Spanish Spiced Almonds image

Creamy, sweet marcona almonds are toasted and tossed in a flavorful paprika-spiked spice blend in this recipe for Spanish spiced almonds.

1 cup marcona almonds
2 tsp extra virgin olive oil
3/4 tsp smoked paprika
1 pinch coriander
1 pinch cayenne, (more if needed)
1/2 tsp kosher salt

Steps:

  • Preheat oven to 400F.
  • Spread out the almonds on a baking sheet. Bake for 5-6 min, or until golden brown.
  • In a medium bowl, mix together the olive oil, paprika, coriander, cayenne, and salt. Toss the almonds with the spice blend. Taste to see if they need more cayenne. Add another pinch if necessary. Serve.

Thyme-Roasted Marcona Almonds image

1 pound roasted, salted Marcona almonds
2 teaspoons good olive oil
2 tablespoons minced fresh thyme leaves
1 teaspoon kosher salt
1 teaspoon fleur de sel

Steps:

  • Preheat the oven to 350 degrees.
  • Place the almonds, olive oil, thyme, and kosher salt on a sheet pan and toss them together. Roast the almonds for 10 to 15 minutes, turning them every 5 minutes with a metal spatula, until they're lightly browned. Watch them carefully; they go from under baked to burnt very quickly. Sprinkle with the fleur de sel, toss, and set aside to cool. Serve warm or at room temperature.

CUMIN-AND-PAPRIKA-SPICED MARCONA ALMONDS



Cumin-and-Paprika-Spiced Marcona Almonds image

Almonds were brought to Spain by the Moors, and they've featured in Andalusian cuisine ever since. Typically they are used as a thickener for sauces and, most famously, as the base of ajo blanco. Whole Marcona almonds are roasted with sweet or hot smoked paprika-I prefer to use sweet paprika, introduce a little heat via cayenne, and round it out with cumin and salt. In the event of a crippling Marcona almond shortage, regular blanched almonds will do the trick.

Yield Makes 3 cups

Number Of Ingredients 6

1 egg white
1 1/2 teaspoons salt
1 teaspoon plus 1/8 teaspoon cumin, for dusting
1 teaspoon plus 1/8 teaspoon sweet or smoked Spanish paprika, for dusting
1/4 teaspoon cayenne
3 cups blanched Marcona almonds

Steps:

  • Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
  • In a bowl, whisk together the egg white, salt, 1 teaspoon of cumin, 1 teaspoon of paprika, and the cayenne. Add the almonds and toss to coat.
  • Spread the almonds out evenly on the prepared baking sheet and roast until golden brown, 20 to 25 minutes, shaking the pan halfway through. Transfer to a plate to cool for about 30 minutes.
  • In a small bowl, combine the remaining 1/8 teaspoon of cumin and the remaining 1/8 teaspoon of paprika. Sprinkle this mixture over the cooled nuts. Store in a sealed container for up to 2 weeks.

ROMESCO SAUCE WITH MARCONA ALMONDS



Romesco Sauce With Marcona Almonds image

2 dried ñora chiles available in Spanish markets and online, or 1 ancho chile
4 tablespoons extra virgin olive oil
25 marcona almonds
15 skinned hazelnuts or additional almonds
1 cup small cubes of stale sourdough bread
4 cloves garlic, peeled and sliced
2 jarred piquillo peppers, drained and chopped
1 medium ripe tomato, peeled, seeded and chopped about 2/3 cup
2/3 cup dry white wine
1 tablespoon sherry vinegar
1/2 teaspoon smoked Spanish paprika, sweet or hot, or to taste
Salt

Steps:

  • Cut the chiles in half, place in a bowl and cover with boiling water, weighing them down with a plate to keep them submerged. Set aside for 30 minutes.
  • Heat oil in a small skillet over medium heat. Add the almonds, hazelnuts and bread cubes and stir until they start to brown, 6 to 8 minutes. Add the garlic, and stir until lightly browned. Add the piquillo peppers. Remove from heat.
  • Drain the chiles, and remove stems and seeds. Chop the chiles, add them to the pan, heat and stir briefly. Add the tomato, stir and cook a minute or so until softened. Remove from heat.
  • Transfer to a food processor or a blender and pulse until a rough paste is formed. With the machine running, slowly pour in the wine. Turn off the machine, add vinegar, paprika and salt, to taste, then pulse briefly to blend. The sauce will have a slightly nubbly texture.

1/4 cup light brown sugar
2 teaspoons ground cumin
1 teaspoon hot paprika or 1 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon kosher sea salt
1/4 teaspoon cayenne pepper
1 large egg white
1 tablespoon water
1 lb marcona almonds (about 3 cups) or 1 lb raw whole almond (about 3 cups)

Steps:

  • Preheat oven to 275°F Coat a large rimmed baking sheet with cooking spray.
  • Whisk brown sugar, cumin, paprika, thyme, salt and cayenne in a large bowl.
  • Whisk egg white and water in a medium bowl until foamy.
  • Add almonds to egg mixture and stir to coat; pour through a sieve to drain off excess egg white.
  • Transfer the almonds to the bowl of spices; stir well to coat.
  • Spread evenly on the prepared baking sheet.
  • Bake the almonds for 30 minutes.
  • Stir, reduce the oven temperature to 200F and bake until almonds are dry and golden, about 30 minutes more.
  • Let cool before serving, 15 to 20 minutes.
  • Store in an airtight container for up to 1 week.
  • NOTE: Spanish Marcona almonds have recently become more popular and more available. They're a little flatter than ordinary almonds, with a richer flavor. Always skinned, most Marcona almonds have already been sauteed in oil and lightly salted when you get them. For this recipe, select unsalted and oil-free nuts if you can, though either will work well. You can find them in specialty stores.

2 cups blanched almonds (brown skins removed)

Steps:

  • Preheat oven to 350°F
  • Line a large baking sheet with parchment.
  • Whisk together egg white, orange juice, zest, salt, cumin, and paprika in a bowl, then add almonds and toss to coat.
  • Spread almonds evenly on baking sheet for 10 minutes. Remove from oven and mix the nuts around, return to oven for another 10 minutes or until golden.
