cumin, cayenne pepper, and chili powder. I used 6 potatoes (4 russet, 2 sweet) and 1/3 cup oil. I have cut the potatoes into sticks like normal fries and then baked them for 15 minutes, turned them over, and baked for another 15 minutes (the whole time at 425 since they're thinner than wedges), and I must say these are the tastiest fries ever! I also added salt and freshly ground pepper and garlic salt, and didn't measure it out- just kinda put on as much as looked good, and wow, were they tasty! I think the chili powder was what really put them over the top, so don't be shy with it, and remember that seasonings seem to lose some of their flavors when baked (which means put on more than you usually would)!
  • So, if you cut your wedges small and thin - you will need to cut the temp and cooking time. But if you cut true (thick) wedges - follow the recipes directions (although I strongly encourage flipping the potatoes halfway through the process). For a super easy cleanup - I poured the oil and spices into a gallon size Ziploc bag and mixed it all together until well blended - then I added the cut potatoes and kneaded and shook the bag until all the potatoes were well and evenly coated. Then poured it into a 9x13 glass baking dish lined with foil. Minor adjustments: I used paprika, garlic powder, salt, freshly ground black pepper, a pinch of chili powder - mine is exceptionally potent, and cumin) -- The second time making this recipe I added fresh minced onion - and that was a very tasty addition too!
  • FOR THOSE WHO THINK THIS RECIPE TOO BLAND: Take one onion for every 3 potatoes. Cut it in half lengthwise and cut it into slivers. Take all ingredients, including the onions, and put them in a zipper bag. Knead and shake until ingredients are thoroughly mixed. Proceed with recipe directions. The onions add quite a bit of zing as well as nutrition!
  • I use my french fry cutter to cut the potatoes. I don't even measure the spices anymore. I bake them at 400*, for 15 min, then flip and bake for another 15 on the other side. However, I like my fries less on the crispy side, also using the french fry cutter makes all the fries about the same size for uniform cooking.
