THE BEST TUNA SALAD
While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

- Drain the tuna: Open the can and hold it over the sink. Tilt the can and press on the lid to allow the water in the can to drain.
- Serve how you like it: Spoon tuna salad onto slices of bread to make a sandwich, scoop onto crackers for a snack, or serve it atop a bed of salad greens for a healthy meal.

GRACIE'S VERY SPECIAL TUNA SALAD
This is not your ordinary tuna salad. It has many ingredients and that is how I created it myself, I did have a base of how my family made it, but I try to give everything I make my own little twist :) Bon Appetit.

- empty tuna and salmon packets into a bowl, (sometimes all I have is a mackrell, or a herring in a can in olive oil, you can use that too. If you have 2 cans, just follow the ingredients in this recipe, if you only have 1 can, cut the ingredients in half) Smash fish with fork, peel vegetables and half sour pickles and dice all ingredients. You may also add some chile peppers and capers, it's very delicious. The only cooking you need to do, is for the hard boiled eggs. Make sure you let them cool, peel, then dice. P.S. Sometimes I make soft boiled eggs and do not chop them, just cut them in half and put them on the side, let the delicious orange yolks leek on the bread, yummm.
- Combine all ingredients in a bowl, then add mayonnaise and horseradish. Cut your french bread, or baguette lengthwise, if you are using the Italian tuna in oil, sprinkle some of the oil on the baguette then some good grated cheese (not necessary, but nice) if no oil from tuna, spread some real butter and sprinkle with a little shredded/chopped garlic and then toast/bake it in the oven until golden brown.
- Once the tuna salad ingredients are combined lay a few pieces of boston or butter lettuce on a plate or on the baguette, depending how you like it, fork some of the tuna salad on and dig your teeth in. It is delicious, you will be coming back for seconds :) You may also serve this in a wrap. It is really delicious. If you try it, please let me know.

- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop finely.
- In a mixing bowl, combine tuna, crabmeat, mayonnaise, sour cream and mustard. Stir in chopped egg, dill weed, lemon pepper, dill and sweet relish and chopped onion. Mix thoroughly.

- Cook macaroni in boiling salted water until tender. Rinse in cold water and drain. Place in a large bowl. Add tuna, celery, onions, peas and pimientos; toss gently to mix.
