Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Pile sliced apples in an 8x10-inch casserole dish. Mix water and lemon juice together and sprinkle over apples.
- Combine sugar, flour, cinnamon, nutmeg, and salt in a mixing bowl. Mix well using an electric mixer. Add butter pieces and mix until clumpy. Pour over apples, spreading to cover all but the outer edges.
- Bake in the preheated oven until bubbly and golden, about 45 minutes. Let cool slightly to thicken before serving in bowls.

SPICED APPLE CRUMBLE

Steps:
- Pre-heat your oven to 180C Fan/350F/Gas Mark 4
- For the crumble mix the light brown soft sugar, plain flour and the wholemeal plain flour together
- Add the butter to the bowl in chunks or cubes, then using your fingers, rub it into the flour and sugar until it resembles breadcrumbs. You can also do this in a food processor if you prefer
- Peel and chop the apples into small pieces and place in a bowl. Use an apple cutter to do this quickly and avoid the apples browning. Or you can put a squeeze of lemon juice into a bowl of water and add the apple chunks to it as you cut them. Drain them off when you're done
- Add the sultanas, light brown soft sugar, cornflour, cinnamon, mixed spice and nutmeg to the apples and stir them all together
- Put the apple mix into a baking dish (ideally 31x21cm)
- Spread the crumble topping over the fruit and bake it for 45 minutes until golden and bubbling
- Serve warm, or leave to cool fully, cover the dish with cling film and store in the fridge for up to 3 days

- Peel 1/4 and core the apples.
- Cut them into slices and place in bottom of an earthenware dish.
- Grind the spices together in a mortar.
- Add caster sugar to the spice mix and stir well.
- Add the finely grated zest of the orange and pour mix over apples and turn them well to coat. (If possible do this 1 hour before cooking).
- Rub or process the flour, 3 sugars and butter together until mix is sandy textured.
- Pile over the apples, smooth the surface and cook for 45 minutes until browned.
- Rest for a few minutes before serving and serve with pouring cream.

THE BEST APPLE CRUMBLE
You can't beat a traditional apple filling topped with crispy, buttery crumble - classic comfort food at its best

- Heat the oven to 190C/170 fan/gas 5.
- Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through.
- Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt.
- Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in. Alternatively, pulse in a processor until sandy (don't over-process).
- Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.
- Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
- Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
- Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.

- Heat oven to 180C/160C fan/gas 4. Put the oats, almonds, sesame seeds and cinnamon into a large mixing bowl. In a small pan melt the butter with the honey then stir into the oats until it looks like rough breadcrumbs - you might need to use your hands.
- Put the apples, orange zest and juice and cardamom in a pan and cook for 10 mins until softened. Pick out the cardamom pods. Spoon into a baking dish, sprinkle with the sugar and scatter with the crumble mixture. Bake for about 40 mins until golden and crunchy. Serve with vanilla yogurt, ice cream or custard.

This is a simple low sugar version of a crustless apple crumble. Changing the type of apples will also allow for different flavors and textures. I have used Golden Delicious apples mixed with Empire apples and have been very pleased.

- Toss the sliced apples in the lemon juice as your are cutting them.
- Combine the barley flour and cinnamon with the apple mixture.
- Place in a 9 inch pie plate and dot the top with butter.
- Combine the flax seeds, wheat germ, oats, almonds, flour, sugar, and cinnamon in a bowl and stir together.
- Stir in the canola oil to make it look like crumbles. You can add some water if it's not moist enough.
- Place the crumble topping on the pile of apples in the pie plate.
- Bake at 350°F for 50 minutes.
