PINEAPPLE COOLER
This is a most extraordinary drink. It sounds so unlikely, but it really does taste good - not like pineapple but more like cider. It's very refreshing on a hot summer's day, and it's great fun to make in that it uses only the skin of the pineapple which is normally thrown away - so there's nothing to lose!

Steps:
- First of all cut the stalky top and the base off the pineapple and discard these. Now stand the pineapple upright on its base and, using a sharp knife, cut away the skin in long strips, working your way all round the fruit. Reserve the fruit itself for a dessert. Now get to work with a sharp knife, chopping the skin into small pieces about 1 inch (2.5 cm) square. Then pile them all into a bowl, pour over 1½ pints (850 ml) cold water, then cover the bowl with a cloth and leave at room temperature for 3-4 days or until the mixture is bubbly and fermenting. Strain it into a jug, add sugar to taste and serve with lots of ice and sprigs of mint.
CHILE-SPICED PINEAPPLE
Steps:
- Skewer 3 pineapple chunks onto each cocktail skewer or toothpick and arrange on a plate.
- In a small bowl, combine the chile powder, cumin, salt and pepper and mix with a fork. Sprinkle onto all sides of the skewered pineapple chunks and serve.

- Prepare a vegetable juicer (or blender if unavailable). Run the pineapple, limes and cucumber through the juicer, letting all the juices combine. Pour the tequila into a cocktail shaker or pitcher, and then add the juices, ice, agave and salt. Shake or stir vigorously until chilled. Line up 4 tall Tom Collins glasses filled with ice, and pour the tequila cooler over. Serve with straws and cucumber slices for garnish.
COCONUT & PINEAPPLE COOLER

- Put 50ml coconut rum, 100ml pineapple juice, 25ml gin and 50ml cold water into each jam jar.
- Stir, then garnish each one with a piece of watermelon and a couple of coriander sprigs, squeezing the leaves a little bit first before dropping them into the jars to help release the flavour. Screw on the lids and chill or set in ice buckets until needed - they will keep well for 4-6 hrs.

- Mix the lime juice and half the lime zest with 1 tbsp honey, a pinch of cinnamon and nutmeg. Set this sauce aside. Stir the icing sugar and a pinch of cinnamon into the fromage frais.
- Heat the butter and remaining honey in a non-stick frying pan until melted. Add the pineapple and cook over a high heat for 8 mins, turning regularly until caramelised. Pour in the spiced lime sauce and bubble for a few secs, tossing the pineapple to glaze in the sauce.
- Serve immediately, sprinkled with the remaining lime zest and accompanied by a dollop of the cinnamon fromage frais

- Drain pineapple, reserving 1 cup juice. In a saucepan, combine the sugar, vinegar, cinnamon, cloves, salt and reserved pineapple juice. Bring to a boil.
