I have no idea if this is even close to how Chinese restaurants actually make egg drop soup, but it tastes VERY similar. You will be shocked how simple this really is. My mom made this a lot and it was one of the first recipes I made myself. Feel free to throw in any leftover spinach, onions, etc. to this recipe.

2 1/2 cups water
2 chicken bouillon cubes
2 eggs
1 pinch sugar
soy sauce
green onion, chopped (optional)
spinach leaves (optional)

Steps:

  • Boil water with boullien cubes until dissolved.
  • Crack eggs into a seperate bowl.
  • Whisk eggs with a fork until blended.
  • Slowly pour eggs into water, breaking up the pieces with a fork when they hit the water.
  • Eggs will cook immediatley once in the water.
  • Turn heat on stove to medium/low.
  • Add pinch of sugar, drop or two of soy sauce and optional veggies.
  • Stir.
  • Spoon into bowl and serve.

2 (14 1/2 ounce) cans fat-free low-sodium chicken broth
1 green onions with top, chopped
5 ounces packages frozen peas
2 eggs, lightly beaten
1 teaspoon sesame oil
fresh coriander, minced (optional)

Steps:

  • Combine chicken broth, green onion& top and peas in medium saucepan.
  • Bring to a full boil over high heat.
  • Remove from heat.
  • Add egg and sesame oil; stir once.
  • Ladle into bowls; garnish with coriander, as desired.

This is a gluten free recipe appropriate for us on the Specific Carbohydrate Diet. It comes from Raman Prasad's 'Recipes for the Specific Carbohydrate Diet.' Rice is illegal and for those family members not affected.

2 cups raw rice, cooked (illegal, this is for other family members)
3 broccoli, cut into florets
500 g beef, finely sliced
2 tablespoons sesame oil
2 tablespoons minced garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons sesame seeds

Steps:

  • Cook rice.
  • Steam broccoli for 10 minutes.
  • Saute garlic for 3 minutes in half of the sesame oil, add beef, salt and pepper and stir for 20 minutes.
  • Increase heat to high and add broccoli, continue stir frying for 2 minutes.
  • Serve over rice.
  • Place remaining sesame oil into pan and saute sesame seeds for up to 1 minute. Sprinkle this over the dishes and serve immediately.

1 1/4 teaspoons olive oil
1 onion, diced
1 teaspoon minced garlic clove
1 kg ground beef
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
3 zucchini, peeled and chopped
1 1/2 cups pasta sauce
150 g cheddar cheese, grated

Steps:

  • Preheat oven to 180 C (350 F).
  • Steam zucchini until slightly soft and lightly mash them.
  • Meanwhile, saute onion and garlic for until ligthly browned.
  • Add beef, salt, oregano, and basil, stir until beef is cooked.
  • Grease the bottom of the baking pan and spread out 1/2 of the mashed zucchini, then half of the tomato sauce, then 1/2 of the beef, then 1/2 of the cheese.
  • Repeat the layering process, ending with the cheese.
  • Bake for about 10 minutes, until the cheese has melted on the top of the lasagna.
