SPICE WHOLEMEAL TEA LOAF

This is a nice moist rich tea loaf, the cranberries give it a wee bit of tartness and the walnuts a bit of crunch. I used Cox pippin apples and I didn't peel them. I have used syrup and honey and both work well. Also I chopped the walnuts.

150 ml vegetable oil
100 g soft brown sugar
2 eggs
75 g golden syrup or 75 g honey
175 g wholemeal self-rising flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
200 g apples, grated
75 g cranberries
25 g walnuts
200 g soft cream cheese
30 g powdered sugar, .sifted

Steps:

  • Pre heat the oven 170/325.
  • Oil a 2 litre loaf pan and line with silicone paper.
  • Mix together oil, sugar, eggs and golden syrup.
  • Mix together in an other bowl flour, cinnamon, ginger, bicarbonate of soda.
  • Grated apple, cranberries and walnuts.
  • Then add the flour mixture to the oil mixture and mix well.
  • Pour into the prepared tin and bake for 1hour 30minutes.
  • Test with a skewer to see if done.
  • While the cake is cooling make the topping.
  • Beat the cream cheese until smooth and add the sifted sugar.
  • Spread over the loaf and if you wish sprinkle some walnuts on top.

1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/2 teaspoon powdered ginger
1/4 teaspoon salt
1/3 cup raisins
3 tablespoons walnuts, chopped
1/3 cup sunflower oil
4 tablespoons orange juice, fresh
2 tablespoons honey
1 egg, free range
1 cup zucchini, finely grated

Steps:

  • Preheat oven to 180 degrees Celcius.
  • In one bowl combine the flour, baking powder, spices, salt, raisin and walnuts.
  • In another bowl mix the oil, orange juice, honey, egg and zucchini. Combine the wet ingredients through the dry until well combined.
  • Bake in a lined or oiled loaf tin for 35 - 40 minutes. Turn the loaf out onto a wire rack and allow to cool completely before slicing.

This scented Finnish recipe is spiced with cardamom and cinnamon. Made rich from the eggs, butter and sour cream. This is more a bread then a sweet cake. Enjoy it for breakfast or dessert with a nice cup of coffee or tea.

2 cups unbleached flour
2 teaspoons cardamom, freshly ground
1 teaspoon cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1/4 cup sugar
1 cup sour cream
10 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a loaf pan.
  • Combine dry ingredients in a bowl and set aside.
  • Beat eggs and sugar together until creamy. Add dry ingredients and mix until combined. Mix in sour cream and melted butter.
  • Pour batter into prepared pan, baking until done, about an hour.
  • Cool in pan for 15 minutes, then turn out onto rack and finish cooling.
  • Dust with powdered sugar.
