AROMATIC SPICED HAM

- Place the gammon in a large saucepan. Add all the ingredients for the ham to the pan, adding more water if the ham isn't covered. Bring to the boil, before reducing the heat to a simmer and partially covering the pan. Cook for about 2 1/2 to 3 hours, approximately 1 hour a kilo simmering time, plus an extra 15 minutes.
- When you are ready to glaze the ham, preheat oven to 440 degrees F (230 degrees C).
- Remove the ham from the liquid and sit the ham on a board. Strip off the rind, and a little of the fat layer if it's very thick, and cut a diamond pattern into the remaining fat with a sharp knife in lines of about 3/4-inch apart. Stud each diamond with a clove. Put the jelly, cinnamon, paprika and red wine vinegar into a saucepan and whisk together over a high heat bringing it to the boil. Let the pan bubble away so that the glaze reduces to a syrup-like consistency.
- Place a layer of foil over a roasting tray big enough to hold the ham. Place the ham on top of the foil. Pour the glaze over the clove-studded ham and then transfer it to the oven. Cook for about 15 minutes, or until the glazed fat is burnished. Allow the meat to rest in a warm place for at least 15 minutes before carving it.
GLAZED HAM WITH ROASTED APPLES

- Preheat the oven to 325 degrees F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat-side up, in a large roasting pan. Bake 1 hour, 30 minutes.
- Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
- Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.
HAM SPREAD
This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

STICKY MAPLE-GLAZED HAM WITH BAKED APPLE SAUCE
Slow-roast a whole leg of gammon with apple juice, then cover in a sticky spiced glaze for a Christmas treat - perfect sliced hot or cold

- If your gammon needs to be soaked to draw out some of the salt (ask your butcher), place in a clean bucket or a preserving pan and cover with cold water. Chill overnight, or for up to 3 days.
- Heat oven to 160C/140C fan/gas 3. If the ham has been soaking, drain it well and place in a large, deep-sided roasting tin. Pour in the apple juice and top up with 400ml water. Add the spices, bay leaves and orange zest. Cover the ham tightly with a few large sheets of foil, scrunching it around the edges of the tin so no steam can escape, then bake for 5 hrs. Meanwhile, mix together the ingredients for the glaze in a saucepan, then bubble until reduced to a sticky glaze. Score the apples around their equator with a small, sharp knife.
- Remove the ham from the oven and increase the temperature to 200C/180C fan/ gas 6. Carefully transfer the ham to a board - the easiest way to do this is to leave it to cool for 10 mins, then pop on clean washing- up gloves to lift it. Pour away the cooking liquid and discard the aromatics. Use a small, sharp knife to cut and peel away the rind, leaving a thin layer of fat attached to the meat. Line your roasting tin with a few sheets of foil and place the ham in the middle, fat-side up. Use a sharp knife to lightly score the fat in a criss-cross pattern. Return the ham to the oven and bake for 30 mins until the fat starts to crisp and caramelise.
- If the glaze has become a little thick, splash in a drop of water to loosen it, then brush all over the ham. Place the whole apples in the tin too, and return to the oven for another 20-30 mins, basting the ham every now and then, until dark and sticky all over.
- Before serving, mash the whole apples (discard the stalks, skin and pips) with a little of the sticky sauce from the roasting tin. We decorated our ham with star anise, sprayed with edible gold spray, and arranged bay leaves and orange peel around the board. Serve warm slices of the ham with the apple sauce, or cold in sandwiches. Will keep for up to 1 week in the fridge, or slice and store in the freezer for up to 2 months.

WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. SPICED APPLE HOLIDAY HAM
My grandmother always made pineapple ham, but I decided that rosy red apple rings look & taste even more festive. You can also make the apple rings from scratch by simmering a pan of water with apple slices, red hots, sugar, & a bit of red food coloring.

- 1. Preheat the oven to 350 degrees F. Place the ham in a roasting pan cut side down. Score ham with a shallow diamond shaped pattern. Insert cloves into cuts. Cover ham with foil & bake for about 1 1/2 hours.
- 2. Meanwhile, drain the liquid from the apple rings into a small saucepan. Whisk in the brown sugar & mustard. Bring mixture to a boil, then reduce heat to a simmer. Cook until mixture is thickened & coats the back of a spoon.
- 3. Remove foil from ham & brush with the glaze. Secure apple rings & cherries to the ham with toothpicks. Bake uncovered for 30 minutes or until heated through.

- Preheat the oven to 350°. In a medium bowl, mix the sugar with the pepper, cloves and cinnamon.
- Place the ham fat side up on two large pieces of aluminum foil and, using your hands, rub the sugar mixture all over the top and side; it should form a thick layer. Wrap the ham tightly in the foil and transfer to a large roasting pan. Bake for about 3 hours, until glossy on the outside and a thermometer inserted in the thickest part of the meat registers 125°. Transfer the ham to a work surface and let rest in the foil at room temperature until cool enough to handle, about 2 hours.
- Unwrap the ham and slice the meat; transfer to a large platter and tent with foil to keep warm. Pour the accumulated juices into a large measuring cup and spoon off any fat. You should have about 3 1/4 cups.
- In a medium saucepan, combine the sliced apples with 2 tablespoons of water. Cover and cook over moderate heat, stirring occasionally, until tender, about 10 minutes. Using a slotted spoon, transfer the apples to a blender and puree with the ham juices and vinegar until smooth. Strain the apple jus through a fine-mesh sieve set over a gravy boat and season with salt. Serve the ham, passing the apple jus at the table.
