Spiced Strawberry Syrup ( and Shrub Recipe) image

Adapted from a Saveur recipe. It is spicy, but the combination of heat and sweet fruit is ambrosial; use half the spices if you are nervous about the heat level. Save the macerated strawberries to use in smoothies, a sweet fruit salsa for topping ice cream or cake, or use it to make some jam (I put the drained pulp right back into the pan I use to cook the syrup, add a little water, Triple Sec, citrus juice, and cook it down until it's thick and sets when tested on a cold plate). Shrubs are old-time summer drinks made with vinegar, fruit juice, water, and sugar, incredibly refreshing with mild acidity and sweetness. This is NOT a canning recipe! NOTE: A shallow saucepan will evaporate more liquid, but this mixture will foam up and OVERFLOW a shallow pan when brought to a boil, so either keep right on top of it or use a deeper pan.

2 lbs organic strawberries, washed and hulled (about 2 quarts)
2 cups sugar
5 tablespoons fresh lemon juice
1 1/4 teaspoons kosher salt
1 thick slice fresh ginger (3/4-inch)
1/2 teaspoon crushed red chile flakes (to taste, I use half-teaspoons of the spices)
1/2 teaspoon szichuan peppercorn (to taste)

Steps:

  • 1. Working in batches, pulse berries in a food processor until coarsely chopped. Transfer to a bowl and stir in sugar, 3 tablespoons lemon juice, and salt. Cover with plastic wrap and refrigerate 8 hours or overnight.
  • 2. Strain juices into a 2-qt. saucepan; reserve fruit for another use. Add ginger, chile flakes, and peppercorns to juice mixture; bring to a boil. Reduce heat to low and cook until thick and syrupy, 30-35 minutes. Skim off any surface scum about halfway through the cooking. Stir in remaining lemon juice and let syrup cool to room temperature. Strain out spices and store in the refrigerator up to 1 week.
  • TO MAKE A SHRUB:.
  • Combine 4 to 6 tablespoons of the syrup with 1 tablespoon apple cider vinegar in a tall, ice-filled glass; top with sparkling water.

1 cup water
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon vanilla extract
2 pints strawberries, hulled and sliced

Steps:

  • In a saucepan, stir together the sugar and water. Bring to a boil, and cook for about 10 minutes, or until it becomes syrupy. Mix in the nutmeg and cinnamon, and remove from the heat. Stir in the vanilla. Allow to cool for a few minutes, then pour over sliced strawberries.

Here, fresh strawberries are combined with sugar and white-wine vinegar, which enhances the full-bodied berry flavor and makes it a great sipper to serve at your next spring or summer soirée.

1 pound fresh strawberries, hulled (2 cups), plus more for serving
1 3/4 cups sugar
1 1/2 cups white-wine vinegar
3 tarragon sprigs, plus more for serving
Chilled seltzer, for serving

Steps:

  • In a medium nonreactive saucepan (such as stainless steel), combine strawberries with sugar and 1/2 cup water. Let stand, stirring a few times, 1 hour.
  • Cook over medium heat until warm to the touch, about 5 minutes. Add vinegar and continue to cook, stirring occasionally, until mixture comes to a simmer. Remove from heat and add tarragon. Let stand at room temperature, uncovered, 24 hours. Remove tarragon; strain mixture, discarding solids, and transfer to an airtight container. Refrigerate until cold, at least 1 hour and up to 1 month.
  • Fill glasses halfway with ice. Add 3 tablespoons shrub base and 6 ounces seltzer to each; stir once. Garnish with tarragon and fresh berries. Serve immediately.

STRAWBERRY BALSAMIC SHRUB

Shrubs, or drinking vinegars, are old-fashioned drinks that are made from a mixture of a fruit syrup and vinegar-and they carry an acidic punch. This strawberry balsamic shrub is a slightly sweeter take on a shrub, and is a great use for strawberry tops and leaves that otherwise would be thrown away. This recipe works best when strawberries tops have been removed by cutting straight across the top of the berry, so that some of the fruit is left underneath the leaves. This usually discarded bit of the berries gets transformed into a sweet pink syrup when they're mashed with sugar and macerate overnight. Since no heat is applied, the strawberry flavor really shines through. Champagne vinegar and white balsamic both have crisp, clean flavors, so the finished shrub has both an acidic bite and a sweet strawberry flavor. Top it off with seltzer for a refreshing nonalcoholic cocktail.

1 cup granulated sugar
1/4 cup champagne vinegar
1 tablespoon white balsamic vinegar (see Cook's Note)
5 cups seltzer, for serving

Steps:

  • Stir the strawberry tops with leaves and sugar in a medium bowl. Mash together with a potato masher until the strawberry tops release their juices, 1 minute. Cover and refrigerate for 24 hours, stirring occasionally so a pool of liquid can accumulate in the bowl.
  • Strain the mixture through a fine-mesh sieve into another medium bowl, pressing on the solids with a rubber spatula to release all of the liquid, which will include some undissolved sugar. Whisk in the champagne vinegar and balsamic vinegar until the sugar dissolves, 2 minutes. Transfer the shrub to a jar, cover and refrigerate until ready to use (see Cook's Note).
  • To serve, fill 4 tall glasses halfway with ice. Pour 1/4 cup of the shrub into each glass top with 1 1/4 cups of seltzer.

  • Gently mash berries in a medium bowl with a fork. Transfer to jar, add sugar, and stir to combine. Seal jar and let fruit mixture sit at room temperature, shaking a couple of times, until berries are very soft and falling apart and sugar is at least mostly dissolved, about 1 day (mixture should look very juicy).
  • Strain fruit mixture through a fine-mesh sieve (line sieve with a layer of cheesecloth if you want to catch every bit of seed and fruit pulp) into a medium bowl; discard fruit. Scrape any undissolved sugar left in jar into bowl.
  • Add vinegar to syrup and stir to combine. Taste shrub and add more sugar or vinegar to your liking—it should taste both sweet and sharp but not overpowering in either direction (keep in mind the flavors will meld as the shrub ages). Pour shrub into a clean jar; cover with lid and chill until flavors come together and mellow, at least 1 week. Do ahead: Shrub can be made 6 months ahead. Keep chilled.
  • For a refreshing nonalcoholic drink, pour 2 Tbsp. shrub into a glass filled with ice and top off with club soda; stir gently to combine. Garnish with berries and/or herbs if desired.
