FRUITY SPICED HOLIDAY WASSAIL (STOVETOP, SLOW COOKER, OR INSTANT POT)
This wassail recipe is one the best holiday drinks, kind of like a hot citrus-infused apple cider. Filled with seasonal fruits and mulled spices, this hot wassail is a sure favorite year after year.

Steps:
- Stovetop Method: Add all ingredients to a pot or slow cooker and heat gently. Simmer for 1-3 hours to allow flavors to meld. Crock Pot Method: Add all ingredients slow cooker and cook on high for 1-3 hours to allow flavors to meld. Instant Pot Method: Combine all ingredients to the Instant Pot, stir, and lock lid in place. Cook on Manual, high pressure for 15 minutes. Use a natural or quick release and open the lid once the pin drops down. Serve.

MY GRANDMOTHER'S WASSAIL
Steps:
- In a large dutch oven or pot, add all the ingredients.
- Bring to a boil, and then simmer on low for 20 minutes. Use a chinese skimmer to strain out some of the cloves and cinnamon or use a strainer to pour into another container for serving. Serve hot.

Wassail is a hot mulled cider, traditionally enjoyed during wassailing, an English Christmas drinking ritual intended to ensure a good apple harvest the following year. The whole baked apples floating on top lend a homey feel to the warming festive drink. Serve as is -- or top with a splash of brandy if you like. It's perfect for a big family gathering or holiday party.

- Preheat the oven to 350 degrees F.
- Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
- Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. Put the cloves, allspice, cinnamon sticks, orange zest and lemon zest in a piece of cheesecloth and tie it closed. Add to the pot along with the ginger and nutmeg. Reduce the heat to low and steep the mixture until the liquid is well spiced and fragrant, about 1 hour.
- Add the cooked apples and any of their juices to the pot and stir to combine. Remove the cheesecloth. Serve warm in individual mugs with an orange wedge and cinnamon stick.
GRANDMA'S WASSAIL
An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

SPICED WASAIL GELATIN
A variation of the traditional English Christmas punch. Cook time is refrigeration time.

- In a saucepan, bring the apple cider, cranberry juice, cloves, allspice, cinnamon, sugar and orange to a boil over high heat. Cover, decrease heat tto low and simmer for 45 minutes, stirring occasionally. Strain out the spices and squeeze the liquid from the orange half into the juice and discard orange.
- Meanwhile, in a bowl, sprinkle gelatin over cold water and let sit 2 minutes. Add the juice mixture and stir until gelatin is dissolved.
- Stir in the rum. Refrigerate 90 minutes. Spoon into a 7-cup mold. Refrigerate until firm, about 4 hours.
- Unmold and garnish with the orange slices. Serve.
SPICED WASSAIL

- Break the cinnamon stick into pieces, &--along with the whole cloves & whole allspice--tie the cinnamon pieces in a cheesecloth bag.
- Cut each orange in half.
- In a large covered saucepan, combine the cider, cranberry juice, sugar & orange bitters.
- Add the spice bag, oranges & rum extract, & simmer, covered, for 10 minutes.
- Remove spices & pour into a warm serving bowl, leaving the oranges to float on top.
