A perfectly spiced Applesauce Spice Bread made with homemade applesauce is supple, moist and can be oven-ready in just a couple of minutes.

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 Tablespoon cinnamon (add more if using plain applesauce)
1 teaspoon freshly grated nutmeg
1/4 teaspoon cardamom
1/4 teaspoon ginger
2 eggs, room temperature
1 cup applesauce
3/4 cup sugar
1/4 cup brown sugar
1/2 cup melted butter, cooled
1/4 cup sour cream, room temperature
2 teaspoons vanilla bean paste

Steps:

  • Preheat oven to 350 degrees. Line a 9x5-inch loaf pan with parchment letting the sides overhang and spray lightly with cooking spray.
  • In a large bowl, whisk together dry ingredients.
  • In a separate bowl, whisk together wet ingredients until well combined.
  • Pour the wet ingredients into the dry and mix until just combined. Be careful not to over mix.
  • Pour the batter into the prepared pan.
  • Bake for 55 to 65 minutes, or until a toothpick comes out clean. (I like to underbake just a tad, so when the toothpick has some loose crumbs.)
  • Cool on a rack for 20 minutes and pull the bread out with the overhanging parchment (see Notes below to bake it the night before).

½ cup vegetable oil

3 tablespoons milk

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

5 pounds tart apples (about 16 medium), peeled and sliced
1 cup apple juice
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

Steps:

  • Preheat your oven to 350 °F. Grease a standard 9x5 loaf pan and set aside.
  • In a large bowl or in the bowl attached to a stand mixer using the paddle attachment, beat the butter and sugars until sooth and creamy.
  • Beat in the eggs, one at a time, until fully incorporated. Mix in the vanilla and applesauce.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt. Mix into the wet ingredients until combined completely.
  • Stir in the nuts and raisins until mixed throughout the batter, then turn the batter out into the prepared pan, smoothing into an even layer
  • Bake in the preheated oven for 60 minutes, or until a toothpick or cake tester inserted into center of the loaf comes out clean.
  • Remove and cool in the pan for 5 minutes, then invert onto a wire cooling rack and cool completely. Store wrapped up at room temperature for up to 3 days.

1 cup applesauce
4 tablespoons butter or 4 tablespoons margarine, melted
1/2 cup dark brown sugar, firmly packed

1/2 teaspoon salt
1 teaspoon ground cinnamon

Number Of Ingredients 15

450g strong white flour , plus extra for dusting
2 x 7g sachets easy-blend yeast
50g caster sugar
150ml warm milk
1 egg , beaten
50g unsalted butter , melted, plus extra for greasing
oil , for greasing
1½ tsp ground cinnamon
1 tsp ground ginger
50g dried apricot , chopped
50g dried fig , chopped
50g pitted date , chopped
50g sultana
50g glacé cherry , chopped
juice 1 orange

Steps:

  • Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
  • Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
  • Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
  • Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
  • Bake for 20 mins, then cool in the tins before turning out and slicing.
