SPICED APPLESAUCE BREAD
A perfectly spiced Applesauce Spice Bread made with homemade applesauce is supple, moist and can be oven-ready in just a couple of minutes.

Steps:
- Preheat oven to 350 degrees. Line a 9x5-inch loaf pan with parchment letting the sides overhang and spray lightly with cooking spray.
- In a large bowl, whisk together dry ingredients.
- In a separate bowl, whisk together wet ingredients until well combined.
- Pour the wet ingredients into the dry and mix until just combined. Be careful not to over mix.
- Pour the batter into the prepared pan.
- Bake for 55 to 65 minutes, or until a toothpick comes out clean. (I like to underbake just a tad, so when the toothpick has some loose crumbs.)
- Cool on a rack for 20 minutes and pull the bread out with the overhanging parchment (see Notes below to bake it the night before).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine the applesauce, sugar, oil, eggs and milk; beat well. Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt; stir until smooth. Fold in the pecans. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

FRESH APPLE SPICE CAKE

- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

- Preheat your oven to 350 °F. Grease a standard 9x5 loaf pan and set aside.
- In a large bowl or in the bowl attached to a stand mixer using the paddle attachment, beat the butter and sugars until sooth and creamy.
- Beat in the eggs, one at a time, until fully incorporated. Mix in the vanilla and applesauce.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt. Mix into the wet ingredients until combined completely.

- Preheat oven to 350°F Line the bottom and sides of a 9"x5" loaf pan with waxed paper and grease.
- Break the egg into a bowl and beat lightly. Stir in the apple sauce, butter or margarine, brown sugar and granulated sugar.
- In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Fold the dry ingredients into the applesauce mixture in three batches.
- Stir in the currants or raisins and chopped pecans.

SPICED FRUIT LOAF

- Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
- Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
- Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
- Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
- Bake for 20 mins, then cool in the tins before turning out and slicing.
