Old-Fashioned Spelt Pumpkin Bread image

A tasty quick bread filled with pumpkin, spices and spelt flour. It's tasty all year round and perfect as part of your Thanksgiving dinner!!

Number Of Ingredients 10

1 2/3 cup White Spelt Flour
1/4 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/3 cup butter
1 1/2 cups granulated sugar
1/3 cup water
1 cup pumpkin puree

Steps:

  • Preheat oven to 350 degrees
  • In a medium bowl, whisk together spelt flour, baking powder, baking soda, salt, and spices. Set aside
  • In the bowl of your stand mixer cream together the butter and sugar. Add in the water, eggs, and pumpkin and mix until combined
  • Add in flour mixture a little at a time until it is all incorporated, scarping down the sides often. Don't over mix.
  • Pour batter into a greased loaf pan. Place in the oven for about 60 minutes. It is done when a toothpick comes out clean.

Here's my modified version of a recipe from a 1970 "Favorite Recipes from Women of the Christian Church Casseroles" Cookbook. This bread has been a hit every time I bring it to a gathering.

Number Of Ingredients 12

2/3 cup butter (softened at room temperature)
3 cups sugar
1 3/4 cups cooked pumpkin
4 eggs (beaten)
2/3 cup water
2 cups spelt flour
1 1/2 cups rice flour (brown & white blend)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon clove
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease two 8½" x 4½" x 2½" loaf pans -- I use the butter wrapper to do this.
  • Sift dry ingredients together and set aside.
  • Cream sugar and butter until fluffy.
  • Add pumpkin, eggs and water. Beat at low speed until well mixed.
  • Add dry ingredients and mix just until well blended.
  • Pour into loaf pans.
  • Bake for about 1 hour or until toothpick comes out clean.

  • Preheat the oven to 350 degrees F. Lightly grease a 9x5 loaf pan and then line it with parchment paper. Lightly grease the parchment as well and set aside.
  • In a large bowl, combine the spelt flour, cinnamon, nutmeg, cloves, ginger, baking powder, baking soda, sea salt, chocolate chips, and pumpkin seeds. Stir with a spatula to evenly mix.
  • In an upright blender, combine the pumpkin puree, maple syrup, coconut oil, orange juice, and vanilla. Blend on high until totally smooth and creamy.
  • Pour the pureed pumpkin mixture into the large bowl with the spelt flour mixture. Use your spatula to get all of the pumpkin mixture you can out of the blender. Gently stir and fold everything together until JUST combined.
